In the area of nutrition and dietary protein, experts often state that there are several barriers to consumption of dietary protein, however there is a lack of published data supporting these claims. Therefore, the objective of this study was to identify the attitudes, preferences and knowledge regarding dietary protein to identify potential barriers that would prevent purchasing protein or including protein in the diet. A 38-question Qualtrics survey was distributed via University of Arkansas listservs and on social media for three weeks. Located over 600 miles off the East coast of Madagascar, Mauritius is an island nation with a population of over 1.2 million people. In the summer of 2023, I had the opportunity to travel to Mauritius and conduct a representative food insecurity survey alongside other University of Arkansas and University of Mauritius students and professors. With more than 400 surveys in over 80 locations, we gathered data in every district on the primary island of Mauritius. The federal district court system is one of the largest and most impactful organizations in the United States. The nation’s ninety-four district courts resolve hundreds of thousands of cases, large and small, each year. Yet surprisingly little scholarly attention has been paid to measuring the work of the federal district courts—a vitally important task. It’s important because it affects substantive law; judges routinely decide the merits of issues based on how busy they think they and other judges are. Food insufficiency is a detrimental crisis that impacts families facing financial hardships across the United States (Nam et al., 2015). Research finds that economic difficulties and child maladaptive development are positively associated because parental stress is exacerbated by financial hardships affecting parental sensitivity to their children (Hill et al., 2013; Simons et al., 2016). The current study uses the Child and Adolescent Health Measurement Initiative (CAHMI) data from the 2021-2022 National Survey of Children’s Health (NSCH). Objective: The small bowel is affected in up to 50% of systemic sclerosis (SSc) patients, and some patients experience severe complications. Our aim was to use specific statistical methods to compare demographic and clinical features of SSc patients with and without abnormal small bowel to better characterize patients at risk for this complication.

Methods: SSc patients with gastrointestinal symptoms were prospectively enrolled and underwent a scintigraphy-based whole gut transit (WGT) study. A cross-sectional analysis was performed comparing clinical features between patients with and without abnormal small bowel transit by WGT. As Achilles struggles with whom to identify with, his divine mother or mortal father, he is consumed by an overwhelming rage that threatens to overpower him, dragging him down from both divinity and mortality into the very depths of monstrous savagery. As women age, hormonal changes contribute to increased abdominal adiposity and subsequent metabolic disorders, cardiovascular disease, cancers, and bone and joint problems. The escalating impact of climate change on agricultural production underscores the need to investigate sustainable crop enhancement methods. This research explores the use of plant biostimulants to grow onion (Allium cepa L.) under varying environmental conditions. In the initial germination and greenhouse screening, seven biostimulants were tested on ‘Vaquero’ onion seeds: three bacterial products (Continuum, Spectrum DS, and Tribus Original), two mycorrhizal products (Mighty Mycorrhizae and Myco Apply), one seaweed extract product (Seaweed), and one product containing humic acid (Huma Pro 16). The Cheddar cheese industry has recently observed variation in the pH of their cheese during the early stage of storage. This variation may be due to the addition of the faster acid producing thermophilic starter culture Streptococcus thermophilus which was recently introduced into the Cheddar cheese making process. This starter culture may impact the calcium buffering properties of the cheese due to more retention of the insoluble calcium (INSOL Ca) within the cheese. To investigate this problem, we studied how insoluble calcium affects cheeses with pH ranging from 4.8 to 6.6 and found that INSOL Ca was positively correlated with …

In chocolate-coated products, oil migration in fats can lead to chocolate softening, filling hardening, discoloration, and lower consumer acceptance. This study examined three different fats (soy- palm-, and palm-kernel (PK) based), crystallized under different conditions (cooling rate and use of high intensity ultrasound (HIU)) to examine how the crystallization conditions impact the physical properties of confectionery products. These conditions produced fats with high and low oil binding capacities (OBCs); the ability of crystal networks to entrap liquid oil. Dryland crop production in the Intermountain West is largely limited by the amount of precipitation received. Increasing dryland safflower (Carthamus tinctorius L.) production yields in a semi-arid climate is possible with a dormant planting but is not well understood. A two-year (2020-22) project was designed to gain an understanding of the effects of variety, seeding rate, and planting date, on dormant seeded safflower. Chemical weed control options for safflower were also evaluated. Food insecurity is a critical issue globally and in the United States. The USDA’s Special Supplemental Nutrition Program for Women, Infants, and Children (WIC) aims to address this by improving the nutrition of low-income pregnant women and children. However, immigrants and refugees, who are particularly vulnerable to food insecurity, often encounter barriers to accessing WIC benefits. This study aimed to: i) evaluate how immigrant and refugee families in Utah utilize WIC benefits, and ii) explore their experiences, challenges, and suggestions for improving the program. We investigated the impact of protein source in a western-style diet on colon cancer, colitis, and the gut microbiome. The Western dietary pattern is energy-dense, low in fiber, and has a sub-optimal micronutrient profile. Our group has formulated the Total Western Diet (TWD) that emulates the Western dietary pattern using survey data (NHANES), and we have demonstrated that this diet increases gut inflammation and colorectal cancer relative to a healthy control diet (AIN-93G), which is optimized for mouse health. However, the effect of protein source in the TWD and its effects on gut health have yet to be investigated.

Current food packaging materials are often non-biodegradable and harmful for ingestion, which poses a threat to the environment and public health. Thus far, the dangers of microbial contamination of food on human health have outweighed the risks associated with using these conventional packaging plastics. Bighorn sheep populations across the western United States face increasing challenges from habitat loss, disease, and predation. In Zion National Park and surrounding areas, survey-based estimates indicate that the desert bighorn sheep population declined from over 800 individuals in 2018 to fewer than 500 in 2021. Understanding what drives these population changes is critical for effective wildlife management and conservation. This research examined key factors influencing population growth and individual survival to inform strategies for recovery in this bighorn population.

Over the past half century, beliefs about athleticism (i.e., sport competence) have been thought of as central to motivation for youth sport. In this time, however, these competence beliefs have been narrowly studied which has limited their value in explaining youth sport participation. To expand our understanding of competence beliefs and their motivational significance in youth sport, the three studies of this dissertation tested a longstanding but understudied idea that competence beliefs encompass both judgments of, and emotions about, competence. Between 2012 and 2018, the annual 14% increase in insulin prices made Type 1 Diabetes (T1D) the most expensive chronic health condition, significantly raising out-of-pocket costs for uninsured or underinsured individuals in the United States (Hayes & Farmer, 2020; Willner et al., 2020). This study utilized a qualitative content analysis methodology to explore the challenges and experiences of parents with children diagnosed with T1D with accessing insulin for their child. Severe burns and other dermatological injuries are frequently accompanied by a range of comorbidities and aesthetic challenges that patients must contend with. The complexity of burn care is exacerbated by the lack of a standardized surgical protocol, as treatment strategies are tailored to individual patient factors, including overall health status, wound size and location, as well as the expertise and resources available to the surgical team. This capstone project focuses on promoting inclusive and accessible sports opportunities for children with disabilities through the development of two resources: a youth baseball implementation manual and an after-school program planning resource, both utilizing an occupational therapy design.
