Journal of International Women's Studies
This study examined rural banditry in North Central Nigeria, focusing on women’s experiences in affected communities. The study specifically looked at women’s experiences with poor health, sexual violence, and physical harm caused by rural banditry and militancy in the study area. The study employs Kate Millet’s feminist theory of patriarchal power and structure to frame its theoretical standpoint. Four hundred women informants were selected through stratified random and purposive sampling techniques, and data were obtained using a questionnaire and eight in-depth interviews. Data were analysed using descriptive statistics such as percentages and frequency tables, while simple linear regression was used …

Development Of A Functional Artisanal Sugar-Free Ice Cream And Study Of Physicochemical Behavior, Popescu Mariana, Dabija Adriana, Chetrariu Ancuta
Annals. Food Science and Technology
The use of natural sweeteners in ice cream production could meet the demands of modern consumers focused on natural and nutritionally balanced foods. The objective of this work was to fill the gap in the basic knowledge about the effects of sugar-free apple concentrate, a natural substitute for sugar, rose petal jam and oat milk on the properties of artisanal ice cream. As a reference sample (REF), an ice cream sweetened with sugar-free apple concentrate, rose petal jam and oat milk base was produced, then increasing the amount of apple concentrate and the amount of oat milk, and in parallel …
Effectiveness Of Occupational Recommendations In Maintaining Cognitive Function Under Hot-Dry And Warm-Humid Conditions, Zane Garner
2026 Research Poster Competition
National Institute for Occupational Safety and Health (NIOSH) recommendations dictate heat safety practices in occupations throughout the United States. Currently, the effectiveness of these recommendations is unknown. Likewise, there is a lack of consensus regarding the effect of combined heat and exercise stress on cognitive function. PURPOSE: To examine the effectiveness of NIOSH heat safety recommendations in maintaining cognitive function after moderate work in the heat, alongside whether the type of heat has any effect. METHODS: A counter balanced, repeated measures, randomized controlled trial was conducted to evaluate differences in cognitive function in two distinct environments. Participants completed two experimental …

Department of Medicine Faculty Publications
Despite sustained public health efforts, hypertension remains highly prevalent in the United States, with persistent disparities across demographic and socioeconomic groups. We examined 25-year trends in hypertension prevalence, undiagnosed hypertension, and on-treatment uncontrolled hypertension in the United States using nationally representative National Health and Nutrition Examination Survey (NHANES) data from adults aged ≥18 years. Hypertension was defined as systolic BP ≥130 mmHg, diastolic BP ≥80 mmHg, or current antihypertensive use. Undiagnosed hypertension was defined as elevated BP without prior diagnosis or treatment, while on-treatment uncontrolled hypertension was defined as diagnosed hypertension with BP ≥130/80 mmHg despite treatment. Survey-weighted generalized linear …
Thriving Through Occupation: Enhancing Occupational Participation For Cancer Survivors, Leslie B. Martinez
Thriving Through Occupation: Enhancing Occupational Participation For Cancer Survivors, Leslie B. Martinez
OT Doctoral Capstones
Cancer survivors often experience decreased participation in meaningful occupations, along with physical, mental, emotional, and financial challenges (Newman et al., 2024). This capstone project developed an educational series to promote engagement in meaningful occupations and provide strategies to combat the negative physical and mental effects of cancer and treatment. Four classes covering various health topics, including cancer-related fatigue, cognitive impairment, mental health, and nutrition, were implemented for cancer survivors at the Rio Grande Cancer Foundation. The classes included an educational portion in which participants were introduced to each topic, followed by interactive learning activities designed to promote the application and …
Spending Programs And The New Roberts Court, Nicole Huberfeld
Spending Programs And The New Roberts Court, Nicole Huberfeld
Faculty Scholarship
The Supreme Court is poised to place new limits on Congress’s spending power at the urging of states vying for regulatory dominance, particularly in health care and public health. This article is the first to highlight and catalog the throughlines of argumentation, which sparked after states successfully challenged the ACA but have grown into opposing more than Medicaid’s cooperative federalism. This means federal and state programs that heavily rely on federal spending power are at risk, so studying this pattern is imperative. The article begins with a descriptive account of increasing spending power challenges, which make use of converging factors …

Balancing Care And Chaos: A Phenomenological Study On The Emotional And Mental Health Challenges Of Emergency Department Nurses, Shantilee Green
Theses and Dissertations
The purpose of this qualitative, phenomenological study was to examine the experiences of emergency department nurses related to emotional and mental health challenges, coping with stress, and ways to provide them with better workplace support. Emergency department nurses are required to work 12-hour shifts in a high-stress environment with a significant patient load and an inadequate patient-to-nurse ratio. Emergency department nurses are exposed daily to patient events that can be traumatic and affect their mental and emotional health, and nurses may find it challenging to cope with the resultant stress.
The researcher created an interview protocol of 14 questions to …
Supporting Latine Older Adults’ Nutrition And Physical Health Goals In Counseling, Zachary P. Mcniece, Jacqueline J. Bergman
Supporting Latine Older Adults’ Nutrition And Physical Health Goals In Counseling, Zachary P. Mcniece, Jacqueline J. Bergman
Faculty Research, Scholarly, and Creative Activity
Latine older adults face disproportionate risk of chronic nutrition-related conditions and food insecurity, which can exacerbate or contribute to the development of mental health-related concerns. Cultural stigma toward mental illness can result in Latine clients, especially older adults, somatizing symptoms and focusing on physical health goals in counseling. Despite these intersecting needs, counselors often overlook clients’ physical health goals due to limited training and the assumption that medical providers alone should address them. This article advocates integrating basic, culturally responsive nutrition information into counseling practice to support client well-being while staying within the scope of practice. We offer practical recommendations …

Historical accounts document that the shift from rural settlement to urban settings and from employment in cottage industries to factory working at the turn of the 19th century had a negative impact on the lower classes.
In 2015, the relocation of the cemetery of St Peter’s Churchyard in Blackburn, Lancashire, provided an opportunity to study the effects of industrialization on the diets and health of an early to mid-19th-century population through osteological and biomolecular analyses. Those interred at St Peter’s represent a socioeconomic cross-section of the church’s parishioners. In this paper, we present an evaluation of the lifetime dietary biographies …

Homemade For Change: Addressing The Barriers To Home Cooking Among Emerging Adults For Better Health, Finances, And Well-Being, Sarida Smitthimedhin
Masters Theses
This study investigates how a visual approach—combining design, photography, and illustration with nutrition—can encourage home cooking. In today’s fast-paced society and overabundance food culture, many emerging adults struggle to prepare meals at home. This study examines how food industry practices and cultural trends shape the eating habits of emerging adults by exploring the reasons behind the decline in home cooking and its adverse effects on health, finances, well-being, and the environment.
Although research indicates that most adults recognize that home cooking is the healthiest choice, they often do not practice it, citing time and lack of cooking knowledge as their …

How The Intake Of Pulses May Impact Metabolic Disorders And Dementia Risk: A Narrative Review, Lisa Michelle Belzer Salinas, Maricarmen Marroquin, Mariana Mendez, Isabel Omaña-Guzmán, Juan Carlos López-Alvarenga
Health & Biomedical Sciences Faculty Publications
We present a narrative review focusing on pulses’ geographical origin and distribution, their impact on human evolution and history, and their influence on human health. Pulses, including dry peas, beans, and lentils, are renowned for their richness in chemical antioxidants. Despite containing antinutrients, processing techniques preserve their health advantages. Epidemiological research has consistently demonstrated that the consumption of pulses is associated with favorable effects on metabolism. This evidence is further supported by molecular and clinical research, which has elucidated potential nutrigenomic mechanisms and effects on gut microbiota composition underlying their health benefits. However, the literature lacks randomized controlled clinical trials …

Reframing Fitness And Nutrition For Women: Understanding Hormonal And Metabolic Differences, Brooke J. Luecke
Reframing Fitness And Nutrition For Women: Understanding Hormonal And Metabolic Differences, Brooke J. Luecke
Accounting Undergraduate Honors Theses
This thesis explores how women can consider approaching fitness, nutrition, and recovery based on the physiological differences between men and women. While much of the existing fitness and nutrition research has been based on male participants generalized to women, this paper aims to woman-centric, tailored recommendations. By focusing on hormonal cycles, metabolism, and muscle physiology, my paper will suggest a need for women to adjust their exercise and dietary practices for optimal health outcomes, including fat loss and raised energy levels. My suggestions in this paper are supported by the latest research, including Dr. Stacy Sims' insights on female health, …
