The purpose of this phenomenological study is to describe the lived experiences of advanced age individuals 62 years and older who chose to return to academia and pursue doctoral studies in accredited doctoral programs in the United States. Nearly 12.3% of American households are food insecure. In Cache County, Utah, specifically, the rates of food insecurity are even higher (15%). Addressing the issue of food insecurity improves physical/mental health outcomes, childhood cognitive/physical development, family environments, and decreases healthcare costs. Evidence-based strategies to improve food security include increasing one’s access to fresh fruits and vegetables and improving self-efficacy. Community gardens are recognized as an initiative that improve participant’s levels of food security. Michigan’s Food, Agriculture, and Resources in Motion (FARM) Science Lab is a 40-foot mobile classroom outfitted with 10 learning stations including scientific equipment and iPads. This quasi-experimental study analyzed preexisting data provided by Michigan Agriculture in the Classroom to evaluate the effectiveness of the FARM Science Lab mobile classroom as a method of teaching agriculture-themed, standards-based lessons to third- through fifth-grade students in order to increase their understanding of agriculture. From January through June 2018, more than 1,258 students participated in these lessons and completed the pretest and posttest and 72 teachers completed the post survey. The dissertation attempts to address the disparity seen in all transplant centers today, the low number of African-American end-stage renal disease(ESRD) patients pursing kidney transplant as renal replacement therapy. Currently, there are two renal replacement options, dialysis or a kidney transplant. Research has shown that kidney transplant provides the best health care outcomes in terms of quality of life and decrease mortality. While African-Americans carry the burden of the disease by being four times more likely to have ESRD they only represent 1/3 of the kidney transplants done in the United States. Nurses are most directly involved with patient care and are in an excellent position to be patient educators. Patients are more likely to actively listen after establishing rapport, especially for loaded topics such as lifestyle choices. While nurses have general nutrition knowledge, they may lack current, scientifically-based information to help patients implement a healthy diet. Background: Increased intakes of ready-made and fast foods paralleled with decreased homemade food consumption have been associated with increased rates of obesity. Researchers have shown associations between cooking self-efficacy (SE) and cooking frequency (CF) with dietary quality and weight status. Some cooking interventions have shown positive associations with dietary outcomes, such as increased fruit and vegetable intake and decreased fast food consumption. There is still much unknown about SE and CF, especially among youth.

Implementation Of Lgbt+ Health Education For Master’S Entry Nursing Students, Daniel R. Mead

Background: There is a paucity of evidence linking Lesbian, Gay, Bisexual, and Transgender (LGBT+) health education with improvement in nursing students’ knowledge, attitudes, and comfort of LGBT+ health considerations.

Methods: In a pre- and post-test study design, a total of 77 master’s entry to nursing practice students completed the LGBT+ health educational module during the Community Health Nursing course.

Results: Statistically significant results were found between pre-test to post-test data for knowledge (p < .001, Cohen’s d 2.52), attitudes (p < .001, Cohen’s d 0.35), and comfort (p = .001, Cohen’s d 0.31) of LGBT+ health considerations.

While the formal school system has been the focus for researchers, practitioners and policy-makers for food and nutrition-related research and interventions, there has been less attention to the Alternative Education and Training (AET) sector. A qualitative social ecological examination of food issues among marginalised young people in Irish alternative education and training settings was conducted through interviews with 15 service providers. Gaps In Safe Food Handling Practices Of Older Adults, Lelee Yap, Sarah L. Francis, Mack C. Shelley Ii, Doris Montgomery, Catherine J. Lillehoj

We identified gaps in safe food handling practices that may be placing older adults at increased risk of food-borne illness. A convenience sample of 1,019 older adults completed the Food Safety Behavior Questionnaire. Majority groups among participants were those who were female, those who were White, and those who were widowed. Participants had lower adherences to safe practices related to temperature control, attention to sell-by/use-by dates on food packages, and cross-contamination. Adherences were significantly (p < .05) influenced by gender, race/ethnicity, age, marital status, and education. Our findings suggest the need for older adult–focused safe food handling education related to temperature control, product selection practices, and cross-contamination.

Chapter 1 studies the effect of body weight on labor market outcomes. Using longitudinal data from the China Health and Nutrition Survey (CHNS) from 1989 to 2011, and both instrumental variable and fixed effects estimation to control for the endogeneity of body weight, I examine the wage effect of BMI by gender, type of residence area, and occupation. Results from linear OLS regression show a positive relationship between body weight and income for males in both rural and urban areas and females in rural areas, while a negative one for females in urban areas. This quantitative study focused on mathematical professional development for high-poverty elementary schools in Tennessee. The purpose of this study was to determine if there was a significant difference in teacher perspective regarding three research-based categories: teacher preparation, teacher beliefs, and instructional practices. Each of the categories was viewed through teachers years of experience, school achievement, and school poverty level. For the purposes of this study, school poverty level was partitioned into three groups. Data analysis revealed a statistically significant difference in teacher beliefs and instructional practices between the second and third highest poverty levels.

Service-learning is an experiential process of action and reflection that allows students to expand their knowledge through real-world activities that benefit others. Service-learning opportunities for baccalaureate nursing students in Kenya have provided many ongoing examples of learning from our Kenyan collaborators. Receiving ministry from those we came to serve, allows allows us, in turn, to demonstrate Christ’s humility. Purpose: This study aims to (a) examine elementary school students' health-related fitness knowledge growth under one curriculum condition and (b) examine the impacts of student/school-level factors on health-related fitness knowledge and its growth rate in physical education. Method: We used an observational, longitudinal repeated-measures design, and conducted analyses on an existing dataset. Participants were 7,479 third, fourth, and fifth graders (48.9% girls) from 152 elementary schools. Measures were a knowledge test and sex at the student level, and socioeconomic data, academic performance, and student–faculty ratio at the school level.
