Conversations From The Field: Stakeholders’ Perspectives On Inclusive Education In Western Kenya, Brent Elder, Benson Oswago, Michelle L. Damiani Dec 2022

Conversations From The Field: Stakeholders’ Perspectives On Inclusive Education In Western Kenya, Brent Elder, Benson Oswago, Michelle L. Damiani

College of Education Departmental Research

In this article, we critically examine issues related to disability inclusive education in the global South. Specifically, we discuss our work on inclusive education in western Kenya. We acknowledge how such practices are often framed within global North perspectives, and use methodologies and approaches from these same spaces and places. Such methodologies tend to be steered by powerful stakeholders and donors that may not always be sensitive to local contexts, concerns, and demands. In this article, we outline how we incorporate Critical Disability Studies (CDS) to address these concerns while working towards a bottom-up approach with multiple local stakeholders of …

An Evidenced-Based Project: Decreasing Fasting Glucose Levels Within Mississippi African Americans Through Accountability Groups, Whitley Linson Dec 2022

An Evidenced-Based Project: Decreasing Fasting Glucose Levels Within Mississippi African Americans Through Accountability Groups, Whitley Linson

Doctoral Projects

African Americans have the highest population with prediabetes diagnoses (Centers for Disease Control [CDC], 2020). In order to effectively address the lack of assistance needed to break health disparities related to prediabetes, it is crucial to understand why those barriers exist. Experts project that more than 470 million people will have prediabetes by 2030 (Tabak et al., 2012). Educating African Americans who have been previously diagnosed with prediabetes is vital in decreasing the stigma that surrounds communities in rural Central Mississippi. By maintaining accountability groups, fasting blood glucose can decrease and participants can increase their knowledge by understanding how to …

Effects Of Microbial Transglutaminase On Gluten-Free Sourdough Bread Structure And Loaf Characteristics, Anna J. Redd

Theses and Dissertations

In an effort to mimic the continuous protein matrix found in gluten-containing breads, the effects of the enzyme microbial transglutaminase were tested in gluten-free (GF) sourdough breads containing five different GF flours: chickpea, brown rice, white rice, oat, and quinoa. The utilization of transglutaminase in GF sourdough bread applications was shown to improve some of the final bread characteristics of GF breads. White and brown rice GF sourdough loaves at 24 hours showed a 28% and 13% decrease in crumb firmness with the addition of 2 U/g dough, respectively. Quinoa-GF sourdough breads at 24 hours showed a 6% increase in …

The Effects Of Poor Maternal Nutrition In Ewes On The Growth And Development Of Offspring, Zoey Weisman Dec 2022

The Effects Of Poor Maternal Nutrition In Ewes On The Growth And Development Of Offspring, Zoey Weisman

Honors Scholar Theses

Maternal nutrition is the diet that a mother intakes from before pregnancy through the end of lactation (Martin, 2018). Pregnant ruminants that are raised in pastures are frequently subject to undernutrition due to changes in the quantity and quality of available forage, which results in detrimental effects on the development of muscle and adipose tissues of offspring that can persist into adulthood (Hoffman, 2014). The quality of animal feed varies due to weather changes and climate fluctuations. Sheep usually gestate during the winter, as they are short-day breeders, and during this time, the forage consumed is limited and usually of …

Impacts Of The Poultry Industry In Mississippi, Sara Watts Dec 2022

Impacts Of The Poultry Industry In Mississippi, Sara Watts

Master's Theses

This thesis examines the impacts of the poultry industry in seven counties in the Piney Woods region of South Mississippi: Wayne, Jones, Forrest, Lamar, Jefferson Davis, Marion, and Pike. Current research indicates that the poultry industry has a significant impact on the cultures and economies of rural towns throughout the United States. There is no current research that examines the effects of the poultry industry on residents of the Piney Woods. This thesis addresses that gap in the research and contributes to current understanding of how the industry molds and impacts the lives of those intimately associated with it.

The Coptic Orthodox Church: The Balance Of Its Continuation Of Its 1st Century Roots And Its Adaptation To Modernity, Meri Souliman Dec 2022

The Coptic Orthodox Church: The Balance Of Its Continuation Of Its 1st Century Roots And Its Adaptation To Modernity, Meri Souliman

History Theses

This thesis analyzes the survival of the Coptic Orthodox Church and argues that the Church has effectively adapted to modernity. This survival and adaptation of this 1st century Church is argued for in the transformation and adaptation of language, the role of women, the practices of Coptic monasticism, and the creation of a new modern phenomena, the Coptic diasporic community, mainly though the example of the United States. The analyses presented are drawn from both primary and secondary sources that effectively ague for both the survival and adaptation of the Coptic Church. Finally, this thesis thus provides an institutional history …

Self-Efficacy, Knowledge, And Social Support On Self-Care Among Senior Korean Immigrants With Diabetes, Jung Eun Kim

Dissertations

Diabetes is a prevalent chronic disease that significantly affects morbidity and mortality among senior people. There are diverse ethnic populations in the United States, and Korean immigrants are one of the minority immigrant groups. Many senior Korean immigrants report language inadequacy, lack of social support, discrimination, anxiousness in an unfamiliar environment, and poor economic status. These barriers limit them from accessing adequate health care services and resources. Although self-care is the most important key part in managing diabetes, senior Korean immigrants with diabetes face challenges to perform effective self-care activities related to various barriers. However, studies about related factors on …

Transition Guide And Supports For Families Of Adolescents With Disabilities, Chelsey S. Traut Dec 2022

Transition Guide And Supports For Families Of Adolescents With Disabilities, Chelsey S. Traut

Dissertations, Theses, and Projects

Often when individuals with disabilities transitioned out of high school, there were a variety of repeated questions that teachers and administrators seemed to constantly be answering each year. The first goal of the project was to answer those questions and potentially serve as a resource for teachers and other professionals to answer the questions parents/guardians were asking them. Another goal was that even if the information was different for their district it could at the very least guide professionals and families in the right direction to find answers and support. The literature review provides information about parent/guardian and teacher collaboration …

Pseudo-Embryology And Personhood: How Embryological Pseudoscience Helps Structure The American Abortion Debate, Scott F. Gilbert Dec 2022

Pseudo-Embryology And Personhood: How Embryological Pseudoscience Helps Structure The American Abortion Debate, Scott F. Gilbert

Biology Faculty Works

There is a pseudo-embryology flourishing today, well nourished by popular science, religious ideologies, and the public media. Just as eugenics was a pseudoscience that influenced (and still influences) American popular culture and which was responsible for racist anti-immigration laws (such as the Immigration Restriction Act of 1924), pseudo-embryology is also influencing popular culture and legislation. This new pseudoscience promotes the belief that science supports current zygotic and fetal personhood movements as well as anti-abortion legislation. However, what often passes for science are actually ideological myths, often grounded in and supporting male superiority. Indeed, the first myth of pseudo-embryology is that …

Methods For Engineers To Understand, Predict, And Influence The Social Impacts Of Engineered Products, Phillip Douglas Stevenson Dec 2022

Methods For Engineers To Understand, Predict, And Influence The Social Impacts Of Engineered Products, Phillip Douglas Stevenson

Theses and Dissertations

Engineered products can impact the day-to-day life of their users and other stakeholders. These impacts are often referred to as the product's social impacts. Products have been known to impact the people who use them, design them, manufacture them, distribute them, and the communities where they exist. Currently, there are few methods that can help an engineer identify, quantify, predict, or improve a product's social impact. Some companies and organizations have tried to identify their impacts and, for example, set goals for achieving more sustainable business practices. However, engineers, in large part, do not have methods that can help improve …

Tobacco and alcohol use are heritable behaviours associated with 15% and 5.3% of worldwide deaths, respectively, due largely to broad increased risk for disease and injury1,2,3,4. These substances are used across the globe, yet genome-wide association studies have focused largely on individuals of European ancestries5. Here we leveraged global genetic diversity across 3.4 million individuals from four major clines of global ancestry (approximately 21% non-European) to power the discovery and fine-mapping of genomic loci associated with tobacco and alcohol use, to inform function of these loci via ancestry-aware transcriptome-wide association …
