Yerba Mate: National Project To Emerging Superfood, Ana Fochesatto

Theses and Dissertations

Yerba mate, Ilex paranguariensis, is a shrub commonly found in the Atlantic Forest of South

America which covers part of northeast Argentina, eastern Paraguay, and southern Brazil. The

dried leaves and stem of the tree are used to make an infusion, called mate, used first by indigenous

Guaraní people. Today, yerba mate is widely consumed in the Southern Cone region and is

regarded as the national drink of Argentina, Paraguay, and Uruguay. I argue that yerba mate has

entered the U.S. as a “superfood,” marketed as a product with nutritional and symbolic medicinal

values.

In this thesis, I trace yerba …

Dietary Effects On Protein Turnover In Three Pinniped Species, Eumetopias Jubatus, Phoca Vitulina, And Leptonychotes Weddellii, Susan D. Inglis May 2019

Dietary Effects On Protein Turnover In Three Pinniped Species, Eumetopias Jubatus, Phoca Vitulina, And Leptonychotes Weddellii, Susan D. Inglis

Marine Biology

The role of dietary protein in pinniped (seal and sea lion) nutrition is poorly understood. Although these marine mammals derive the majority of their daily energetic needs from lipid, lipids cannot supply essential amino acids which have to come from protein fractions of the diet. Protein regulation is vital for cellular maintenance, molt, fasting metabolism, exercise and development. Proteins are composed of linked amino acids (AA), and net protein turnover is the balance between protein synthesis from component AA, and degradation back to AA. Protein regulation is influenced by dietary intake and quality, as well as physiological and metabolic requirements. …

Biogeochemical Tracers Of Change In Pacific Walruses Past And Present, Casey Clark May 2019

Biogeochemical Tracers Of Change In Pacific Walruses Past And Present, Casey Clark

Marine Biology

Reduced sea ice and projected food web shifts associated with warming of the Arctic have raised concerns about the future of Arctic species. Pacific walruses (Odobenus rosmarus divergens) use sea ice as a platform for molting, giving birth, and resting between foraging bouts. Exactly how sea ice loss will affect walruses is difficult to predict, due to a lack of information about regional ecosystems and their responses to climate change. The objectives of the research in this dissertation were to 1) examine how walrus diet changed in response to shifting sea ice conditions over the last 4,000 years, with the …

Childhood Obesity: Getting Back To The Basics, Fanny Powell May 2019

Childhood Obesity: Getting Back To The Basics, Fanny Powell

DNP Qualifying Manuscripts

Childhood obesity is an epidemic that affects the nation. The Centers for Disease Control and Prevention (CDC) (2015) states that over the past thirty years, the prevalence of childhood obesity has more than doubled in younger children and quadrupled in adolescents (CDC, 2015). Although obesity is a multifactorial health issue that is affected by genetics, metabolic factors, socioeconomic factors, and lifestyle choices (Stanford, 2018), a majority of pediatric obesity is as a result of consuming more energy than the body utilizes. There are both immediate and long-term consequences of obesity that negatively affect a child’s health which may carry over …

Typical Diet Quality In New Zealand Compared To Other Westernized Countries With An Emphasis On Chronic Disease, Emily Kollar May 2019

Typical Diet Quality In New Zealand Compared To Other Westernized Countries With An Emphasis On Chronic Disease, Emily Kollar

Honors Projects

The diet quality was analyzed for people living in New Zealand and people living in other Westernized Countries (United States, Canada, Western Europe) based on the dietary guidelines. Diet quality was analyzed by looking at consumption of food groups such as fruits, vegetables, meat, and seafood as well as nutrients such as saturated/trans/unsaturated fat, sodium, and added sugars. These nutrients have been linked to certain health outcomes and chronic disease; therefore, the prevalence of chronic disease was researched to determine if there was a correlation between New Zealand's diet and their chronic disease rates in comparison to other Westernized countries.

The Effect Of Guilt Free Claims On Restrained And Non-Restrained Eaters' Purchase Intention, Perception Of Product Healthfulness, And Amount Willing To Pay For A Novel Product, Alexis Ludwig May 2019

The Effect Of Guilt Free Claims On Restrained And Non-Restrained Eaters' Purchase Intention, Perception Of Product Healthfulness, And Amount Willing To Pay For A Novel Product, Alexis Ludwig

Master's Theses

Products with health-related claims that are perceived to be tasty are more likely to be purchase by consumers than products without a claim. Restrained eaters rely more on external cues such as food packaging rather than internal cues such as hunger signals in a way to control their caloric intake.1,2 Restrained eaters may be more susceptible to marketing and food claims compared to non-restrained eaters. We propose a guilt free message will affect perception of healthfulness. We also propose a guilt free message and eating restraint will affect purchasing decisions. Lastly, perception of healthfulness and valuing nutritious products mediates …

Evaluating Maternal Eating Competence In Relation To Maternal And Child Fruit And Vegetable Intake, Rachel Watkins May 2019

Evaluating Maternal Eating Competence In Relation To Maternal And Child Fruit And Vegetable Intake, Rachel Watkins

Theses - ALL

Introduction: Nutritional intake is often controlled and rationalized through an individual’s status of eating competence (EC). EC is defined as allowing oneself to be comfortable, flexible, and positive with eating while respecting personal desires and enjoying nourishing food. EC is divided into 4 sub categories: eating attitudes, food regulation, food acceptance and contextual skills. Competent eaters are more likely to consume more essential vitamins and minerals for functional health, compared to those whose were not competent eaters. Researchers have examined the role mothers play on influencing children’s eating pattern development and have found that modeling is thought to be a …

Provider Awareness Associated With Lifestyle Interventions And Adult Obesity, Reilly Tackett May 2019

Provider Awareness Associated With Lifestyle Interventions And Adult Obesity, Reilly Tackett

Doctor of Nursing Practice Scholarly Project

The obesity epidemic cannot be solved through a single solution. A complex problem like obesity requires an intricately designed approach, comprised of both behavioral and environmental changes (Centers for Disease Control, 2015). Obese adults who attempt to alter their lifestyles often experience barriers to success. One such barrier is a provider who may be unfamiliar with evidence-based lifestyle interventions. Research suggests large variances both in provider knowledge levels and practice recommendations associated with adult obesity. This study’s purpose was; to determine if provider recommendations reflected clinical practice guidelines (CPG) associated with adult obesity, to measure current levels of provider knowledge, …
