Integrative medicine is becoming increasingly important for a patient population afflicted with preventable illnesses such as cardiometabolic disease. Diet and nutrition are an under-tapped opportunity in health care for improving wellness and patient-centered health outcomes. Key nutritional principles are reviewed for alternate dietary strategies patients choose from in pursuit of healthy living or to alleviate chronic illness. Whole food eating plans are discussed including plant-based, Mediterranean, Paleo, and ketogenic diets as well as the specific carbohydrate and low FODMAP diets for colitis and irritable bowel syndrome. Background and Objectives: Obesity rates in adults ≥65 years have increased more than other age groups in the last decade, elevating risk for chronic disease and poor physical function, particularly in underserved racial and ethnic minorities. Effective, sustainable lifestyle interventions are needed to help community-based older adults prevent or delay mobility disability. Design, baseline recruitment, and implementation features of the Mobility and Vitality Lifestyle Program (MOVE UP) study are reported.

Food-borne illness is a major public health concern in the United States. Proper food safety measures can greatly reduce the risk of food-borne illness. The 4-H Cutting Board Challenge is designed to give participants a hands-on learning experience related to food preparation and food safety procedures and an opportunity for team building and critical thinking. The objectives of the program include researching food preparation techniques, identifying common food pairings and recipes, learning to create a main dish and a dessert dish for evaluation, increasing knowledge of food safety procedures, and working in teams.

Background: Adolescence is a critical period for physical and psychological growth and development, and vitamin and mineral requirements are correspondingly increased. Overtraining syndrome (OTS) is characterized by an unexplainable drop in athletic performance. It affects primarily elite, endurance athletes, though sub-elite athletes are also affected. Although the deterioration in performance is often the most pronounced and troublesome symptoms for athletes, others range from severe fatigue and insomnia to depression and lack of mental concentration. There is no known diagnostic tool except for ruling out all other possible explanations for the abnormal performance. The only known remedy for OTS is rest. Some recover within months while others take a year or more. Some athletes never fully recovery and never return to pre-OTS …

Chronic diseases are strongly associated with premature death and increased health care costs. Nearly half of American adults report they have one or more chronic health conditions. Cooperative Extension is calling for refocus to refine and align with broader efforts to promote public health by supporting the prevention and management of chronic disease. The success of this refocus is dependent on a shared vision between funding agencies, stakeholders, and Extension. This study examines the impact large-scale animal agriculture has on the environment. It links the environment and health. The goal is to find protein sources that are sustainable and nutritious in order to replace typical meat and dairy products. Background: There is a peculiar phenomenon: two separate individuals (mother and foetus) have a mutually interactive dependency concerning their respective weight. Very thin mothers have a higher risk of small for gestational age (SGA) infants, and rarely give birth to a large for gestational age (LGA) infant. While morbidly obese women often give birth to LGA infants, and rarely to SGA. Powerlifting is the sport of maximal effort of back squat, bench press and deadlift. The purpose of this study was to identify the ideal body composition of female powerlifters. Body composition measurements were taken on the day of competition on women who competed in a raw powerlifting meet in United States Powerlifting Federation using bioelectrical impedance analysis. Participants’ powerlifting experience ranged from novice to world-class lifters. One hundred ninetyive women completed the study and ages ranged from 18 to 75 years old. Mean body fat percentage (BF%) of all powerlifters was 31.21% and body mass index was 26.68. Results showed …

Epidemiological studies have shown an association between high carrot consumption and low prevalence of cancer. This observation has been thought to be attributed to carrot carotenoids. Despite this, various intervention trials have displayed no changes in incidence or increased incidence of cancer with carotenoid supplementation. It is possible that carrot phenolics are responsible for this association, though this has not been widely accepted. Volatile terpenoids from carrots have not been studied in this regard. Legionella pneumophila is an environment organism that parasitizes a wide range of protozoa. Growth within the environmental host primes L. pneumophila for infection of human alveolar macrophages when contaminated aerosols are inhaled. Intracellular replication within either host requires the establishment a replicative niche, known as the Legionella-containing vacuole (LCV). Biogenesis of the LCV depends on the type IVb translocation system, the Dot/Icm, to translocation >320 effectors into the host cytosol. Many health related issues in the United States are linked to Americans’ poor diet choices. College students, a subset of that population, establish important trends in their diet habits that they will maintain over their four years in college and beyond. Although previous literature has found income to be a determinant of diet, this paper does not find income to be a significant predictor of student nutrition. One potential explanation is that college provides a unique environment and circumstance. Diets high in fats, sugars, and sodium are contributing to alarming levels of obesity, cardiovascular disease, type 2 diabetes, and certain cancers throughout the United States. Sugary drinks, which include beverages that contain added caloric sweeteners such as flavored milks, fruit drinks, sports drinks, and sodas, are the largest source of added sugar in the American diet and an important causative factor for obesity and other diet-related diseases.

Today, it is becoming more common to see bad health choices among student athletes. These young adults may lack knowledge about nutrition causing them to choose unhealthy eating habits which may lead to future health complications (Johannes Brug et al., 2008). In order to address this problem, more emerging adults need to be aware of the issues at hand. To address the lack of awareness in student athletes, I will provide feedback to meal choices, a nutritional deficit survey, present an educational power point, and track progress.

The incidence of breast cancer has substantially increased in recent years among this women population, especially those younger than 50, and the incidence is expected to double by 2030. Considerable experimental evidence supports the potential role of dietary habits and lifestyle in cancer etiology and cancer prevention. The objective of this investigation is to gain information regarding the transition of adults from a tube feeding to an oral feeding in long-term care facilities. Twelve surveys were administered to the speech language pathologist population from the UTRGV and UTPA communication sciences and disorders alumni via email invitation. Late gestation and post-weaning are two critical periods a calf needs to receive proper nutrition to insure adequate growth for the rest of the animal’s lifespan. Supplementation at these critical time points may be necessary in order to meet nutritional requirements. Food pantry clients are at an increased risk of poor diet quality which can lead to a variety of chronic diseases. Identifying nutrition interventions that help improve the dietary intake of this vulnerable population is important to help improve health outcomes. Utah’s Supplemental Nutrition Assistance Program-Education (SNAP-Ed), also known as Food $ense, partners with many pantries throughout the state to improve healthy food access.
