Fuel for Fun: Cooking with Kids Plus Parents and Play is an integrated research, extension, education project targeting 4th-grade students. Its long-term goal of reducing the risk of childhood obesity will be addressed by promoting healthful food and activity environments, policies and behaviors through: 1) evaluating the efficacy of a 4th grade comprehensive school-based intervention, 2) designing, implementing, and evaluating a family-based intervention, 3) applying it to an after-school setting to broaden its reach, and, 4) disseminating both versions through outreach

Introduction: Parkinson’s disease (PD) is a chronic progressive movement disorder, affecting primarily people over sixty years of age. With aging populations, some estimates indicate as many as nine million people will be impacted by this disease by 2030. Thus it is imperative to identify means of prevention, delay of onset, and management of symptoms. Many elements of diet and nutrition have been investigated to accomplish these goals. This review will examine recent studies of potential diet and nutrition factors and PD incidence.

Background: The goals of the study were (1) to determine the impact of inorganic mercury exposure on glucose homeostasis; and (2) to evaluate the effectiveness of two community-based interventions in promoting dietary changes among American Indian college students to reduce risk factors for Type-2 Diabetes including fasting glucose, insulin, and mercury levels, weight, and body mass index.

Metabolic bone disease is a frequent co-morbidity in newly diagnosed adults with celiac disease (CD), an autoimmune disorder triggered by the ingestion of dietary gluten. This systematic review of studies looked at the efficacy of the gluten-free diet, physical activity, nutrient supplementation, and bisphosphonates for low bone density treatment. Case control and cohort designs were identified from PubMed and other academic databases (from 1996 to 2015) that observed newly diagnosed adults with CD for at least one year after diet treatment using the dual-energy x-ray absorptiometry (DXA) scan. Only 20 out of 207 studies met the inclusion criteria. Methodological quality …

Lipid accumulation in liver and skeletal muscle contributes to co-morbidities associated with diabetes and obesity. We made a transgenic mouse in which the adiponectin (Adipoq) promoter drives expression of lipoprotein lipase (LPL) in adipocytes to potentially increase adipose tissue lipid storage. These mice (Adipoq-LPL) have improved glucose and insulin tolerance as well as increased energy expenditure when challenged with a high fat diet (HFD). To identify the mechanism(s) involved, we determined whether the Adipoq-LPL mice diverted dietary lipid to adipose tissue to reduce peripheral lipotoxicity, but we found no evidence for this. Objective: The purpose of this study was to explore the differences in diet and exercise patterns in sorority women from campuses with different Greek Life structures. The goal was to determine if the centralization of the sorority through the presence of a chapter sorority house altered these health behaviors for any of the women.
Methods: A cross-sectional study design was used to gather data from sorority members at two northeastern universities during October of 2014. Background: Cognitive decline in older adults is a public health problem and prior research shows that higher levels of physical activity and dietary factors are associated with higher cognitive function. However, it is unclear how an exercise and diet intervention affects cognitive function in obese older women.
Purpose: To examine the effect of a combined Tai Chi (TC), resistance training (RT), and diet intervention on cognitive function and to evaluate the relationship between cognitive function and physical function in older obese women.

Alzheimer’s disease (AD) is the most common type of dementia in the elderly, accounting for 60 to 80% of all dementia cases. It affects 5.2 million Americans and 44 million worldwide. This project examines the association between dietary patterns, erythrocyte membrane fatty acids concentration, and AD-related genes in systemic inflammation as indicated by serum C-reactive protein (CRP). All studies performed in this project used the data collected in the Cache County Memory Study (CCMS).

Stable isotope analysis has provided insights into the trophic ecology of a wide diversity of animals. Knowledge about isotopic incorporation rates and isotopic discrimination between the consumer and its diet for different tissue types is essential for interpreting stable isotope data, but these parameters remain understudied in many animal taxa and particularly in aquatic invertebrates. We performed a 292-day diet shift experiment on 92 individuals of the predatory mantis shrimp, Neogonodactylus bredini, to quantify carbon and nitrogen incorporation rates and isotope discrimination factors in muscle and hemolymph tissues. Marine reserves have become increasingly valuable tools with which to manage ecosystems. These reserves consistently restore populations of top predators, often reducing availability of their favored prey. We hypothesized that such prey reduction in reserves causes protected predators to alter their attack behavior to include less palatable prey, potentially amplifying top-down effects on community structure. To test this hypothesis, we presented the relatively unpalatable sea hare Aplysia californica to freely foraging spiny lobsters Panulirus interruptus in 4 marine no-take reserves, each paired with an adjacent fished area. Despite their low cost and high nutrient density, the contribution of eggs to nutrient intake and dietary quality among Mexican-American postpartum women has not been evaluated. Nutrient intake and dietary quality, as assessed by the Healthy Eating Index 2010 (HEI-2010), were measured in habitually sedentary overweight/obese (body mass index (BMI) = 29.7 ± 3.5 kg/m2) Mexican-American postpartum women (28 ± 6 years) and compared between egg consumers (n = 82; any egg intake reported in at least one of three 24-h dietary recalls) and non-consumers (n = 57). The consumption of a high protein diet (>4 g/kg/d) in trained men and women who did not alter their exercise program has been previously shown to have no significant effect on body composition. Background: Physical fitness is imperative for the Army Reserves Officers’ Training Corps (ROTC) cadets to be commissioned for active duty. This project compared the standard anthropometric assessment of ROTC cadets using tape measurement to body composition measurements using Air Displacement Plethysmography (ADP) from the Bod Pod and the seven- site Pollock Skin Fold Thickness (SFM) measurement. These results were compared to the norms established by the Army Physical Fitness Test (APFT), recommending to improve ROTC body measurement method.

Despite increased interest in promoting nutrition during pregnancy, the association between maternal dietary patterns and birth outcomes has been equivocal. We examined maternal dietary patterns during pregnancy as a determinant of offspring’s birth weight-for-length (WLZ), weight-for-age (WAZ), length-for-age (LAZ), and head circumference (HCZ) Z-scores in Southern United States (n = 1151). Maternal diet during pregnancy was assessed by seven dietary patterns. Multivariable linear regression models described the association of WLZ, WAZ, LAZ, and HCZ with diet patterns controlling for other maternal and child characteristics. Background/Objective: Advancing knowledge about energy balance (EB) is important for helping to reverse the obesity epidemic in many modern societies. This study examined adolescents' experience and perception of using an objective self-monitoring tool (SenseWear armband; SWA) and a portable diet journal to track EB for 7 days.
Methods: Forty-five 6th grade students in a midwestern state of the United States [Caucasian: n = 34, 76%; age: 11.7 ± 1.8 years; body mass index (BMI): 20.84 ± 3.94] participated in the study. Most health decision-making models posit that deciding to engage in a health behavior involves forming a behavioral intention which then leads to actual behavior. However, behavioral intentions and actual behavior may not be functionally equivalent. Two studies examined whether decision-making factors predicting dietary behaviors were the same as or distinct from those predicting intentions. Actual dietary behavior was proximally predicted by affective associations with the behavior. By contrast, behavioral intentions were predicted by cognitive beliefs about behaviors, with no contribution of affective associations. This dissociation has implications for understanding individual regulation of health behaviors and for behavior change interventions.

The ornate box turtle (Terrapene ornata) is a prairie-dwelling species that has experienced population declines, especially near the northern edge of its range. In order to provide supporting research for a reintroduction program at the Upper Mississippi River National Wildlife and Fish Refuge in northwestern Illinois, I compared the relative success of different approaches to reintroduction. Phytoestrogens are plant compounds that possess estrogenic and biological properties that have been postulated to protect against chronic diseases. Isoflavonoids and lignans are two main classes of phytoestrogen that have been investigated for their estrogenic efficacy and occurrence in the human diet. Isoflavonoids are found in soy and related products, whereas lignans are found in a wider range of plant-based foods, such as cereals, vegetables, fruits, legumes, nuts and seeds; and in beverages such as tea, coffee and wine. Between 2005 and 2009, archaeologists excavated more than 100 skeletons from the medieval (1240s AD) Hungarian site of Solt-Tételhegy. Stable carbon and nitrogen isotope analyses were conducted on dental enamel and dentin from 24 individuals to examine their childhood diet. Although previous stable isotopic research has described the diet of medieval European peoples, this is the first such study on a medieval Hungarian population. The enamel ?13C values range from -14.4‰ to -8.6‰, with a mean of -11.1‰, while the dentin ?13C values range from -19.4‰ to -14.9‰, with an average of -17.4‰. Food supply has been suggested as the main determinant of reproductive success in birds. Riparian species can take advantage of seasonal pulses of both terrestrial and aquatic prey, though aquatic resources are often overlooked in studies of diet and reproductive ecology. This study investigates the flux of both aquatic (mayfly) and terrestrial (caterpillar) prey resources and nestling diet of the Prothonotary Warbler throughout the breeding season in two eastern Virginia sites. One site had significantly higher aquatic prey (mayfly) availability. Nestling diet was generally reflective of prey availability, and nestlings grew faster at the site with high aquatic prey availability. …

Type 2 diabetes mellitus, or T2DM, is a leading cause of preventable death in the United States. Multiple studies have found that certain dietary patterns can significantly influence the risk of T2DM. The purpose of this study was to understand the dietary patterns associated with diabetes by comparing the relative adherence to these dietary patterns by individuals in 5 stages of diabetes: no diabetes, undiagnosed prediabetes, diagnosed prediabetes, undiagnosed diabetes, and diagnosed diabetes. The association between intrauterine growth restriction (IUGR) and hypertension is well established, yet the interaction between IUGR and other pathogenic contributors remains ill-defined. This study examined the independent and interactive effects of fetal growth reduction resulting in low birth weight (LBW), and postnatal Western diet (WD) on vascular function. Growth reduction was induced in pregnant guinea pigs by uterine artery ablation. LBW and normal birth weight (NBW) offspring were randomly assigned to a control diet (CD) or a WD.
