The COVID-19 pandemic of 2020 created a public health crisis that led to an unprecedented number of school closures. A major concern raised by child advocates, law enforcement, and social service providers was the possible increase in undetected child abuse and maltreatment. Undergirding this concern was the belief that this mitigation effort might place child abuse victims and offenders within proximity for extended periods of time. While this was a significant concern, it has rarely been analyzed empirically. The years surrounding the transition to menopause are marked by multiple challenges to health. Hot flashes are a commonly reported symptom of women at this time and their frequency has been associated with disease risk. Regular physical activity and reduced sedentary time are recommended for health and wellbeing. However, the effect of physical activity and sedentary behavior on hot flashes remains unclear. Herbal-based fermented beverages are popular non-dairy products among consumers who seek healthy and immunity-supporting products. Amongst commonly used health supplements that are added to food and beverage would be probiotics, commonly Saccharomyces cerevisiae or yeast. This study aims to determine the physico-chemical properties of fermented beverages at different fermentation periods using lemongrass (Cymbopogon citratus DC. Stapf), ginger (Zingiber officinale Rosc.), turmeric (Curcuma longa L.), mint (Mentha), and moringa (Moringa oleifera Lam.). This study revealed a significant decrease (p ≤ 0.05) in pH, total soluble solids, and density in most fermented beverages after 24, 36 and 48 hours of fermentation. Low …

The cooling effect of different vented packaging designs was investigated for packed muskmelons fruits in a commercial cold storage condition. Computational fluid dynamics (CFD) simulation and experiments were used. The airflow pattern, heat transfer and temperature profiles were predicted from simulation and analysed. The CFD results reveal an uneven and low efficient airflow distribution inside a commercially used vented packaging (Box A). This resulted slow cooling of the fruits in Box A. This study aimed to assess the impact of various vinegar compositions used as pre-treatment for Pacific Yellowtail Emperor (PYE) fillets during the oven-drying process, with a focus on moisture content and optimal drying conditions. Two types of commercially available vinegar, Superior Vinegar and Datu Puti Vinegar, were compared, and different drying temperatures were evaluated. The investigation revealed that the drying temperature significantly influenced the moisture content of the dried PYE fillets. Abstract. Bioactive compounds from plant derived in food application become increasingly in demand due to natural and nutritionally safe products. Due to some issues concerning food safety on the excessive use of synthetic preservatives; the present study aims to investigate the natural alternatives to synthetic antimicrobial food additives. Tropical marine fish is a main raw material for surimi processing plants, including golden threadfin bream (Nemipterus virgatus Houttuyn, 1782) and swallowtail dwarf monocle bream (Parascolopsis eriomma Jordan & Richardson, 1909). After processing, more than 60% of fish are considered as byproducts (i.e., head, viscera, skin, bones, fins and scale), and tend to discard due to poor-utilization. The larval stage of the darkling beetle, Tenebrio molitor, often referred to as the yellow mealworm, has received significant attention as a promising source of high-quality protein for human consumption due to its exceptional nutritional profile. This study focused on assessing the antioxidant and antimicrobial activities of protein concentrates and hydrolysates obtained from mealworm specimens raised under distinct dietary conditions. This study investigates the release behaviour of Butterfly Pea (BP) anthocyanins from Sago starch micro-composite (SMC) films in the presence of food stimulants. To comprehensively describe the release profiles of BP from SMC, six well-established kinetic release models were employed which includes Korsmeyer-Peppas, zero-order, first-order, second-order, Higuchi, and Hixson-Crowell models. These models played a crucial role in examining how the release fraction changes over time, facilitating a comprehensive understanding of the release kinetics of BP anthocyanins. Traditional Bruneian delicacy which are often reserved for special occasions; called the kelupis Sulang made from glutinous rice, coconut milk, and the flesh of the Brunei Sulang fruit’s protein content were studied. The protein content of both kelupis and the sulang fruit were examined using both qualitative and protein concentration analyses. The analysis was performed using the Xanthoproteic test, Ninhydrin test, Sulphur Reduction test, and the Biuret test. Borneo hosts exceptional plant diversity, including numerous endemic species, but faces significant threats from rapid habitat loss driven by deforestation and land-use changes. This study aimed to analyze research trends and forecast future directions through a bibliometric analysis of Scopus data spanning from 1914 to 2023. The bibliometric analysis included publication outputs, citation patterns, thematic mapping, and keyword co-occurrence. We used VOSviewer to visualize bibliometric networks and the Bibliometrix package in R to perform advanced bibliometric analysis and interactive data exploration. การวิจัยนี้มีวัตถุประสงค์เพื่อประเมินผลการอภิบาลระบบสุขภาพปฐมภูมิของโรงพยาบาลส่งเสริมสุขภาพตำบลที่ได้รับการถ่ายโอนไปสู่องค์การบริหารส่วนจังหวัดในปีงบประมาณ 2566 ผลแห่งการทบทวนวรรณกรรมทำให้เกิดกรอบแนวคิดการวิจัยโดยการผสมผสานตัวแบบอภิบาลขององค์การอนามัยโลกกับตัวแบบระบบสุขภาพปฐมภูมิของไทยประกอบกัน ในด้านระเบียบวิธีวิจัย คณะวิจัยได้เลือกใช้วิธีวิจัยเชิงคุณภาพแบบสำรวจและอธิบายเรื่องราวที่เกิดขึ้น (Exploratory with Descriptive Case Study) ผลการวิจัยพบว่า การอภิบาลระบบสุขภาพปฐมภูมิของไทยยังอยู่ในฐานะเริ่มต้น กลไกต่าง ๆ ยังมีลักษณะเป็นเพียงรูปแบบมากกว่าแก่นแท้ที่เป็นสาระสำคัญ ซึ่งมีความจำเป็นต้องปรับปรุงให้ดีขึ้นทั้งในระดับพื้นที่ ระดับจังหวัด และระดับชาติ

การวิจัยเรื่อง “จากจอบสู่จาน: เชฟส์ เทเบิล การกินอย่างมีหลักการ และภูมิทัศน์อาหารไทย” มีวัตถุประสงค์เพื่อ (1) ศึกษาการกินอย่างมีหลักการและรูปแบบภูมิทัศน์อาหารไทย (2) ศึกษาแนวทางการเพิ่มมูลค่าทางเศรษฐกิจการกินอย่างมีหลักการ และ (3) เพื่อนำเสนอแนวทางการพัฒนาการกินอย่างมีหลักการสู่การเพิ่มมูลค่าทางเศรษฐกิจ กลุ่มตัวอย่าง คือ เชฟที่มีชื่อเสียง ซึ่งเป็นเจ้าของร้านอาหารที่ให้บริการประเภทเชฟส์ เทเบิล และหรือเป็นผู้ที่มีการนำหลักเรื่องการกินอย่างมีหลักการมาใช้เป็นแนวทางปฏิบัติ จำนวน 5 คน วิธีการวิจัยใช้การสังเกตการณ์แบบมีส่วนร่วม และการสัมภาษณ์กลุ่มบุคคลสำคัญ  ผลการวิจัย พบว่า (1) จริยธรรมด้านอาหารเป็นเรื่องเกี่ยวกับการเลือกที่เราเชื่อว่าดีและถูกต้องเกี่ยวกับอาหารที่เรากิน เชฟและผู้ร่วมงานสร้างสรรค์เมนูบนพื้นฐานของการคิดถึงห่วงโซ่อุปทานของระบบอาหารยั่งยืนที่สัมพันธ์ไปกับท้องถิ่น วัฒนธรรมและฤดูกาล (2) เมนูสร้างสรรค์ สัมพันธ์กับเรื่องราวของเชฟ ที่มาของวัตถุดิบ วิธีการปรุง วิธีปฏิบัติการเสิร์ฟอาหารและการจับคู่กับเครื่องดื่ม เป็นแนวทางการเพิ่มมูลค่าทางเศรษฐกิจการกินอย่างมีหลักการภายใต้ระบบเศรษฐกิจสร้างสรรค์ที่สามารถสร้างรายได้ให้กับธุรกิจอาหารและวิสาหกิจรายย่อย ควบคู่ไปกับการเชิดชูคุณค่าของวัฒนธรรมอาหารท้องถิ่น (3) การใช้ภูมิทัศน์อาหาร รวมถึงยกระดับอาหารท้องถิ่นมาสู่เมนูสร้างสรรค์ในร้าน เป็นแนวทางการพัฒนาการกินอย่างมีหลักการที่สามารถสร้างงานในชุมชนท้องถิ่นผ่านการผลิต/จัดหาวัตถุดิบ/แรงงานจากละแวกท้องถิ่น การศึกษาเน้นย้ำว่า การกินอย่างมีหลักการไม่เพียงแต่เป็นปฏิบัติการทางอาหารเท่านั้น แต่ยังเป็นตัวเร่งการเติบโตทางเศรษฐกิจและการพัฒนาชุมชนภายในภูมิทัศน์อาหารไทย และยังแสดงให้เห็นว่า สามารถทำหน้าที่เป็นกรอบในการศึกษาวัฒนธรรมอาหารร่วมสมัยในมิติทางสังคมวิทยาและมานุษยวิทยาต่อไปได้อีกด้วย

Virtual Villages—online communities that deliver supports to promote aging in place—are proposed to mitigate isolation and support the health of aging populations. Using a community-engaged approach, we developed and pilot-tested a Virtual Village intervention tailored for people living with HIV (PLWH) aged 50+ . The intervention employed a Discord server featuring social interaction, regional and national resources, expert presentations, and mindful meditation exercises. In 2022, a sample of PLWH aged 50+ from three U.S. study sites participated in a four-week pilot. The shift work schedule is a common work arrangement that can disrupt typical sleep-wake rhythms and lead to negative health consequences. The present study aims to examine the effect of shift work on health-related quality of life (QoL) and explore potential behaviorial mediators (i.e., sleep, eating, exercise, smoking, drinking). A cross-sectional survey was conducted among 4,449 petroleum workers in southwest China. Data on shift work status, health behaviors, and physical and mental health QoL were collected. Introduction: Body image concerns among college students are a significant issue, often contributing to eating disorders as societal pressures intensify during young adulthood (Kapoor, 2022).
