Nutrition, Dietetics, and Food Sciences Faculty Publications

With the growing use of AI, it is important to know target audiences’ perceptions of its use. A convenience sample of students were invited to take an online survey in which they were randomly assigned to Group 1 (evaluated a student-generated blog; n = 456) or Group 2 (evaluated an AI-generated blog; n = 492). The results of independent t-tests and chi-squared tests indicated no group differences in ratings of ease of recipe preparation, time to prepare the recipe, utilization of common ingredients, and frequency of intended use of the blog. Background: Most countries now have physical activity (PA) policies but translating them into action at national and subnational levels remains poor. To better understand the disconnect, the "Interaction between National and Local Government Levels in Development and Implementation of Physical Activity Policies Tool" (INTEGRATE-PA-Pol) was developed by the Global Observatory for Physical Activity (GoPA!).

Methods: The Czech Republic was chosen as a European pilot site based on existing research capacity and relationships. The INTEGRATE-PA-Pol tool was translated and adapted for use in the country. Employer-sponsored health insurance covers millions of Americans under 65, yet not all employees share the financial burden equally. This brief explores how underserved communities particularly Black, Hispanic, and American Indian/Alaska Native employees often pay a disproportionately high share of their income toward family coverage premiums. Drawing on national data and recent research, the study highlights systemic disparities in healthcare costs and access, that shows economic, social, and policy factors intersect to create uneven burdens. Theory of Mind (ToM) refers to a set of social and cognitive abilities that we use to infer and understand other people’s mental states. This paper begins by outlining ToM, its component skills, and what research methods have been used to measure it. It then summarises research on how culture and other social factors such as language, parenting, and socio-economic status can impact its development, in particular differences in age of mastery of various aspects of ToM. Mental disorders characterised by deficits in ToM – in particular ASD – are also discussed and used to elucidate its nature and development. …

The Singapore Management University (SMU) will be developing Singapore’s first open empirical legal database with support from the Ministry of Law (MinLaw). Housed at SMU’s Centre for Digital Law, the three-year project will compile and release machine-readable datasets containing key statistical information about Singapore court decisions, statutes, legal scholarship and court structures. Named Singapore Open Legal Informatics Database (SOLID), the database will be freely accessible to researchers worldwide through a public website and Application Programming Interface (API), positioning Singapore alongside leading jurisdictions around the world that have invested in building up their legal data infrastructure.

The problem that was addressed through this study is the gap in literature about K–5 teachers’ challenges in implementing an LGBTQIA+-inclusive curriculum in New Jersey. Grounded in Fuller’s concerns of teachers framework and Foucault’s seminal work on the historical treatment of members of the LGBTQIA+ community, the purpose of this basic qualitative study was to explore K–5 teachers’ challenges in implementing an LGBTQIA+-inclusive curriculum in New Jersey. Purposeful and snowball sampling were used to recruit 11 K–5 teachers who self-identified as having implemented the New Jersey LGBTQIA+-inclusive curriculum. Bicuspid aortic valve (BAV) is a common congenital cardiovascular defect characterized by two, rather than three, cusps. Many BAV patients prematurely develop calcification and aortic stenosis by age 35, which is more severe with fusion of the right and noncoronary (RC/NC) cusps. The mechanisms underlying calcification observed within the coaptation, attachment, and fusion regions of BAV patients are unknown. While abnormal mechanical stimuli induced by the bicuspid anatomy likely plays a role, little is known about regionalized mechanical stimuli in these susceptible cusp regions of young patients prior to calcification. Purpose: One in five people with autism spectrum disorder have epilepsy and take Anti-Seizure Medications (ASM). However, the impact of ASM on people with autism is under researched. This study evaluates the efficacy and tolerability of Levetiracetam (LEV) for autistic people and epilepsy. Method: Data was derived from the English Epilepsy Research Database Register which compares ASM responses in those with neurodevelopmental disorders to those without. Age range was 18–50 years as there were no autistic research participants with autism prescribed LEV over 50. Twelve-month ASM data, including withdrawal rate, seizure frequency and adverse effects were compared. Fisher's exact test …

AI companionship holds promise, potentially reducing loneliness, supporting people without access to mental health treatment, helping students learn, and offering a judgment-free space for sensitive conversations. AI systems are testing lawyers' professional ethics obligations of competence, confidentiality, and candor. In the legal profession, the widespread availability of AI systems presents opportunities, like improving the review of documents during the discovery stage of a lawsuit, and challenges, illustrated by the handful of high-profile incidents where lawyers submitted legal briefs in court citing and describing fictitious cases based on AI-generated output. Public procurement in the Philippines is primarily guided by Republic Act 9184 or the Government Procurement Act. In the Department of Education Division of Davao del Sur (DepEd Davao del Sur), procurement can be classified under big and small value item procurement. This study focused on understanding the intentions of Filipino online sellers to reduce overpackaging, recognizing their pivotal role in addressing packaging waste. Specifically, the study employed Ajzen’s Theory of Planned Behavior (TPB) and extended it by integrating Perceived Courier Service Quality (PCSQ) to explain Filipino online sellers’ intentions to reduce overpackaging. Additionally, the study examined the mediating role of TPB constructs in the relationship between PCSQ and these intentions. Quantitative data collected from 182 Filipino online sellers revealed positive intentions among these sellers to reduce overpackaging. Methane is a potent greenhouse gas that requires its emissions to be mitigated. A significant source for methane emissions is in the form of the biogas that is produced from anaerobic digestion in wastewater reclamation and landfill facilities. Biogas has a high valorization potential in the form of its bioconversion into ectoines, an active ingredient in skin care products, by halotolerant alkaliphilic methanotrophs. Cultures of Methylotuvimicrobium alcaliphilum 20Z were grown in bench scale stirred-tank reactors to determine factors to improve methane uptake and removal. As people group themselves by their political ideologies, ideological alignment is likely to occur in workgroups—including boards of directors. While some research highlights positive outcomes from shared group characteristics, homogeneity can also hinder decision-making due to fewer perspectives being considered, limited sharing of non-conforming information, and narrowed problem solving. Building from prior research, we contend that substantial political alignment between a CEO and board members aligns them toward a common cognition, which fosters negative effects associated with homogeneity and subsequently reduces firm performance. We further contend that these performance reductions can be mitigated by psychological traits associated with managerial discretion. …

Objective To evaluate effectiveness of open-source generative models in producing high-quality tabular synthetic data using a Health and Demographic Surveillance System (HDSS) dataset from rural Kenya, as a proof of concept in a low- and middle-income (LMIC) setting.

Materials and Methods Three open-source models (CTGAN, TableGAN, and CopulaGAN) were used to generate synthetic data from the Kaloleni/Rabai HDSS dataset. To assess the quality of the synthetic datasets generated by each model, we performed fidelity, utility, and privacy tests.

Results CTGAN outperformed the other models, producing synthetic data that closely mirrored the statistical properties of the real dataset while preserving privacy. …

The ability to manipulate neurons that express corticotropin-releasing factor (CRF) or its receptors has led to many new discoveries about how CRF signaling modulates stress-related behaviors in mice. However, similar advances in rats have been limited by the lack of reporter lines targeting CRF receptors, restricting access to behavioral paradigms that are more suitable for, or specific to, rats. Here, we provide an extensive neuroanatomical characterization of a recently generated CRFR1-Cre rat. In 2013, a survey of NASPGHAN members on their involvement in managing pediatric obesity revealed that most pediatric gastroenterologists viewed their roles as primarily supportive, focusing on the management of obesity-related gastrointestinal comorbidities. This 10-year follow-up survey, which targeted pediatric gastroenterology programs and practices, found similar perceptions, along with an increased interest in learning about obesity pharmacotherapy. Additionally, most programs and practices reported limited access to dedicated dietitians, a lack of funding, and a desire for greater institutional support for multidisciplinary programs addressing obesity. Diffuse large B cell lymphomas (DLBCLs) are a heterogeneous group of malignancies that can arise in lymph nodes or extranodal locations, including immune-privileged sites. Here, we applied highly multiplexed spatial transcriptomics and proteomics together with genomic profiling to characterize the immune microenvironment architecture of 78 DLBCL tumors. We define seven distinct cellular niches, each characterized by unique cellular compositions, spatial organizations and patterns of intercellular communication associated with niche-specific phenotypes of both T cells and tumor B cells. Background: Survivors of childhood cancer face excess risk of developing basal cell carcinoma. Age-specific basal cell carcinoma risk prediction models for survivors may support targeted screening recommendations.

Methods: We developed models predicting basal cell carcinoma risk by ages 40 and 50 years featuring detailed cancer treatment predictors, utilizing statistical and machine-learning algorithms and data from 23 166 five-year survivors in the Childhood Cancer Survivor Study, a multi-institutional retrospective cohort study. Selected models were externally validated in 5314 survivors in the St Jude Lifetime Cohort.
