Proceedings of the Arkansas Nutrition Conference

Reduced crude protein (CP) diets can lower nitrogen excretion and improve litter quality, but their effectiveness varies depending on the grain type, with wheat-based diets often showing poorer broiler performance compared to maize or sorghum. The digestive dynamics and synchrony between NBAA and protein-bound amino acids, along with starch-to-protein ratios, influence feed efficiency and fat deposition, which remains a challenge in reduced CP diets. Optimizing amino acid supplementation and exploring alternative protein-rich ingredients may help improve outcomes, especially in regions with limited access to soybean meal.

Background: Although short-term outcomes of Long COVID have been described, longer-term physical and mental health outcomes of Long COVID are less well-established. This study sought to assess differences in long-term physical and mental health outcomes extending up to three years among those with current, resolved, and no Long COVID, as well as duration of Long COVID and vaccination status. Methods: This was a prospective, multisite, study of participants with SARS-CoV-2 infection from 12/7/2020-8/29/2022, with data collected through 4/2/2024. The intentional use of biological control agents to manage arthropod pests dates back to as early as 304 AD, when Chinese farmers used weaver ants to manage citrus pests. Over time, biological control has evolved into distinct approaches: classical, augmentation, and conservation. Prior to the advent of pesticides, most insect pest management relied on natural and classical biological control. Exploration of nutritious, cheap, and easy-to-prepare locally available complementary foods using different processing techniques is gaining traction globally. This study evaluated the impact of three processing techniques (roasting, germination, and fermentation) on finger millet and amaranth quality. The implications of blending processed products with 10% cricket flour on the functional properties, microbial safety, and shelf life of the porridge products were tested. Thereafter, consumer preference and acceptability of the cooked porridge products were assessed with randomly enrolled panelist of mothers (20–66 years), as primary caregivers. Morphometric analysis plays a crucial role in the accurate identification and classification of insect pests, which is essential for implementing effective management strategies. The Asian citrus psyllid (Diaphorina citri Kuwayama; Hemiptera: Liviidae), an invasive species and a known vector of ‘Candidatus Liberibacter asiaticus’ and ‘Ca. Preptin, a 34-amino-acid peptide derived from proinsulin-like growth factor II, has emerged as a promising therapeutic candidate for both Type 2 diabetes mellitus and osteoporosis. Its dual functionality—stimulating insulin secretion without inducing hypoglycemia and promoting osteoblast proliferation—positions it as a unique alternative to traditional sulfonylureas and osteogenic agents. In this study, we developed a purification protocol for green fluorescent-preptin fusion proteins. This study aimed to examine the relationship between nutritional intake and reproductive health outcomes among women of reproductive age, as well as to assess their knowledge and challenges related to healthy eating. Using a cross-sectional survey design, data were collected from 50 women at a community health center and analyzed using SPSS to generate descriptive statistics and explore patterns through chi-square and regression analyses. Prevalence Of Hypertension Among Low-Income Individuals In Muscogee County Columbus, Georgia, Amelia K. Fallah

This study investigates the prevalence and predictors of elevated blood pressure (BP) among 409 low-income adults in Muscogee County, Columbus, Georgia—a population disproportionately burdened by hypertension. The findings reveal that elevated BP is significantly more prevalent among African Americans (71.4%) compared to non-African Americans (27.1%), highlighting the role of racial disparities influenced by systemic inequities, healthcare access, and chronic stress. Gender differences were modest, with females exhibiting a slightly higher prevalence (77.9%) than males (76.7%), potentially due to age-related hormonal changes post-menopause. BACKGROUND: Levothyroxine is a commonly prescribed medication for treatment of hypothyroidism in the United States. This drug is titrated based on weight and serial laboratory evaluation and is often very well tolerated with few adverse effects. Levothyroxine-associated liver injury and cholestatic disease are regarded as rare phenomena. We report an additional case of levothyroxine-associated hepatic dysfunction with resolution upon decreased dosage and continued tolerance of the medication.

Background: Moral distress, burnout, and compassion fatigue in acute care nurses has increased significantly since the Covid-19 pandemic and has been associated with high levels of nursing turnover and increased costs to healthcare systems. Nursing engagement scores were low at the study organization in the areas of leadership support and well-being investment in nurses.

Background: Celiac disease (CD) is projected to be the most common genetic autoimmune disease in the world with 1% or 3 million people effected in the United States. It is estimated that as many as 70% of those effected are not aware. The time for race consciousness is over, and the era of enforced colorblindness is upon us. The dawn of this new age is troubling because it closes the door on effective strategies to achieve racial justice, including efforts to grant federal reparations. This Article analyzes the areas in which courts have invalidated race-conscious measures, with a particular focus on recent racial equity efforts by the Biden Administration. Rather than treating the loss of race consciousness exclusively as a loss to the movement for equality, this Article argues for a silver-lining approach. Nutritional problems among children under five remain a major public health challenge. This research seeks to create a spatially oriented system for evaluating and mapping nutritional status utilizing Artificial Neural Network (ANN) and Random Forest (RF) algorithms. Data obtained from the Sumenep District Health Office included age, weight, height, and gender variables. Both models were trained using a 70:30 data ratio and evaluated with accuracy, precision, recall, and F1-score metrics. The ANN model achieved an accuracy of 95.8%, while the RF model reached 97.7%. Rice production is a key indicator of food security and agricultural stability in Southeast Asia, especially among Association of Southeast Asian Nations (ASEAN) countries. Despite shared regional goals, disparities in rice production remain, and previous studies mainly rely on descriptive statistics, lacking structured multicriteria decision-making frameworks and computational tools for cross-country comparisons. This study addresses these gaps by proposing an integrated Analytic Hierarchy Process (AHP)–Python framework to evaluate and rank ASEAN rice production from 2013 to 2022. The objective of this study was to evaluate the feedlot performance, rumination activity, and carcass characteristics of high moisture ear corn (HMEC) as a roughage source in finishing diets fed to beef steers. Backgrounded steers (n = 191; initial shrunk weight [4% BW] = 449 kg  23.9 kg) were assigned randomly to 1 of 24 pens (8 steers/pen) with pens randomly assigned to one of four dietary treatments (6 pens/treatment): control diet with hay fed at 10% roughage equivalency (RE; HAY10), or HMEC at either 14% (EAR14), 10% (EAR10), or 6% (EAR6) RE. The overall objective of this thesis is to determine the influence of finishing location and forage diversity on carcass characteristics, meat quality, terroir, and color stability of grass-finished bison bulls. The specific objectives were 1) Determine the effect of finishing location on carcass characteristics, meat quality attributes, and terroir of grass-finished bison bulls, 2) Investigate the effect of forage diversity on the carcass characteristics, meat quality attributes, and terroir of grass-finished bison bulls, and 3) Determine the effect of finishing location on the meat color stability of grass-finished bison bulls.
