Food is the primary transactional substance for Enewetak/Ujelang people [Republic of the Marshall Islands] and its production, preparation, consumption and exchange are central to how local people fashion and maintain social relationships and how they construct identities. At the same time, while the constitutive properties of food have remained culturally vigorous, the foods themselves have changed radically under colonialism. In particular, rehabilitation attempts in the post-nuclear testing era on Enewetak introduced extraordinary rapid dietary changes in the community and resulted in the onset of an epidemic of sedentary illnesses. Sweetness functions as a symbolic prop for human desire. My artwork questions the cost of this desire, troubling what can and should be consumed, while negotiating the environmental and social histories of human desire for sugar. This project generates a subjective history for the strange, perhaps unnatural, commodities that people desire, through which I aim to plant them more firmly into the natural world from which they have been separated by so much plastic, foil, and ornament.

Sushi presents an interesting dilemma when studying issues of global exchange and transmission. While sushi is historically Japanese, its spread from Japan to America pre-World War II with the wave of immigration began a rapid change in the cuisine that allowed it to adapt to American tastes and sensibilities. "It's The Resources": Work, Governance, And The Institutionalization Of An Emergency Food Network, Stephanie Crist

Thousands of loosely connected organizations such as food pantries and soup kitchens constitute the emergency food network. Organizations in this network provide a critical source of food to millions of households each year. This dissertation examines how organizations in one city-level emergency food network acquire, manage, and use resources. It pays particular attention to the relationships that develop between organizations and funding sources.

Utilizing institutional ethnography, this dissertation explicates the ways that everyday food provision in food pantries and soup kitchens is connected to a broader picture of changing modes of governance in the public and nonprofit sectors. The data …

Food is a universal medium through which identity is expressed. In cultures both past and present, food represents a direct way to communicate many aspects of identity such as ethnicity, nationality, status, age, and gender. The United States possesses a well intentioned but misguided lunch program, leaving children overfed but malnourished. Currently, a revolution is under way to transform programs around the country by incorporating locally grown and fresh ingredients, as well as integrating hands-on educational experiences with gardening and nutrition. The Claremont Unified School District (CUSD) makes up a group of schools that once heavily relied on unhealthy processed foods for providing lunch. Migrant and seasonal farmworkers play a critical role in the U.S. economy, producing food for the American public, while their suffering is often rendered invisible by their existence on the margins of society. The low wages associated with farm labor combined with the largely undocumented status of this population severely limits access to food, housing, and health care, resulting in poor health outcomes. Through the use of a critical anthropological approach, this research examines the social, cultural, political, and economic context of obesity among Latino migrant and seasonal farmworkers in Central Florida. Child malnutrition remains a significant problem worldwide with children under two years of age at particular risk. Even mild to moderate child undernutrition in food insecure households has been associated with poor growth, increased rates of infection and poor development. Rural Honduras undergoes a rainy and a dry season each year. Households rely on subsistence agriculture and as the dry season progresses, they have fewer food reserves and limited cash resources. Foods of high fat content, such as peanut butter and ground beef, can be of particular interest to food microbiologists due to their role in harboring microorganisms that lead to spoilage and/or foodborne illnesses. In previous studies on raw poultry rendering materials, Glenn (2006) determined standard phosphate buffer serial dilutions produced erratic microbial enumeration results. As the material contained high fat, it was
hypothesized that the immiscibility of fat in the aqueous buffer caused the errors. This could occur by fat globules entrapping microorganisms in foods. Upon serial dilution with aqueous buffers, the fat globules may not be evenly dispersed …

Food Insecurity As A Barrier To Sustained Antiretroviral Therapy Adherence In Uganda, Sheri D. Weiser, David M. Tuller, Edward A. Frongillo Jr., Jude Senkungu, Nozmu Mukiibi, David R. Bangsberg

Background: Food insecurity is emerging as an important barrier to antiretroviral (ARV) adherence in sub-Saharan Africa and elsewhere, but little is known about the mechanisms through which food insecurity leads to ARV non-adherence and treatment interruptions.

Methodology: We conducted in-depth, open-ended interviews with 47 individuals (30 women, 17 men) living with HIV/ AIDS recruited from AIDS treatment programs in Mbarara and Kampala, Uganda to understand how food insecurity interferes with ARV therapy regimens. Interviews were transcribed, coded for key themes, and analyzed using grounded theory.

Findings: Food insecurity was common and an important barrier to accessing medical care and ARV …
