Background

The purpose of this study was to compare nutritional intakes against recommended values as well as between the perceived intake and needs of female lacrosse players.

Methods

Twenty female NCAA Division II lacrosse players (20.0 ± 1.7 yrs., 169.7 ± 6.4 cm; 69.9 ± 10.7 kg; 27.5 ± 3.3% fat) completed a four-day monitoring period during in-season. Athletes were outfitted with an activity monitor over four consecutive days and completed four-day food records to assess total daily energy expenditure (TDEE) and dietary intake. Childhood overweight, obesity, and food insecurity are serious problems that are especially prevalent in low-income areas. Belmont Elementary School serves many children from low-income households (classified as a Title I school with 82.6% of students receiving free or reduced-price lunch) and, thus, was a perfect setting for the birth of an original nutrition curriculum.

A six-week after-school nutrition education program called “Mission Nutrition” was developed and implemented at Belmont Elementary School over the course of three and a half years. Malnutrition is evident in hospitals and stroke patients are at increased risk. Protected mealtimes may help increase nutrient intake especially when patients interact and enjoy the dining room atmosphere. Background: The purpose of this study was to examine relationships among biomarkers of iron status, athletic performance, growth and development, and dietary intakes in pre-adolescent and adolescent male and female athletes.

Methods: Two-hundred and forty-nine male (n = 179) (mean ± standard deviation for age = 12.0 ± 2.1 years, height = 156.3 ± 13.9 cm, and weight = 49.1 ± 16.5 kg) and female (n = 70) (12.0 ± 2.2 years, 152.4 ± 12.3 cm, 45.3 ± 14.5 kg) athletes volunteered for capillary blood sample, anthropometric, athletic performance, and dietary intake assessments. This project is intended to use Black Feminist Health Studies as an interdisciplinary approach to analyze the holisitc impacts of community gardens on nutrition behaviors. The implementation of green spaces such as community gardens have been correlated to both benefits and unintended consequences which this study demonstrates through the Socio-Ecological Wellness Wheel. An empirical and systematic way of measuring garden quality through an audit tool using Black Feminist Health Studies could help measure the nutrition environment of the community gardens and how they may influence fruit and vegetable consumption of food insecure populations. The Taming Of The Stew: Humans, Reindeer, Caribou And Food Systems On The Southwestern Seward Peninsula, Alaska, Odin Tarka Miller

This thesis addresses the question, what is the role of reindeer within communities of Alaska's southwestern Seward Peninsula, particularly as a food source? Employing a mixed-method approach, I conducted several months' fieldwork in the Seward Peninsula communities of Nome and Teller between 2016 and 2018, using methods that included participant observation, ethnographic interviews and a household survey designed to describe and quantify use of reindeer as food. As two varieties of the same species, Rangifer tarandus, reindeer and caribou are very similar in appearance. When caribou herds migrate nearby, reindeer tend to join them and become feral. Many Americans do not consume enough healthy food and overconsume sugar and meat products. As a prominent food desert, this trend is particularly rife in Arlington/Ft. Worth, TX especially among low-income individuals. To obtain an understanding of this dearth in healthy eating, this research sampled a low-income population for focus groups (Study 1) and a longitudinal experimental study (Study 2). A safe food supply is essential for a healthy society. Our food system is replete with different types of risk, yet food safety is often narrowly understood as encompassing only foodborne illness and other risks related directly to food ingestion. This Article argues for a more comprehensive definition of food safety, one that includes not just acute, ingestion-related risks, but also whole-diet cumulative ingestion risks, and cradle-to-grave risks of food production and disposal. This dissertation examined the dimensions of food access and its effects on food selection for individuals enrolled in the Supplemental Nutrition Assistance Program (SNAP); low-income senior citizens; and recipients of the Women, Infants, and Children (WIC) benefit. This study investigated the use of the Link Up Illinois Double Value SNAP Nutrition Incentives Program (DVCP), a coupon with which recipients can receive twice as much fresh produce when redeemed at a farmers market. According to the USDA, food insecurity or the inadequate access to a sufficient amount of nutritious food, affects over 12.3 percent of the U.S. population including more than 680,000 South Carolinians (USDA, 2017a). Background:Childcare settings play an important role in shaping young children’s eating, physical activity (PA), and screen time (ST) behaviors. However, little research has focused on family childcare homes (FCCHs). This paper examines family child care provider (FCCP)-reported attitudes and perceived barriers related to nutrition, PA, and ST of preschool aged children in their FCCH, exploring differences by provider ethnicity.

Methods:We used baseline data from an ongoing cluster-randomized trial including surveys with FCCPs. Background: Up-to-date dietary data are required to understand the diverse nutritional challenges of pregnant women living in low-middle income countries (LMIC). To that end, dietary data were collected from 1st trimester pregnant women in rural areas of Guatemala, India, Pakistan, and Democratic Republic of the Congo (DRC) participating in a maternal lipid-based nutrient supplement (LNS) Randomized Controlled Trial to examine dietary diversity (DD), usual group energy and nutrient intakes, and prevalence of inadequate dietary intakes.

Introduction: Diet and nutrition play an important role in a child’s health and reduce the risk of numerous health problems including obesity. Dietary habits can be difficult to modify in children, particularly in Appalachia, where access to affordable, healthy foods is limited.

Purpose: To examine barriers to healthy eating among Appalachian youth.

Methods: In 2013–2014, data were gathered via focus groups and interviews from parents, school personnel, and adolescents (N=99) in six counties across southern Appalachia. Data were analyzed using thematic network analysis. Analysis was completed in 2015.
