Roman Dietetics, Monika K. Urbanski Jan 2008

Roman Dietetics, Monika K. Urbanski

Digitized Theses

Various sectors of Roman society ate differently. Wealthy men were virtually unrestrained in making food selections, choosing freely from all of the foods around the Mediterranean. The available array thus enabled the elite to meet and surpass the nutritional guidelines of today's World Health Organization to the extent that they may have even been subject to problems of overnutrition. The lower classes are typically assumed to have been malnourished. On the contrary, the abundance of cereals and legumes they consumed would have provided them with most essential nutrients. Lower classes would also have deliberately sought out meat and fish products …

Measurement Of Nutrient Availability In Feedstuffs For Florida Pompano And Development Of Formulated Diets For Pompano Aquaculture, Craig Gothreaux Jan 2008

Measurement Of Nutrient Availability In Feedstuffs For Florida Pompano And Development Of Formulated Diets For Pompano Aquaculture, Craig Gothreaux

LSU Master's Theses

Consistently high market demand combined with low commercial catches have made Florida pompano, Trachinotus carolinus, one of the highest valued finfish from the Gulf of Mexico. Economic incentive has spurred interest in pompano culture since the 1950s, yet the body of nutritional research on pompano is still sparse. This study was conducted to measure the apparent digestibility of nutrients among a selection of common feed ingredients, and determine the optimum dietary protein level for juvenile Florida pompano at a fixed protein-to-energy ratio, in order to formulate nutritionally complete, cost-effective diets. The four ingredients tested in the digestibility trial were soybean …

Land Use Law And Active Living: Opportunities For States To Assume A Leadership Role In Promoting And Incentivizing Local Options, Patricia E. Salkin, Amy Lavine

Scholarly Works

Obesity, asthma and nutrition are just three public health challenges facing children and adults that can be addressed through land use planning and zoning. States must take a leadership role in providing statutory authority and guidance for local governments to enact and implement laws and ordinances designed to promote active living. Land use policies, transportation policies, redevelopment policies and open space and recreation policies are key areas where reform is needed. This paper highlights existing examples from various states and offers lawmakers, policymakers and advocates options for reforming state laws to incentivize and influence local actions.

The purpose of this article was to identify psychosocial determinants of childhood and adolescent obesity. Some of the determinants were considered non-modifiable such as genetics, sex, age, and race. The risk of developing obesity started early on in life, with high birth weight, rapid growth in infancy, maternal smoking during pregnancy, and lack of breastfeeding indicated as positive predictors. Family food environment and dietary behaviors were considered modifiable determinants and included: consumption of unhealthy foods, portion sizes, snacking, and number of family meals. Physical activity was also considered a protective factor against the development of obesity, with overweight children significantly …

Photochemical Studies Of Nutraceuticals In The Presence Of Cyclodextrins, Zlata Tofzikovskaya, Christine O'Connor, Mary Mcnamara

Conference Papers

The photostability studies of Folic acid and Menadione Sodium Bisulfite, also known as vitamin K3, were carried out in their aqueous solutions at room temperature. Solutions of Folic acid ( 4.8 x 10-5 M) and Menadione Sodium Bisulfite (4.0 x 10-4 M) were exposed to ultraviolet radiation at a wavelength of 365 nm. During exposure absorbance of both solutions was measured using a Perkin Elmer Lamda 900 UV/VIS/NIR Spectrometer. During the stability tests it was noted that addition of β Cyclodextrin (1:1 ratio) to aqueous solutions containing the vitamin slowed down the photodegradation process. The unique shape of Cyclodextrins allows …

The Battle Of The Bulge: Evaluating Law As A Weapon Against Obesity, Margaret Sova Mccabe Dec 2007

The Battle Of The Bulge: Evaluating Law As A Weapon Against Obesity, Margaret Sova Mccabe

Journal of Food Law & Policy

"Silly rabbit, Trix are for kids." Since the 1970s, kids have gotten to know the silly rabbit created to promote sugary, fruit-flavored cereal in television ads. Today, "i'm lovin' it" is the McDonald's slogan, but to millions of children the more recognizable symbol is Ronald McDonald. Ronald McDonald is so recognizable that one study pegged recognition of Ronald among American children at 96% and another at 80% by children in nine other countries. Given the "obesity crisis," many question whether these ads should be permitted, with some questioning whether such products are even safe for children's consumption. The Trix Rabbit …

Fruit Quality And Consumption By Songbirds During Autumn Migration, Susan B. Smith, Kathleen H. Mcpherson, Jeffrey M. Backer, Barbara J. Pierce, David W. Podlesak, Scott R. Mcwilliams

Biology Faculty Publications

Seasonal fruits are an important food resource for small songbirds during autumn migration in southern New England. Therefore, conservation and management of important stopover sites used by migrating birds requires knowledge about nutritional requirements of songbirds and nutritional composition of commonly consumed fruits. We measured nutrient composition and energy density of nine common fruits on Block Island, Rhode Island, and conducted a field experiment to estimate consumption rates of three of these fruits by birds during autumn migration. Most common fruits on Block Island contained primarily carbohydrates (41.3–91.2% dry weight), and little protein (2.6–8.6%) and fat (0.9–3.7%), although three contained …

Maternal Education And Child Nutrition: Evidence From The 2000 And 2005 Ethiopian Demographic And Health Surveys, Alemayehu Azeze Ambel Aug 2007

Maternal Education And Child Nutrition: Evidence From The 2000 And 2005 Ethiopian Demographic And Health Surveys, Alemayehu Azeze Ambel

International Conference on African Development Archives

I used the 2000 and 2005 Ethiopian Demographic and Health Surveys to analyze the effect of maternal education and its pathways on chronic and acute malnutrition in Ethiopia. The pathways examined in this study are socioeconomic status, maternal health-seeking behavior, maternal knowledge of health and family planning and reproductive behavior. I find that maternal education works through all except health-seeking behavior. I also find that maternal education and its pathways are more relevant and robust in explaining chronic than acute malnutrition. Socioeconomic status is the most important factor linking maternal education and child nutritional status. Although girls’ education is a …

The Prolamins Of Pearl Millet, Christian B. Ricks Jul 2007

The Prolamins Of Pearl Millet, Christian B. Ricks

Theses and Dissertations

Although work on the prolamins of pearl millet (Pennisetum glaucum) has revealed partial amino acid sequences for several alcohol-soluble storage proteins (Marcellino et al. 2002) the genes encoding them have not yet been isolated. We constructed a cDNA library from developing P. glaucum seed tissue and screened it using maize zein gene probes to isolate several α-prolamin-like gene sequences. The proteins encoded by these genes generally fall into two size classes: 20.6kD and 27.1kD, which we call the 21kD and 27kD pennisetins. Both proteins are similar in composition and sequence to α-prolamins from maize, sorghum and Coix. Protein bodies that …

Diet, Nutrition, Obesity And Their Role In Arthritis, Peter F. Sharkey, David L. Paskin, Thomas D. Meade, Richard H. Rothman

Department of Orthopaedic Surgery Faculty Papers

Obesity and poor nutrition, individually and together, have created costly musculoskeletal disease epidemic in the United States. Processed food, with abundant "empty" calories, has contributed greatly to our dietary woes. Much of the food consumed today is packed with calories but refined to the point that essential nutrients are lacking. Even worse, processed food may have ingredients added that are detrimental to good health. Abundant research has documented a close relationship between obesity, poor diet and orthopaedic problems. Dietary supplements have been proven to provide both disease prevention and therapeutic benefits. Unfortunately, many weight loss programs and methods are ineffective …

Consumption & Attitudes About Whole Grain Foods Of Unl Students Who Dine In A Campus Cafeteria, Kimberly J. Bisanz, Kaye L. Stanek Krogstrand

RURALS: Review of Undergraduate Research in Agricultural and Life Sciences

Strong, research-based evidence indicates the consumption of whole grains lowers the risk of chronic diseases, including type 2 diabetes mellitus, cardiovascular disease, and certain cancers, along with aiding weight regulation. Consequently, the 2005 Dietary Guidelines for Americans set forth by the Department of Health and Human Services (HHS) and the Department of Agriculture (USDA) placed an increased emphasis on whole grains in the American diet. It is recommended that at least one-half of the grains in a daily diet, or approximately 3 one-ounce servings, should be whole grain. The hypothesis of this research was that students eating in campus dining …
