Voices of Hunger WV (VoH) is committed to advancing the Right to Food (RtF) across West Virginia. RtF is: a fundamental human right that ensures everyone has access to adequate food, and to resources that allow individuals to produce, earn, or purchase sufficient nutritionally adequate and acceptable food.
Since 2020, VoH has supported the emergency of a movement for the RtF at the local, county and state in West Virginia through grassroots organizing and community empowerment. Spring 2025 research included accompanying VoH leadership fellows involved in strengthening support networks for individuals and families experiencing food insecurity. Their work has fostered …

The National Right to Food (RtF) Community of Practice (CoP) is a membership-based national coalition of advocates and organizations working to advance the RtF in our cities, towns, and states. This research project sought to understand (1) how a membership based organization like the CoP grows into a social movement defined by the visions and needs of its participants, and (2) what the added value is of weaving together existing local and state efforts into a national movement. Introduction: There has been a rise in pediatric feeding difficulties, with up to 50% of typically developing children and 89% of children with developmental disabilities having a variation of feeding difficulties (Benjasuwantep et al., 2013). With occupational therapy (OT) being a field of practice that addresses activities of daily living and developmental milestones, it is imperative that providers are prepared to treat this population. Research suggests that having interprofessional education for disease-specific care can improve patient outcomes and satisfaction. This program focused on providing a basic IPE program to rural hospital staff of various disciplines on the care considerations for individuals with Parkinson's Disease when they are hospitalized. Using an occupational therapy vantage point, the program was created to address increasing occupational performance for healthcare workers and individuals with Parkinson's Disease. Topics included in the program were motor symptoms, non-motor symptoms, medication management, mobility and ADLs, cognition, mental health, sleep, dietary patterns, dysphagia, and voice.

[Objective] To improve the utilization of Poria cocos resources.[Methods] This paper employs cellulase and xylanase in combination with Monascus for the solid -state fermentation of Poria cocos,and measures the changes in the content of alkali -soluble polysaccharides,water -soluble polysaccharides,β-glucans,reducing sugars,total triterpenes,pachymic acid,and Monacolin K in fermentation products.[Results]] Compared with the other five strains of Monascus,Monascus purpureus 250 Gy has more significant changes in the chemical composition of Poria cocos,among which the content of water -soluble polysaccharides reaches 61.99 mg/g after 6 days of fermentation by Monascus purpureus 250 Gy,which is 1.58 times higher than that of raw Poria cocos.Compared with …

[Objective] This study aimed to extract Safflower polysaccharides (SPS) via water extraction and alcohol precipitation method,and to analyze their structural characteristics and antioxidant activity in vitro.[Methods] SPS was separated into three fractions -SPS-A,SPS-B and SPS -C using DEAE -52 ion exchange and Sephadex G -200 gel chromatography.Structural properties were analyzed through UV -vis scanning and infrared spectroscopy.The antioxidant activity of SPS -A was assessed through DPPH radical scavenging and ferric reducing antioxidant power (FRAP ) assays.[Results]] The polysaccharide contents of SPS -A,SPS -B and SPS -C was 89.75%,90.37%,90.22%,respectively.The samples did not contain protein or nucleic acid substances.It is speculated that …

[Objective] To determine the appropriate mechanical drying technology for peanuts.[Methods] Fresh peanuts were used as raw materials.The effects of heat pump drying (HPD ),far infrared drying (FID),electric heating drying (EHD ),far infrared combined heat pump drying (FI-HPD ),and natural drying (ND) on drying time,unit energy consumption,drying rate,nutritional quality,color,texture,and germination rate were compared and analyzed.[Results]] During the four mechanical drying methods,the moisture ratio and drying rate of peanuts decreased with the prolongation of drying time,and the drying process was a falling -rate drying phase.Among these,the FI -HPD group had the shortest drying time and the lowest unit energy consumption.The drying method …

As one of the widely recognized semi -solid plastic fat substitutes,oleogel can be used to replace food products,such as margarine and shortening oil,that contain high levels of saturated fatty acids (SFAs ) and trans fatty acids (TFAs ).This paper illustrates four methods for oleogel preparation,including direct dispersion.Besides,the paper presents the characteristics of various gelling agents for oleogels,along with the research status and progress of oleogel application in the food industry.Finally,this paper puts forward prospective outlooks for oleogel applications in food.

Camellia nitidissima Chi polysaccharide is a natural polymer compound with multiple biological activities,including significant antioxidant,antibacterial,and hypoglycemic effects,which has attracted considerable attention.However,research on C.nitidissima Chi polysaccharides still faces issues such as a limited range of extraction methods,insufficient studies on separation and purification,and structural characterization focused mainly on primary structure.This paper provides a systematic review of the current research on C.nitidissima Chi polysaccharides,covering extraction processes,separation and purification,structural characterization,and biological properties,while also discussing future research directions.

Background/aim: Osteosarcoma, a primary malignant bone tumor, is challenging to treat due to its aggressive nature and limited therapies. Resveratrol (RES), a natural polyphenol, has potential anticancer properties. Hence, we investigated RES’s impact on osteosarcoma cells, focusing on triosephosphate isomerase (TPI) and related mechanisms.
Materials and methods: RES was applied to osteosarcoma (SaOS-2) and healthy fetal osteoblast (hFOB 1.19) cells for 48 h, and cell viability was measured by SRB assay. Childhood obesity rates have become an increasing concern in the United States. It has been declared an epidemic due to the increasing number of children who are affected by obesity every year. While many factors can cause obesity, the primary factor is an individual’s dietary choices. This paper presents a literature review on eating habits and the long-term effects of childhood dietary choices on an individual’s body mass index (BMI), specifically among college students. Background/aim: Uric acid is a major contributor to the total antioxidant capacity of human plasma. However, this endogenous substance’s antioxidant and prooxidant properties have not yet been reported.
Conclusion: In this study, the comet assay was employed in vitro to determine the effect of uric acid on DNA damage in human lymphocytes and leukocytic DNA damage in hyperuricemia patients with and without renal failure.
Results: DNA damage in lymphocytes occurred at uric acid concentrations of ≥600 μM. Adding catalase to the uric acid solution diminished the damaging effect, indicating that hydrogen peroxide mediated the prooxidant activity. Moreover, …
