“He’S Got The Whole World In His Hands”: Seed Sovereignty And Agricultural Decision Making In Southeastern Kenya, Caroline Stahley
USF Tampa Graduate Theses and Dissertations
Increasing corporate control of the global seed supply and restrictions to local exchange threaten the autonomy of smallholder farmers and Indigenous communities. This project contributes to agricultural sovereignty movements by examining the decisions farmers make to address climate uncertainty, market volatility, and development agendas. Specifically, how is seed saving practiced and understood in relation to sovereignty? It reimagines what global food systems might look like if investment were directed to producers rather than intermediaries, arguing that cultivators lack support, not knowledge or capacity. Across these domains, seeds act as a motif to describe the concerns, innovations, and visions of farmers.

Adults with intellectual disability (ID) are living longer and increasingly outlive family caregivers. Strengthening independent living and vocational skills has therefore become a critical public-health priority. Occupational therapy (OT) can address this need through person-centered, community-based programming. This paper describes the co-design, delivery, and preliminary outcomes of a short occupation-based curriculum intended to enhance autonomy and work readiness in aging adults with ID. In partnership with a Dallas, Texas nonprofit, the authors conducted a needs assessment and created an 8-session course rooted in the Independent Living Model and the Occupational Competence Model. Neurological disorders in captive wild felids presents diagnostic and therapeutic challenges, particularly in juveniles animals maintained under suboptimal nutritional transitions. This case report describes the synergistic effects of dietary deficiencies and a concurrent hemoparasitic infection in a seven-month-old male African lion cub (Panthera leo) weighing 30 kg, housed at Audu Bako Zoological Garden in Kano, Nigeria. Following premature weaning onto an unsupplemented muscle-meat diet, the cub exhibited progressive neurological symptoms, including ataxia, hindlimb paresis, star-gazing, and opisthotonos. Hematological analysis revealed a mild normocytic, normochromic anemia (packed cell volume; 23%) and the presence of erythrocytes rouleaux formation, while Giemsa-stained …

Infant birth weight is the foundation for childhood and adult health outcomes, and health, according to the Urban Institute, is an important predictor of upward social mobility. Prior studies have found that infants with low birth weight are susceptible to a host of physical, cognitive, and social deficiencies that can adversely impact the ability to achieve upward mobility. The current study utilizes the Urban Institute's Mobility Metrics to explore low infant birth rates among the 11 counties that comprise the Metro Atlanta area. Breaking Bread And Barriers: Interprofessional Strategies To Improve Mental And Nutritional Health In Family Caregivers, Candy Ratliff

Family caregivers provide essential unpaid support to individuals with chronic illness, disability, dementia, and age-related decline; however, caregiving responsibilities often place caregivers at increased risk for psychological, physical, nutritional, and social challenges. This literature review examines the mental health and nutritional implications of family caregiving and explores barriers that contribute to declining caregiver wellness. Findings reveal elevated rates of depression, anxiety, emotional exhaustion, social isolation, food insecurity, sleep disturbances, financial strain, and chronic stress among caregivers. The literature further highlights the interconnected relationship between mental health, nutrition, and overall quality of life. An Inseverable Link To The Outside: Describing Shifting Food Consumption Patterns And Predicting Food Dysregulation During Covid Lockdown, Andrew F. Baird, Andria D. Timmer, Morgan E. Miller

This study examines how COVID-19 lockdown shaped household food practices and contributed to food dysregulation, defined as anxiety, stress, indecisiveness or impulsivity surrounding diet. We conducted a mixed-methods community survey of Newport News, Virginia (n ≈ 400), administered shortly after the March–May 2020 lockdown. Open-ended responses revealed widespread disruption of food routines, with participants describing heightened anxiety about shopping, increased meal planning, stress-related snacking, and difficulties maintaining healthy diets. These qualitative themes were systematically mapped to survey items, yielding a composite Food Dysregulation Index and predictors spanning life circumstances, income strain, and food-related behaviors. Adverse childhood experiences (ACEs) are early-life deviations from expected environments that contribute to adverse health, social, and behavioral outcomes. Fundamental cause theory and Marxist theory link these outcomes to structural inequality, while life course theory and cumulative disadvantage theory highlight compounded long-term disparities. Bronfenbrenner’s ecological systems theory integrates these perspectives across multiple levels and their interactionary relationships. Using 2021-2023 NHANES data, we grouped ACE proxies into SES and health categories to measure influence on biology. Ginseng, as a medicinal and edible plant, has ginsenosides as its core active components, which are widely applied due to their physiological functions such as antioxidant and anti-inflammatory activities; however, their structures and activities are easily affected by food processing. [Objective] To investigate the effect of processing methods on Polygonatum kingianum Collett & Hemsl.metabolites, to reveal the regulatory pattern of processing methods on the metabolites, and to clarify the characteristic metabolites enriched by various processing methods.[Methods] Metabolites of P.kingianum samples processed via boiling (BP), roller processing (HP), and traditional processing (JZ) are analyzed using ultra-high performance liquid chromatography-tandem mass spectrometry (UPLC-MS/MS) based on widely targeted metabolomics. [Objective] To control the gel property and warmed -over flavor formation of hairtail surimi products.[Methods] Surimi gel is prepared using hairtail as the raw material. Then, by examining changes in sensory evaluation, microstructure, gel property,moisture content, and volatile flavor substances, this study investigates the effects of yeast extract addition and reheating methods on gel property and warmed-over flavor formation in hairtail surimi products.[Results] Yeast extract addition significantly promotes internal structural cross-linking and reduces the number of pores in the product, thereby enhancing the gel properties, including gel strength, hardness, and elasticity.
