Growing an edible garden in a poverty-affected school serves multiple purposes. It provides a way to increase parent involvement at the school while increasing student knowledge of nutrition. This comprehensive plan prepares a school to implement a school garden run solely by teacher, students, parents, and community volunteers. The potential results are that parents will get involved at their child's school while the students can learn about nutrition along with their families.

Inflammation and oxidative stress play a significant role in the pathogenesis of age-related macular degeneration (AMD). In AMD, retinal pigment epithelium (RPE) cells are damaged by oxidative stress and die via the process of apoptosis. Anthocyanins from fruits and berries, such as bilberry (Vaccinium myrtillus), possess significant antioxidant activity in vitro and have been used in "traditional medicine" to treat AMD. It is not clear whether intracellular concentrations of anthocyanins are sufficient to quench radical species and mitigate oxidative stress in vivo. Previous research has indicated that physical activity and healthy eating in elementary school children are the exception rather than the norm. Increased attention to the rising rates of childhood obesity, coupled with the recognition that changes in the school environment are critical to reducing this trend, has intensified the need to adopt better practices in school nutrition, physical activity and physical education. Apart from being physically active, children need to learn fundamental motor skills and develop health related physical fitness (cardiovascular endurance, muscular strength and endurance, flexibility, and body composition). This research explores the positive relationships between good nutrition and the cognitive skills of students in kindergarten through third grade. This paper discusses how certain nutrients have been found to improve skills such as memory retention, spatial relationships, and pattern skills. Since these are necessary skills of early childhood academics, parents, educators, and the students themselves will benefit from learning more about how nutrition affects those skills.

The effect of refrigerated storage at 1 ± 0.3 ºC on vitamin E level, fatty acid composition and lipid oxidation of fillets was studied in 3 groups of rainbow trout fed diets supplemented with increasing levels (100, 300 and 500 mg kg^{-1} diet, respectively) of \alpha-tocopherol acetate as antioxidant. Fish (initial mean weight 131 ± 1.0 g) were fed experimental diets for 58 days and reached a mean final weight of 299 ± 6.1 g, with growth differences among the 3 experimental groups being insignificant (P > 0.05). This study examined the factors that affected parent's decision for putting their autistic children on a gluten free casein free diet (gfcf diet). Parents completed a fifteen question survey relating to multiple factors affecting their lives while having their children on a gfcf diet. In addition, parents were asked to fill out a three day diet history for their child for a nutrient analysis.;Fifty three surveys (21%) and ten diet histories were returned. The majority of parents first heard of the gfcf diet either on the Internet (28%) or from Parent Magazine (32%). Desperation (25%) was the main reason parents …

This dissertation sought to critically analyze the university environment by examining how the representation practices of corporations articulate with the growing obesity epidemic. For this study, existing data from one southeastern university was collected to describe the articulation between the university and obesity. The analysis examined the collected information and used the cultural studies concept of representation to expose the articulation between obesity and the university setting, including the three major theoretical works of Martin Nestle, Henry Giroux, Michel Foucault, and Paulo Freire. Declines in greater sage grouse (Centrocercus urophasianus) productivity and population numbers throughout their range demand a better understanding of how nutrition influences sage grouse populations. During March and April 1999–2001, blood samples were collected from 158 female (73 adult, 85 yearling), free-ranging, prelaying, greater sage grouse from an area in northwestern Nevada, USA, and southeastern Oregon, USA. These blood samples were evaluated to establish normal blood values for sage grouse and ascertain if certain blood parameters, as indices of nutrition, are useful for predicting if sage grouse hens would raise at least one chick to 1 August. The purpose of this study was to increase the nutrition knowledge of elementary school students by implementing nutrition education lessons. The subjects included 49 kindergarten through third grade students in Johnson County, Tennessee during the fall of 2004. Knowledge increase was measured by pretest and posttest scores. The tests were analyzed by paired t-tests. While all students showed an increase in mean score, kindergarten and first grade students did not show a significant increase in posttest scores. However, second and third grade students showed a significant increase in posttest scores, indicating an increase in nutrition knowledge.

Humic substances are reported to improve plant growth and nutrient uptake, with iron the most studied nutrient. The most common forms of iron in soils are iron oxides, which are stable under aerobic conditions and unavailable for plant uptake. Iron deficient plants become chlorotic, which reduces growth and yield. To determine if humic substances can reduce iron chlorosis, five commercially available organic acids were tested on maize grown in sand columns at high pH. The dry granular humic acid from Aldrich Chemical Company applied at 84.4 g/liter of sand by volume (5% by mass) and 1 g/liter added with irrigation …

For the past decade, Florida’s Latino population has significantly increased and is now the third largest in the United States. The same trend has also occurred in Hillsborough County. Social and economic disparities are significant as Latinos earn less than non-Hispanic whites and many live in poverty. A major concern of this population is the lack of access to inexpensive fresh fruits and vegetables. Effective leadership in the field of dietetics is becoming increasingly vital in a rapidly changing world. A determination of factors which impact leaders and their followers is essential. This study was designed to examine the relationship between religiosity and spirituality and transformational leadership characteristics of hospital food and nutrition managers as rated by self as well as by those directly supervised by the managers. Barramundi nutrition research has been undertaken since 1988. Since that time the requirements for most nutrients, energy demand, ingredient utilisation and the effects of nutrition on flesh quality aspects have all been examined to varying extents.
Optimal protein content of diets has been shown to vary with diet energy density and also the size of fish which are being fed. Most studies have suggested a protein requirement from 45% to 55%. For small fish a protein to energy ratio of 25 to 30 g/MJ is suggested. Limited work has been done on fish larger than 500 g. The 10 essential …

Diet, Physical Activity, And Television Viewing In Relation To The Body Weight Status Of West Virginia Adolescents, Kimberly M. Morris

Context. The obesity epidemic is now threatening youth. Yet little is known regarding the factors associated with adolescent weight status.;Objective. To determine whether dietary intakes, physical activity, and hours spent viewing television are related to the body weight status of West Virginia adolescents.;Design, setting, and participants. This descriptive study included survey, diet recall, and body mass index data from 1,036, 14--20 year olds attending West Virginia high schools during the years 2002 to 2003.;Results. Overweight students consumed less kilocalories (∼378) (P < .001), less servings of total grains (P < .01) and a greater percentage of their energy from protein (P = .01). A significantly less amount of overweight students reported participating in strengthening/toning physical activities on three or more days of the week (P < .01).;Conclusion. Overweight adolescents within the state of West Virginia appear more likely to restrict their energy intake rather than exercise to lose weight. Thus, public health intervention strategies to help these students reach a healthy weight while maintaining adequate nutrition are imperative.
