Low Income And Access To Healthy Food: The Case Of Milk, Jeffrey Young, James K. Binkley
Low Income And Access To Healthy Food: The Case Of Milk, Jeffrey Young, James K. Binkley
Faculty & Staff Research and Creative Activity
Even with abundant dietary research and knowledge about healthy eating, there is still a considerable shortfall in dietary quality of low-income households in the US. Chen et al. (2012) proposed that this problem is at least in part due to low-income individuals’ having less expected future earnings and thus, reduced incentive to pursue longevity by means of healthy eating. We further their analysis, offering improvement by controlling for access to low-fat milk. We find that even when allegedly crucial factors such as cost and access are not issues, relative purchasing of low-fat milk is still linked to higher income.

Background:
Women and children suffer disproportionately in armed-conflicts. Since 2011, the protracted Syrian crisis has fragmented the pre-existing healthcare system. Despite the massive health needs of women and children, the delivery of key reproductive, maternal, newborn, child and adolescent health and nutrition (RMNCAH&N) interventions, and its underlying factors are not well-understood in Syria. Our objective was to document intervention coverage indicators and their implementation challenges inside Syria during conflict.
Methods:
We conducted 1) a desk review to extract RMNCAH&N intervention coverage indicators inside Syria during the conflict; and 2) qualitative interviews with decision makers and health program implementers to …

Investigating Ancient Bison Migration In Alaska: A Bottom Up Approach Using Isotopes, Juliette Marie Funck
Investigating Ancient Bison Migration In Alaska: A Bottom Up Approach Using Isotopes, Juliette Marie Funck
Geosciences
Once abundant in the Arctic, bison (Bison bison) declined almost to extinction in the North but have subsequently been reintroduced into Alaska. The predecessors of these modern bison were the ancient steppe bison (Bison priscus), which were abundant throughout the Northern Hemisphere before their extinction during the Holocene. This thesis investigates the ecology and landscape-use of both the present-day wood bison (Bison bison athabascae) and the ancient steppe bison in Alaska using stable isotopes, among other methods. The stable carbon and nitrogen isotope compositions of animal tissues are traditionally used to investigate diet. However, this thesis uses the isotope composition …

Eliminating Routine Gastric Residual Volume Assessments In The Intensive Care Setting, John Marshall Smith
Doctor of Nursing Practice (DNP) Translational and Clinical Research Projects
This evidence-based project sought to evaluate the practice change of routine GRV elimination within a 14 bed adult intensive care unit (ICU) at a large teaching hospital in the southeastern United States. For decades, the gold standard to determine tolerance to enteral nutrition (EN) has been routine GRV assessments via aspiration. However, recent studies have concluded the practice ineffective. Critical Care guidelines published in 2016 now recommend cessation of routine GRV assessments (Ozen, et. al, 2018). In-servicing, education, and implementation of a validated protocol from the University of Virginia Medical Center was used to enact the practice change. A 30-day …

The Realities of Plant-Based Dieting
In modern society, dieting has become a social norm, however, due to improper nutritional education, the transition to limiting diets can lead to adverse health effects. The societal pressures to adhere to extreme beauty standards lead individuals, especially women, to adopt diets based on their incorrect notions about nutrition and health. When this occurs, the dietary goal becomes weight loss rather than health improvements. This paper focuses on two plant-based diets: vegetarianism and whole foods-plant based. To capture the short- term bodily impacts from transitioning to a plant-based …

The Effects Of A Nutritional Intervention On Healthy Eating Habits And Body Mass Index, Kelley Eshenaur
Evidence-Based Practice Project Reports
In the US, overweight and obesity are growing concerns, as both can have life altering consequences if not prevented or treated. Since 2000, there has been nearly a 10% increase of adults who are obese, from 30.5% (85.8 million) to 39.8% (93.9 million) in 2016 (CDC, 2017). These conditions are preventable with early intervention and motivation. Obesity statistics are especially of interest during the transition to young adulthood. The purpose of this project was to improve student outcomes by identifying barriers, effective strategies, and healthy choices that would ultimately impact weight, increasing healthy food choices, and decreasing overall BMI in …

BACKGROUND: Children residing in neighbourhoods of high deprivation are more likely to have poorer health, including excess body size. While the availability of unhealthy food outlets are increasingly considered important for excess child body size, less is known about how neighbourhood deprivation, unhealthy food outlets and unhealthy dietary behaviours are interlinked.
METHODS: This study involves children aged 8-13 years (n=1029) and resided in Auckland, New Zealand. Unhealthy dietary behaviours (frequency of consumption of unhealthy snacks and drinks) and food purchasing behaviour on the route to and from school were self-reported. Height and waist circumference were measured to calculate waist-to-height ratio …
