Abstract

Insufficient fiber intake is a key contributor to diet-related chronic diseases (DRCD) such as obesity, hypertension, and diabetes. This evidence-based health promotion program evaluated integrating a teaching kitchen with the Full Plate Living Plan (FPL-TK) to increase daily fiber intake. Grounded in the Social Cognitive Theory, the 8-week employee health promotion program included hands-on culinary demonstrations, a structured FPL nutrition curriculum, and fiber tracking tools to help participants engage and participate in weekly health and wellness changes. The program successfully achieved high engagement rates, with 80% of participants reporting high satisfaction with the program and 100% of participants stating …

Thelephorales fungi are considered important ectomycorrhizal fungi (EMF) in forest ecosystems, yet the patterns of diversity and distribution and the processes that shape them remain poorly understood. This study aims to address this research gap by conducting an exploratory analysis of Thelephorales fungi in soil and litter across various habitat types and environmental characteristics. To do so, we used data collected and synthesized by the Climush project, a multi-year, systematic sampling of macrofungal diversity across North America, that aims to assess sexual (sporocarp and spore trap data) and asexual (soil and endophyte metabarcode data) diversity and distribution in relation to …

The Power Of Community In Inspiring And Pushing Youth Into Higher Education As A Means Of Improvement, Laurine Faro Jan 2024

The Power Of Community In Inspiring And Pushing Youth Into Higher Education As A Means Of Improvement, Laurine Faro

Community Engagement Student Work

This research highlighted family and community members’ role in supporting student success in Higher Education. I analyzed four cases/organizations/communities that had been effective in their efforts to support student success. I conducted a meta-analysis of organizations that had programs in place to drive student success. Lack of support from parents, teachers, schools and neighborhoods all seemed to contribute to a lack of belief in student success both at the personal level and the community level. In the neighborhoods studied, inadequate academic preparation and stability, and the lack of a support system often persisted into young adulthood, making the opportunities for …

Food Accessibility Struggles For College Students With Dietary Restrictions, Ella Schleuning Jan 2024

Food Accessibility Struggles For College Students With Dietary Restrictions, Ella Schleuning

Mahurin Honors College Capstone Experience/Thesis Projects

College is a time when many students experience independence for the first time in their lives. This is the first time they have had to do their laundry on their own, keep their room clean, and maybe most importantly, they are responsible for figuring out where they are going to eat every day, for every meal. The focus of this study is on food accessibility struggles for college students, specifically looking at Western Kentucky University’s (WKU) food on-campus, as well as students with dietary restrictions.

Since college is the first-time students are responsible for their own meals, it can often …

Medical Authority And The Right To Life, B. Jessie Hill Jan 2024

Medical Authority And The Right To Life, B. Jessie Hill

Faculty Publications

This essay briefly explores this relationship between the understandings—existing and potential—of the right to “life” and the role of medical authority in constitutional abortion rights litigation. It proceeds as follows. Part I describes the dichotomy between two different understandings of “life” in U.S. legal discourse, with a particular focus on cases dealing with the so-called “right to die.” Part II then explains why this dichotomy is relevant in the post-Dobbs abortion rights context, as it holds the promise of an alternate path to protection for abortion rights at the federal and state levels. Part II also discusses how and why …

Household Water Conservation For The Upper Colorado River Basin, Lauren Ott Jan 2024

Household Water Conservation For The Upper Colorado River Basin, Lauren Ott

Regis University Student Publications (comprehensive collection)

Fresh, clean, potable water is the most important natural resource to sustain human life. Concern over the continued, equitable and affordable access to such water is therefore top of mind. Calls for climate change mitigation practices, improved natural resource management, and enhanced attention to water conservation have therefore become increasingly prevalent. These water conservation practices require population-wide political, attitudinal and behavioral shifts and it will be especially impactful for wealthy nations and wealthy people to be mindful of instituting these changes in their own spaces.

In this project, I conduct a literature review to investigate current challenges surrounding water from …

Increasing Participation Of Rural Youth In Agriculture In Iganga District, Eastern Uganda, Joseph Kayongo Jan 2024

Increasing Participation Of Rural Youth In Agriculture In Iganga District, Eastern Uganda, Joseph Kayongo

Regis University Student Publications (comprehensive collection)

According to the 2024 population census, Uganda’s population is comprised of a high and increasing cohort of young people, over 70 percent of the population is below the age of thirty. Evidence reveals that youth engagement in agriculture is declining amidst rising youth unemployment. This may have implications on food security, unemployment, and underemployment and may undermine the government efforts to drive economic growth through agriculture. This capstone provides insights into the determinants of youth participation in agriculture, challenges and constraints inherent to the youth in agricultural production, in Iganga district, Eastern Uganda.

The findings reveal that young farmers are …

Imaging Markers Of Microstructural Development In Neonatal Brains And The Impact Of Postnatal Pathologies, Pratheek Sai Bobba

Yale Medicine Thesis Digital Library

Rapid changes in diffusion properties and white matter microstructural integrity in neonatal brains complicates the interpretation of advanced MRI techniques such as diffusion weighted (DWI) and diffusion tensor imaging (DTI). Thus, the goal of this work is to characterize age-related normative diffusion patterns in neonates and determine the impacts of postnatal growth trajectory, delivery method, and hypoxic ischemia on neonatal brain diffusion metrics. From a large cohort of neonates who had received brain MRI within 3 months of birth between January 2013 and March 2021, the following cohorts were identified for individual analyses: a cohort of neonates with no neurological …

Hb 1844- Free Breakfast And Lunch Programs In Tennessee, Cora Sm Williams, Bailee M. Walker, Lynn D. Fawcett

[Archive] Belmont University Research Symposium (BURS)

In 2022, more than 13 million children went to school hungry in the United States. According to the USDA, 1 in 5 children do not know where their next meal is coming from (Child Hunger in America, n.d.). In Tennessee, this number is 1 in 4 (Hance, 2020). Far too many students come from households where they may not have access to regular, nutritious meals. Hunger can significantly impact a child's ability to learn and thrive in school. By providing free breakfast and lunch, schools can ensure that students have access to essential nutrition, which can improve their academic performance …
