The increased use of technology has lead to a decrease in physical activity engagement by elementary aged children, and children are often unaware of how a sedentary lifestyle increases the risk of childhood diseases and illnesses, such as obesity and diabetes. In order to increase understanding about the importance of physical activity, I designed a two-day curriculum on the benefits of physical activity and presented it to a class of third grade students at Natividad Elementary School in Salinas, California.

Even though there is legislation in place to implement Native American History in schools such as Senate Bill 48, there is room to improve. This senior capstone examines the importance of implementing Native American history in school curricula through the use of literature review, teachers interview and student surveys. The participants for the Capstone Project included 23 fifth-grade students in a public middle school on the Central Coast of California. This project focused on using a web-based art program called Canva to create infographics based on students’ knowledge and study of Ancient Egypt. This quality improvement project was created to help increase knowledge of the Emergency Severity Index (ESI) in the Emergency Department (ED), a form of triage used to categorize patients by their acuity. Proper ESI use shortens the length of stay times, door to provider times and reduces the number of patients that leave without being seen.

The goal of this project was to develop an online learning module that would increase the nurses’ knowledge of triage to enhance triage accuracy. Nineteen (19) emergency department nurses were given a pretest, an ESI educational presentation, and a follow-up post-test.

The case studies presented herein provide a glimpse into the professional learning lives of two elementary school teachers of emergent bilingual students in order to gain a greater understanding of how professional learning links to instructional practices. There is a shortage of Science, Technology, Engineering, and Mathematics (STEM) teachers in the US (Aragon, 2016; National Science Board, 2003). Hispanics are underrepresented in STEM teaching (Aragon, 2016; Texas Education Agency, 2017; US Census Bureau, 2016b; US Department of Education, n.d.). In order to improve the state of STEM teaching in the US we must tap into this underrepresented group. This project investigated whether adding subtitles to educational videos increases learning among middle school students. A convenience sample (N=387) of Technology and Engineering middle school students were separated into two groups during the third term of both the 2018 and 2019 school years, where one group of students viewed videos with subtitles and the other group viewed the identical videos without subtitles. After viewing the videos, students immediately took a multiple-choice test. The test scores were used to analyze the variance between the two different groups. Nearly 12.3% of American households are food insecure. In Cache County, Utah, specifically, the rates of food insecurity are even higher (15%). Addressing the issue of food insecurity improves physical/mental health outcomes, childhood cognitive/physical development, family environments, and decreases healthcare costs. Evidence-based strategies to improve food security include increasing one’s access to fresh fruits and vegetables and improving self-efficacy. Community gardens are recognized as an initiative that improve participant’s levels of food security. Michigan’s Food, Agriculture, and Resources in Motion (FARM) Science Lab is a 40-foot mobile classroom outfitted with 10 learning stations including scientific equipment and iPads. This quasi-experimental study analyzed preexisting data provided by Michigan Agriculture in the Classroom to evaluate the effectiveness of the FARM Science Lab mobile classroom as a method of teaching agriculture-themed, standards-based lessons to third- through fifth-grade students in order to increase their understanding of agriculture. Due to trauma from fleeing their countries of origin, limited school experiences, and language barriers, refugee students struggle with demonstrating progress in academic achievement. In this document I discuss the relationship between education standards for curriculum and structured play in the elementary classroom. I discuss the various forms of teacher-initiated structured play, and student-initiated informal play and resistance strategies - through participant observation, digital analysis, spatial analysis, semi-structured ethnographic interviews, and unstructured conversations - to understand the full range of learning strategies in elementary classroom settings.
