Consumer law has a conflicted and narrow identity. It is most immediately a form of business law, governing market transactions between people and companies. Accordingly, the microeconomic analysis of markets is the dominant influence on consumer law. But consumer law is often described as, and assumed to be about, protecting the consumer, which implicates small instances of individual injustice. Both of these lenses are valuable but reflect limited awareness of the field’s importance among lawmakers, scholars, and the public. We are all consumers. This study explored the relationship between China’s market-driven policies and instruction in a higher vocational college. I applied a critical lens to examine low-quality teaching and learning in a broad social context, aiming to reveal that instructional problems should not unilaterally ascribe to individuals such as teachers and students. While shrimp is the most-consumed seafood product in the United States, there is a lack of research into the extent of short-weighting and mislabeling of shrimp in the marketplace. The objective of this study was to investigate frozen shrimp for Country of Origin Labeling (COOL) compliance, species authentication, acceptable market names, net weights, and percent glaze. A total of 106 frozen shrimp packages were purchased from grocery stores in Southern California. Meat analogs are becoming increasingly popular for health, environmental, and ethical reasons. However, these products are at risk for contamination with Salmonella enterica. Therefore, it is important to ensure that detection methods for S. enterica in meat analog products are effective. Currently, the Bacteriological Analytical Manual (BAM) chapter on Salmonella detection calls for pre-enrichment of meat analogs using lactose broth (LB) with added surfactants, Tergitol Anionic 7 or Triton X-100. However, it remains to be determined whether surfactants are necessary for pre-enrichment of meat analogs. Following pre-enrichment, screening with VIDAS is typically performed. Effective decolorization methods mitigating green compound formation from alkaline chlorogenic acid-amino acid reactions can facilitate greater consumption of chlorogenic acid-rich products. While thiols show promise as decolorization agents to replace sulfites, their application has not been optimized. In this work, cysteine and glutathione were probed for their varying kinetic effects on the onset of chlorogenic acid-lysine induced greening. A six-parameter model developed from a reparametrized Weibull cumulative distribution function accurately captured the time- and thiol concentration-dependence of greening in chlorogenic acid-lysine-thiol solutions at pH 8.0 and 9.0, illustrating the pH-dependence of each thiol’s effectiveness at lowering terminal greening magnitude as …

DAX-1 is a nuclear hormone orphan receptor that plays a key role in the development of reproductive tissues and steroid hormone production. The hypothalamic-pituitary-adrenal axis is the pathway for steroid hormone production, primarily glucocorticoids, mineralocorticoids, and adrenal androgens, in the human body. The mechanisms of DAX-1 in hormone production in the adrenal cortex of the HPA axis are not completely understood and, therefore, were the focus of this honors thesis research project. Forests have dominated Maine’s landscapes since the recession of the Laurentide Ice Sheet. The outmigrations of glaciers gave way to a tundra environment, later transforming into the northern hardwood forests. Trees such as the Eastern hemlock, sugar maple, American chestnut, Eastern white pine, and brown ash form unique relationships with plants, fungi, animals, and humans. This paper examines the unique history of Maine’s forests from 8,000 years ago to today, emphasizing the changes brought by European colonization. The objective of this study was to determine the effectiveness of rosemary extract on the shelf life of ground beef patties under different retail display conditions. Ground beef patties were produced from an 85% lean and 15% fat blend purchased from a local grocery retailer, finely ground through a 0.953 cm plate and separated into 151.2 g patties (n=64). Patties were randomly assigned into a control group (no antioxidants added) or a 0.20% concentration rosemary extract group. Patties were individually packaged using polyvinyl chloride overwrap. This dissertation explores the process of creating and touring a community-sourced memorial quilt for the anti-mountaintop removal activist Julia “Judy” Bonds, who died in 2011. As a practice, the project positions memorialization as a possible framework for social movements to utilize when faced with loss that allows for actions that honor members of the movement while still engaging in consciousness raising and organizing efforts. Uncontrolled chemical releases of molybdenum into the subsurface at the Kerr-Mcgee Chemical Plant near Soda Springs, ID over the course of several decades led to the site being added to the Superfund National Priority List in 1989. Various subsequent site studies have resulted in a high-resolution dataset that enables the geochemical modeling of molybdenum in the subsurface. Thermodynamic calculations are used to model how aqueous molybdenum is affected by mineral precipitation, oxygen, carbon, and pH in context of the Kerr-Mcgee Superfund Site. Research about supplemental feeding of cannabidiol (CBD) to horses is still in its early stages, but many horse owners are feeding CBD supplements for supposed benefits, including behavior and pain management. The field of population genomics has been mainly applied to questions centered around understanding molecular variation, impacts of evolutionary processes, and the history of populations. Here I leverage population genomic techniques across two different systems to understand patterns of disease transmission across heavily monitored and controlled parasite populations and consequences of hybridization between divergent rattlesnake lineages. Legacy archaeological collections are often underutilized despite their valuable research utility. Archeologists might pass over these collections for research due to the age of recovery, along with the manner in which they were sampled and excavated. This thesis argues that significant archaeological research questions can be answered using these collections. To demonstrate their research potential, the author analyzes past subsistence behaviors and seasonality of occupations using the faunal remains from the Woodcliff site (25SD31). Several studies have identified a gap in the understanding of what guided nature walks does for the individual person, and the extent to which guided nature walks and interpretive signs improves individual pro-environmental behavior and attitudes. This study surveyed over 300 people on their reactions to certain types of signs and the influence that those signs had on the individuals’ desire to return outdoors. Our results showed an overwhelmingly positive reaction to signs with ecological or systems-based information that could be utilized on their walk, while signs that taught an environmental or historical feature of that area were not appreciated …
