This study explores the perceptions of mothers (working and stay-at-home) about their role in the emotional development of their children in early years (4-6 years). It also explores the impeding factors in mother-child interaction during the emotional development in early years of the children. The qualitative design was used to explore the effects of stay-at-home and working mothers‟ interaction on their children‟s early year (focusing 4-6 years) emotional growth and development. Through a purposive sampling, four participants (two working and two stay-at-home mothers) were selected whose children were 4-6 years of age and were enrolled in Kindergarten I and II. …

High stakes standardized testing is a tool that the business model reformers use to dismantle democracy while creating an environment where a democratic society will not thrive. Much of the current research on global and local food insecurity – particularly among poor urban populations – strongly suggests that the impacts of industrial agriculture and the American fast food culture has been detrimental to both urban and rural populations, and to small farmers. Food insecurity and unequal access to healthy and affordable food are critical issues in the metropolis. In response to these concerns, there has been a great deal of mobilization around the concept of local and regional food systems. Poverty in the US is growing at an alarming rate. The current economic climate demands higher education to embrace the economic diversity of all students and to prepare them, regardless of economic class, for a globally competitive workplace. Unfortunately, the higher education community is not as adept at serving low-income students, as it is middle- and upper- income students. Low-income students are less likely than their more affluent peers to enroll in college or graduate. Employing qualitative narrative methods, this dissertation explores the factors that contributed to the persistence and success of 18, low-income, community college students. This study addresses …

A working definition of a concept known as ‘food literacy’ encompasses using basic food preparation knowledge that has been learned, understood, and practiced to make better food decisions. To advance these skills for client service, a post-secondary nutrition program would need to include objectives that allow application of knowledge. For this reason, the purpose of this study was to determine the difference in knowledge and application among students in 100, 200 and 400 level college nutrition course(s). Economic Status, Education And Risky Sexual Behavior For Urban Botswana Women, Kakanyo Fani Dintwa

This study investigated the relationship between economic status, education and risky sexual behavior for urban Botswana women. The data used are a nationally representative sample from the Botswana AIDS Impact Survey conducted in 2004. An un-weighted sample of 2215 women aged 15-49, who have had sexual intercourse was considered for analysis. Both bivariate and multivariate analyses are used to gain insights into the potential linkages between economic status, education and risky sexual behavior. The bivariate analysis shows that there is a significant relationship between dependent variable (number of sexual partners) and economic status. However, with the introduction of controls the …

Reauthorization of the Head Start Act in 2007 called for new standards of quality education and evidenced-based practices for gathering child outcomes and assessment data. Furthermore, the act stipulates partnerships between public education K-12 and preschools; a relationship that traditionally held its distance due to age eligibility. With the recent acquisition of the Race to the Top Early Learning Challenge grant, Washington state is now recognized for its leadership in this field. There is little doubt that education has a major effect on economic growth. Studies have traditionally used years of schooling (a quantitative variable) to measure education, but there has a shift towards using qualitative measures of education when trying to test the relationship between education and growth. In fact, there is strong evidence that the quality of education is much more important for economic growth than the quantity of education. It is important for every educated member of our society to be able to read, comprehend, and interpret graphs. To that end, the National Council of Teachers of Mathematics (NCTM) and the Common Core State Standards have endorsed a kindergarten through eighth-grade mathematics curriculum that is rich in data analysis and graphical literacy skills. These skills are important, as graphs in the public sphere may include certain features that can cause misperceptions of the data. Women of color, especially Black women, are underrepresented in the extant literature and research of adult development and mind, body, spirit leadership. This in-depth qualitative portraiture study explored the lives of three Black women who have been leading their communities as adult educators of mind, body, spirit practices. A topic of interest that is growing in the general population is the idea of being sustainable, or “green”, and there is a rising awareness in sustainable practices involving food and the environment. Some of the “green” eating behaviors identified through my research included eating a plant-based (i.e. vegetarian or semi-vegetarian) diet, eating locally grown foods, eating organically grown foods, and eating foods that are labeled fair-trade. The purpose of the study was to explore the impact of the Baby Boomer Generation on the future services provided by Senior Centers in Northwest Arkansas, specifically in Benton, Madison, and Washington counties. The study was a mixed methods design utilizing both qualitative and quantitative methods. Three research groups were used: Nine Senior Center Directors, which were interviewed; one focus group composed of four Baby Boomers; and a print survey distributed to ninety-two Baby Boomers. The data revealed that changes are needed in the program and services in Senior Centers to attract the Baby Boomer Generation. Changes will need to …

Overall, pretest-posttest results for achievement, behavior, and engagement for at-risk boys not eligible (n = 13) and eligible ( n = 9) for participation in the free or reduced price lunch program who completed a school-year long academic support study center program were not statistically different over time and end of school year for cumulative grade point average scores, pre-ACT scores for English, math, reading, science, and composite, total credits earned, and participation in school sponsored activities. However, at-risk boys eligible for participation in the free or reduced price lunch program had statistically significantly lower total posttest office referral …

Each year approximately 73,000 refugees are resettled into the United States because it is unsafe for them to return to their country of origin. Resettlement agencies help refugees learn about their new environment and provide assistance with housing, food, English classes, and job skills training. The goal of resettlement programs is to help refugees become self-sufficient as quickly as possible.
Recently resettled refugees face many challenges that make it difficult to eat healthy food. Transportation, English skills, and conflicting work hours are some of the barriers to receiving nutrition education. This research evaluated the integration of nutrition lessons into English …

Recently, childhood overweight and obesity has reached epidemic proportions. The diseases associated with adult obesity are now being seen in the pediatric population; therefore, there is a call for preventative efforts. This study was done to determine how the perception of gender roles developed throughout childhood and early adulthood affected the career decisions of women who showed early promise in science. In addition, this study was done to determine if my experiences as a researcher would have any impact on me personally. Four women were chosen as case study participants, providing for comparison within and across cases.

Food neophobia, the fear of new foods, has been identified as a significant barrier to the intake of healthy foods, including fruits and vegetables in young children. Food neophobia can hinder dietary quality as well as dietary variety by limiting the development of food preferences. It has also been suggested that neophobia is linked to the development of childhood obesity, and due to the escalating epidemic of childhood obesity that is known to be associated with serious health complications, interventions that target food neophobia in preschool aged children may be successful in improving healthy eating habits and potentially reversing the …

Objectives:
(1) To research effective methods for creating computer-assisted instruction for development of counseling skills
(2) Incorporate acquired knowledge into nutrition counseling modules for undergraduate dietetic students to provide increased practice working with real life situations
Intervention: Five modules were created for undergraduate students to better develop their nutrition counseling skills. The modules give students a way to practice counseling theories, methods, and techniques while working with virtual patients in a controlled environment. Research was conducted to assist development of the modules both technically and with content.

The objective of this research was to determine the breastfeeding initiation rate among healthy, term infants at a select hospital, the effect of one-on-one breastfeeding education, in addition to written material on breastfeeding initiation rates in the hospital setting, and if other factors from available data are associated with differences in breastfeeding initiation. This was a quasi-experimental convenience sample study with subjects assigned to a control group (written education) or intervention group (written and one-on-one education).
