Our goal with the present proposal is to bring modifications to the dining experience in Kimball Hall at the College of the Holy Cross, so to encourage a more well-rounded approach, which would best represent the values of continuous learning and education of the whole person and reflect the mission of the College. In order to meet these goals, we recommend five changes to Kimball dining , which we plan to implement during the Spring 2017 semester in collaboration with two Montserrat seminars.

Background & Purpose: Although hydration is the major concern in hotter climates, nutrition status can affect performance. In moderate climates MREs have been validated to meet the standards of the Military Dietary Reference Intakes. However, in hot climates preference of cooler foods and the anorectic effect can cause nutrient deficiencies. The purpose of this review was to examine the effect of the food ration “Meal, Ready-to-Eat” (MRE) on the performance of male armed services personnel in hot climates.

The discussion of body weight and the classical singer is not new, but recent events, such as HD broadcasts of opera productions, along with rising obesity rates across the general populace, have led to increased debate surrounding the stereotype of the overweight opera singer. The purpose of this research study was to explore the relationship between nutrition and social work education, practice, and perceptions on nutrition. Licensed master’s level social workers in the state of Michigan (n=45) were recruited online through Grand Valley State University’s School of Social Work listserv, social media, social work professors and colleagues. Participants completed an anonymous online survey through Google Forms which included 18 questions. In order to produce mechanical energy through muscular activity, the body must oxidize chemical energy, carbohydrate, fat, or protein through metabolic processes, which then results in the production of ATP as mechanical energy through exercise. Total body metabolism, specifically skeletal muscle depends on factors such as the intensity and duration of exercise, substrate availability, and Training status. During exercise at low intensities (25% of VO2 max) fat is the primary macronutrient that is oxidized for energy. Background: In 2015, participants within a stroke support group reported that, they felt ill prepared to care for themselves following a stroke (Boger, Demain and Latter, 2015). Similar feelings as well as decreased socialization, loss of independence, and changes in mood were reported in another stroke support group setting in 2014 (Muller, Toth-Cohen and Mulcahey, 2014). In an effort to enhance an existing stroke support group, purposeful activities were provided in an educational format to allow for new learning and engagement for all stroke survivors. Our aim was to utilize a feasible quantitative methodology to estimate the dietary adequacy of >900 first-trimester pregnant women in poor rural areas of the Democratic Republic of the Congo, Guatemala, India and Pakistan. This paper outlines the dietary methods used.
Methods:
Local nutritionists were trained at the sites by the lead study nutritionist and received ongoing mentoring throughout the study. Training topics focused on the standardized conduct of repeat multiple-pass 24-hr dietary recalls, including interview techniques, estimation of portion sizes, and construction of a unique site-specific food composition database (FCDB). It is not a diet, but rather a nutritional concept that refutes any diet that promotes cutting out entire foods or food groups as a method to lose weight. It is a structured and science-based method of eating that involves tracking calories through monitoring the three main macronutrients: carbohydrates, fats, and proteins. Lactose intolerance is often blamed for the symptoms such as bloating, diarrhea, gas, abdominal pain, and nausea, that ail many people. Patients often do not seek proper diagnosis from a physician and create their own treatment plans, severely restricting lactose intake, without professional guidance. Even those who do seek the care of a physician find that diagnosis is complicated by less-than ideal testing and confusion due to the symptoms common to many other conditions. The Mathematics of Nutrition Science is a workbook designed to integrate and contextualize developmental mathematics into an introductory college level Nutrition class. Definitions and skills from Community College Level Elementary Algebra and Quantitative Literacy courses are explained through examples analyzing the nutritional content of different foods. The book contains exercises for students to practice these skills, and also to reflect on the concepts through short writing assignments aligned with developmental English. These materials could be used by Nutrition course instructor in many different ways, and are designed to be self-contained and require minimal mathematical instruction.

Exposure to environmental pollutants is a global health problem and is associated with the development of many chronic diseases, including cardiovascular disease, diabetes and metabolic syndrome. There is a growing body of evidence that nutrition can both positively and negatively modulate the toxic effects of pollutant exposure. Diets high in proinflammatory fats, such as linoleic acid, can exacerbate pollutant toxicity, whereas diets rich in bioactive and anti-inflammatory food components, including omega-3 fatty acids and polyphenols, can attenuate toxicant-associated inflammation. Growth performance in vertebrates is regulated by environmental factors including the quality and quantity of food, which influences growth via endocrine pathways such as the growth hormone (GH) / insulin-like growth factor somatotropic axis. In several teleost fishes, circulating concentrations of insulin-like growth factor-1 (Igf1) correlate positively with growth rate, and it has been proposed that plasma Igf1 levels may serve as an indicator of growth variation for fisheries and aquaculture applications. This brief is about the nutritional intakes of veterans with peripheral arterial disease, and expands on previous studies. For policy and practice, the research shows that physicians should play a role in educating veterans about long-term effects of their nutritional intakes, and that the DoD and VHA should create an educational program about nutritional intake. Suggestions for future research include using daily or weekly food diaries to increase reporting accuracy and using a more representative sample in randomized controlled tests.

A critical time period to prevent overweight may be the college age years. College students experience newfound food independence, possibly resulting in the formation of poor eating habits, such as overeating, or binge eating, placing them at high risk for obesity. Additionally, college students with high perceived stress levels are more likely to experience emotional eating, which may lead to weight gain. Malnutrition is closely linked to maternal and child deaths particularly in developing countries. The causes are linked to inadequate dietary intake and household food security. There is need to improve the nutritional status of women. A cohort of 30 postpartum women staying around Mbabane were offered Nutrition education (NE), however, prior to NE their nutrition KAP was assessed as well as post NE. Collaborations with Nutrition Council involved provision of NE materials and Mbabane Municipality trained some of the postpartum women as trainers on how to establish backyard gardens. The open abdomen (OA) is defined as intentional decision to leave the fascial edges of the abdomen un-approximated after laparotomy (laparostomy). The abdominal contents are potentially exposed and therefore must be protected with a temporary coverage, which is referred to as temporal abdominal closure (TAC). Marketing techniques may improve children's vegetable consumption. However, student participation in the design of marketing materials may increase the material's salience, while also improving children's commitment and attitudes towards healthy eating.
The impact of student-led design of vegetable promotional materials on choice and consumption was investigated using 1614 observations of students' vegetable choice and plate waste in four public elementary schools in Kearney, Nebraska. A social ecological model is applied to the secondary analysis of qualitative data to study the impact of place on rural food access for older adults in West Virginia. The use of a social-ecological model to review the senior’s coded narratives provided a clearer picture of higher impact, upstream levers to address food security for older adults in a rural region. Childhood obesity is a global health concern that puts children at risk for developing serious health complications. With increasing rates worldwide, it is important to determine how to decrease its prevalence and promote prevention in future generations. Emerging evidence indicating that pre-pregnancy weight status and/or gestational weight gain (GWG) may be linked with overweight/obesity in children. There is an urgent need to find effective interventions to prevent and reduce obesity as it is associated with chronic disease and decreased quality of life. Gaining a better understanding of how modifiable variables such as stress, sleep, physical activity, and food insecurity are related to eating behaviors associated with obesity is essential to guide the direction of future interventions and research. Disenfranchised communities have yet to become full beneficiaries of the core values of the Constitution. Health inequities are rooted in the social barriers connected to racism, classism, and sexism. Furthermore, marginalized groups in Washington, District of Columbia (D.C.), reside in food deserts. Urban agriculture has gained exposure as a working solution to the epidemic of food deserts in underserved urban communities. In the past twenty to thirty years, critics-both public and private-have scrutinized the national network of public school nutrition programs and the food they serve in cafeterias. Negative claims particularly voice concerns about the quality of foods available to students. School food items have been characterized as highly processed, lacking in nutritional value, and unappetizing in taste and appearance. Furthermore, industrialized, non-locally sourced public school food has been blamed for contributing to high rates of childhood obesity and associated health risks. There is a need for sustainable interventions that improve diet-related health within the food insecure community. We examined if use of a “default” prefilled online grocery shopping cart, compared to nutrition education, would result in the purchase of healthier food items. Fifty participants (M age = 46.4 ± 12.46 years; M body mass index = 28.59 ± 6.48 kg/m2; 74.0% male) were randomized to: (1) read a brochure containing nutrition information (n = 23) or (2) be presented with a “default” prefilled online shopping cart containing groceries that meet nutritional guidelines to which they could freely make changes before completing …
