Today’s rapid advances in algorithmic processes are creating and generating predictions through common applications, including speech recognition, natural language (text) generation, search engine prediction, social media personalization, and product recommendations. These algorithmic processes rapidly sort through streams of computational calculations and personal digital footprints to predict, make decisions, translate, and attempt to mimic human cognitive function as closely as possible. This is known as machine learning.

While the formal school system has been the focus for researchers, practitioners and policy-makers for food and nutrition-related research and interventions, there has been less attention to the Alternative Education and Training (AET) sector. A qualitative social ecological examination of food issues among marginalised young people in Irish alternative education and training settings was conducted through interviews with 15 service providers. We aimed to provide insight into the everyday food practices of young people in AETs, understand educational responses to food and eating in AETs, and determine how these educational responses might be optimised. A 6-hr train-the-trainer workshop focused on introducing the concept that insects may play a significant role in food security as the world population is projected to exceed 9 billion people by the mid 21st century. Workshop topics including cultural, nutritional, culinary, and commercial aspects surrounding edible insects were presented and packaged into a formal curriculum for later use by the participants. A 12-item sensory evaluation of insect-fortified foods provided participants a tangible experience with product palatability. By the end of the workshop, participants had increased various dimensions of their knowledge about edible insects and reported a generally positive perception toward …

Switching from a meat-heavy to a plant-based diet is one of the highest-impact lifestyle changes for climate mitigation and adaptation. However, conventional demand-side energy policy has focused on increasing consumption of efficient machines and fuels. Regulating food demand has key advantages. First, food consumption is biologically constrained, thus switching to more efficient foods avoids unintended consequences of switching to more efficient machines, like higher overall energy consumption. Second, food consumption, like smoking, is primed for normshifting because it occurs in socially conspicuous environments. The lesser scaup Aythya affinis has been a species of conservation concern since continental breeding populations began declining in the 1980s. The causes of this decline are likely multifaceted, but cross-seasonal effects are believed to play a prominent role: females unable to acquire sufficient nutrient reserves during winter and spring migration have poor survival and breeding success. Understanding scaup diet composition and prey selection can help managers not only diagnose mechanisms underlying wintering scaup distributions, but may also help direct management actions to increase forage availability and quality. Over the past two decades there had been a significant shift in American values around food and health. The increase of diet-related illness and the growing awareness of the local food movement have helped to shape the discourse on healthy, nutritious, sustainably grown food. Food justice advocates and organization have inserted social justice principals of equity and self-determination into the dialogue of health and food. Obesity is a critical health and social concern. Almost 40% of American adults are obese, creating more than $300 billion dollars in annual medical costs. While obesity is a public concern that has been on the policy agenda for some time, obesity policies have proven difficult to formulate, adopt and implement in practice. The notion of addiction pervades Western vernacular. While firmly established in the substance and drug literature, the concept of addiction is now increasingly associated with other ingested substances (coffee, chocolate, highly processed foods) and a range of compulsive behaviors (gambling, sex, online social networking, gaming). Addiction is associated with substantial morbidity and mortality, and a greater understanding of its etiology has significant public health implications. The physiological mechanisms thought to contribute to the development and maintenance of addiction (tolerance, withdrawal, and, possibly, craving) are widely considered hallmark features and primary treatment targets, while psychological and contextual factors are often underappreciated …

Obesity-related diseases have been increasing in African immigrants throughout the United States. Although research has been done to identify risk factors associated with many ethnic groups in the United States, only a few studies exist that explore obesity and type 2 diabetes diseases among Central African immigrants. The conceptual framework for this qualitative case study was social constructivism and the health belief model. The primary research question addressed the potential underlying causes for an increase in obesity and type 2 diabetes among Central African Immigrants. Despite existing knowledge about lifestyle choices and their relationships to obesity and diabetes, the prevalence of Type 2 Diabetes Mellitus (T2DM) is increasing, and the number of Americans at risk is greater than 70% (CDC, 2019). Domesticated in 8000–10,000 BP in northern China, proso millet (Panicum miliaceum L.) is the best adaptive rotational crop for semiarid central High Plains of the USA, where average annual precipitation is 356–407 mm. Proso millet has multiple benefits when consumed as human food. Proso millet is rich in minerals, dietary fiber, polyphenols, vitamins and proteins. It is gluten-free and therefore, ideal for the gluten intolerant people. Proso millet contains high lecithin which supports the neural health system. It is rich in vitamins (niacin, B-complex vitamins, folic acid), minerals (P, Ca, Zn, Fe) and essential amino acids (methionine and cysteine). …

According to The Betoota Advocate (Parker), a CSIRO (Commonwealth Scientific and Industrial Research Organisation) paper has recently established that “it takes roughly seven minutes on average for a vegan to tell you that they’re vegan” (qtd. in Harrington et al. 135). For such a statement to have currency as a joke means that it is grounded in a shared experience of being vegan on the one hand, and of encountering vegans on the other. A curvilinear relationship exists between physical activity (PA) and dietary energy intake (EI), which is reduced in moderately active when compared to inactive and highly active individuals, but the impact of PA on eating patterns remains poorly understood. Our goal was to establish the relationship between PA and intake of foods with varying energy and nutrient density. Data from the 2009–2010 United States National Health and Nutrition Examination Survey were used to include a Dietary Screener Questionnaire for estimated intakes of added sugar, fruits and vegetables, whole grains, fiber, and dairy. Food is a recurrent theme in Italian American literature and authors have used it to highlight the importance of family, women, and the community at large and to teach about Italian customs to the U.S. public. Oftentimes, for the older Italian immigrants, food triggers fond memories of the Old country, while, for the younger generations, it might cause shame that leads to clashes with the older generations. Characters use food as a tool to express power and, later, status and to communicate. In this study, the effect of a multicomponent nutrition education program on dietary behaviors in elementary school-aged children was analyzed. Components involved were cooking, gardening, and general nutrition. Research questions were: 'Does nutrition education over a one-week program increase consumption of fruits and vegetables?', and 'Does nutrition education over a one-week program increase acceptance of novel foods?'. The hypothesis was: nutrition education administered in a one-week program will increase the consumption of fruits and vegetables, as well as increase willingness to try new foods. Data collection used repeated measures of two surveys: the Fruit-Vegetable-Fiber Screener and Food Neophobia Scale. Ten …

Thailand has often been referred to as “kitchen of the world” whose food industry represents over 20% of its gross domestic production (GDP). As part of this, Thailand’s seafood processing industry is now ranked fourth globally, contributing over US$6.5 billion to the economy. The researchers, therefore, set out to investigate the impact of consumers’ attitudes, product quality, value, branding, and product identity on five nationally recognized canned seafood product brands. Using systematic random sampling, 400 questionnaires were collected from consumers shopping at five Bangkok metropolitan area supermarkets. Providing calorie labeling is a widely used strategy to combat obesity. However, there is little evidence that the availability of calorie information at food-away-from-home establishments has an effect on food choices. Listing calorie information for each ingredient, though, may allow customers to avoid high-calorie items that add little to their enjoyment. Data from a natural experiment were used to compare total calories ordered before and after the provision of per-ingredient versus for build-your-own sandwiches, and per-sandwich for pre-defined sandwiches, at a supermarket sandwich counter. Sandwich order slips from a Lincoln, Neb. supermarket were collected from December 15, 2016 to February …
