[Objective] This study aims to investigate the effects of three extraction methods - alkaline extraction, enzymatic extraction, and acid extraction - on the properties of corn fiber gum (CFG)-pea protein composite gels. [Methods] CFG was extracted from corn bran using the three methods. The gel strength, water-holding capacity, rheological properties, and microstructure of the CFG-pea protein composite gels are evaluated. [Results] The CFG extracted by enzymatic extraction increases the gel strength of pea protein gels from (27.20±2.45) g to (65.80±2.67) g, and the water-holding capacity from (40.60±3.40)% to (75.80±5.10)%. Rice bran oil is a unique natural edible oil with healthy benefits and a reasonable fatty acid composition. Containing natural antioxidant components including phytosterols, oryzanol, tocotrienols, and squalene, rice bran oil is characterized by high nutritional value, diverse physiological functions, and excellent frying performance, thus demonstrating broad application potential. This study reviews the research advances in the bioactive components, physiological functions, factors influencing oxidative stability, and antioxidant technologies of rice bran oil, while providing prospects for future development.

Vegetable pickling is a time-honored food preservation and processing method, in which salt (primarily sodium chloride) plays an irreplaceable and core role. This paper systematically reviews the multidimensional effects of curing salt on vegetable quality. It comprehensively covers preservation mechanisms, textural transformations, the formation and conversion of flavor compounds, color stability, and nutritional value changes. Specifically, this article analyzes the decisive role of salt concentration gradients in final product characteristics. Furthermore, it examines the challenges posed by the low salinity, including microbial safety risks, textural deterioration, and flavor imbalances, while proposing corresponding strategies.

The present study tested the predictive validity of the Basic Evaluation Process framework by examining whether Fear and Anger emerge as competing emotional attractors during threat appraisal. Using a mouse-tracking paradigm with audio recording, fifty participants reasoned aloud about a self-selected threatening situation while continuously rating their Fear and Anger. Cross-correlation analysis confirmed dynamic dependence between Fear and Anger, although the coupling was positive rather than negative, indicating co-activation rather than mutual suppression. Vector field analysis identified stable attractor structures for all participants, but the distribution of primary attractors across the Fear by Anger state space did not reveal a …

[Objective] To develop a shrimp freshness indicator film with good amine responsiveness and stability for the rapid and non-destructive detection of shrimp quality changes. [Methods] Using sodium carboxymethyl cellulose and starch as film-forming substrates, indicator films were prepared with grape seed proanthocyanidins, curcumin, and their mixtures as indicators. The responses of the three indicator films to aqueous solution pH and trimethylamine were compared. The detection sensitivity and storage stability of the mixed indicator film were further evaluated. [Objective] Using Dunaliella spp. powder as the raw material, to explore the effect of pH value, alkali dissolution temperature, alkali dissolution time, and solid-liquid ratio on Dunaliella spp. protein extraction. [Methods] The optimal conditions are screened by single-factor experiments. Response surface experiments are designed by the Box-Behnken method to determine the optimal extraction process parameters for Dunaliella spp. protein with the Dunaliella spp. protein extraction rate as the indicator. Coral reefs are increasingly threatened by marine heatwaves, disease outbreaks, and other anthropogenic stressors, leading to widespread declines in coral cover worldwide. As a result, efforts are increasingly focused on identifying thermally tolerant corals for reef restoration. However, it remains unclear whether thermal tolerance is maintained following transplantation and whether thermally tolerant corals perform differently in novel environments. This dissertation examined thermal tolerance, survivorship, symbiont communities, and growth in two dominant Hawaiian reef-building corals, Montipora capitata and Porites compressa, using a reciprocal transplant experiment between Kāneʻohe Bay and Ulupaʻu, Oʻahu. COVID-19 and its ripple effects (e.g., social distancing, sport cancellations, quarantining) negatively affected the careers of collegiate student-athletes. The disruption to university systems and collegiate athletics and the stress and uncertainty felt globally likely increased international student-athletes' (ISAs) risk for distress. Yet, ISAs also possessed unique characteristics and were immersed within supportive sport environments, which may have shaped their psychological responses in distinct ways. The COVID-19 pandemic created an opportunity to understand how ISAs, as individuals navigating both athletic and international identities, responded and coped. The expansion of digital technologies has not only transformed media production and consumption but also reshaped the cognitive conditions through which individuals interpret information. Drawing on W. James Potter’s (2004) cognitive model of media literacy, this study explores how cognitive dimensions of media literacy relate to digital inequalities among adults. To operationalize the model, index variables were developed for its four subdimensions, knowledge structures, personal locus, competencies, and skills, using multiple theoretically defined item domains. GrandFamilies: The Contemporary Journal of Research, Practice and Policy

Kinship caregivers caring for children often lack access to services and supports they need to stabilize their families. Other kinship navigator programs have been shown to improve child permanency, child safety, child wellbeing, and adult wellbeing. This study evaluated Kinnections, a kinship navigator program provided by Wayfinder Family Services, operating since 2007 in seven counties in Northern California. Using propensity score matching, 116 kinship caregivers receiving Kinnections services were matched with 116 kinship caregivers in neighboring counties with no kinship navigator services available. The matched sample showed strong baseline equivalence on key caregiver, child, and household factors. Findings showed …

GrandFamilies: The Contemporary Journal of Research, Practice and Policy

This ethnographic study explores the caregiving experiences of grandparents in northern Vietnam who are raising grandchildren impacted by HIV/AIDS. Specifically, what is the process of skipped-generation caregiving in families affected by HIV/AIDS in Vietnam? Data were collected between 2009 and 2011 through participant observation and in-depth interviews with 26 grandparent caregivers and eight key informants. Informed by the Caregiving Career framework as a sensitizing concept and using constructivist grounded theory analytic strategies, the study identifies four interconnected caregiving phases shaped by cultural expectations, stigma, and intergenerational disruption. Grandparents often unexpectedly assume the role of caregiver with little support. Supporting these caregivers is critical for their health and well-being and that of their grandchildren. This study examines how family-like relationships formed during the GC+ intervention, increasing social support and resilience among grandparent caregivers. Four grandmothers, raising a total of five grandsons, participated in a focus group six months post-intervention. Grandmothers were asked to share their opinions and thoughts regarding the intervention. Using the Convoy Model and Resilience Theory, researchers conducted a deductive content analysis of participants’ perspectives on close family-like relationships cultivated during the intervention. South Florida hosts a number of non-native wildlife species, including African monkeys. This study examined wild vervet monkeys (Chlorocebus sabaeus) in Dania Beach, Florida, to determine whether aircraft-related atmospheric noise affected their threat detection capabilities and behavioral responses. Using predator-call playbacks and focal scan samples, behavioral data was recorded across pre-, during-, and post-playback phases. Behaviors were labeled as nonvigilant or vigilant. The study also assessed whether responses differed between the local and novel predator calls as well as whether repeated trials suggested habituation over the course of the experiment. Developing three-dimensional (3D) skin models provides a physiologically relevant platform to investigate the dynamic interactions between the skin microbiome and immune cells in chronic wounds, offering insights into delayed healing, persistent inflammation, and microbial dysbiosis. Traditional in vitro models fail to replicate the complex architecture of human skin and its immune-microbiome crosstalk, motivating the development of biomimetic systems that incorporate stratified epidermal layers, dermal fibroblasts, and innate immune components such as macrophages and neutrophils. Engineered 3D skin constructs inoculated with wound-associated microbiota, including Staphylococcus aureus, Pseudomonas aeruginosa, and Cutibacterium acnes, can reveal how biofilm formation, quorum sensing, …
