Brand Image And "Other Customers": A New Approach To Fine Dining, Murat Hancer Jan 2021

Brand Image And "Other Customers": A New Approach To Fine Dining, Murat Hancer

Rosen Research Review

Dr. Murat Hancer, Professor at UCF Rosen College of Hospitality Management, and his collaborator investigate the relationship between brand image and customer satisfaction for fine dining establishments in a new study. Their findings will help restaurant companies to achieve overall commercial success, within a fiercely competitive industry, through tailored approaches to attracting new clients and establishing brand preference over rivals. The research reveals for the first time the significant effect of “other customers” on brand image, and how they can help to get diners through the door.

Diet Apps: Why Do We Use Them?, Bendegul Okumus, Ahmet Ozturk

Rosen Research Review

Many Americans enjoy dining out, but nutritional information is not always easily accessible or available in restaurants. Smartphone apps could be a convenient and innovative way to access nutritional information about restaurant products. UCF Rosen College of Hospitality Management researchers Dr. Bendegul Okumus and Dr. Ahmet Bulent Ozturk, investigated what psychological factors influence our intentions to use smartphone diet apps. Their research showed that social influence has the most significant influence on intentions to use diet apps, followed by several other important psychological factors. The findings of Dr. Okumus and Dr. Ozturk have practical implications to inform diet app development …

Kinesiology, Health and Sport Studies

BACKGROUND: Improving the academic achievement of youth in the U.S. has been an area of interest for many decades and has been a critical indicator of future success of youth. The purpose of this study was to examine the impact of a comprehensive school physical activity and healthy eating program on 5th grade students’ academic achievement, specifically reading and math. METHODS: In total, 628 (intervention: 377, 54% female; comparison: 251, 49% female) 5th grade children participated across the six schools in a yearlong comprehensive health intervention, completing curriculum-based academic achievement measures at two-time points. RESULTS: Results showed …

School-Based Wellness Programs: Educator Perceptions, Rocky C. Valentine Jan 2021

School-Based Wellness Programs: Educator Perceptions, Rocky C. Valentine

Dissertations

The utilization of workplace wellness programs in the field of education has become increasingly popular. Educators are receptive to school-based wellness programming to reduce stress, increase work engagement, and provide opportunities for health and wellness (Schultz et al., 2019). The purpose of this explanatory, sequential, mixedmethod study was to investigate certified educators’ perceptions of school-based wellness programs, wellness program components, and their impact on educator stress, burnout, and retention. An interpretivist theoretical framework was used to make sense of the meanings and understandings of the participants (Creswell & Creswell, 2018). Little research has been focused on the implementation and evaluation …

Lactic acid bacteria (LAB) inocula play a key role in the preservation and fermentation of forage crops within inoculated silages. LAB is a significant group of the bacterial community as they successfully reduce pH, inhibit the survival of undesirable microorganisms and control nutrient loss in fermented silage. Ensiled plants and metabolites such as simple plant carbohydrates have been utilized by LAB (homo-fermentative and hetero-fermentative LAB) to initiate the production of organic acids including lactic and acetic acids. LAB as a biological silage additive provides stable feed value and secondary metabolic products during rapid anaerobic primary silage fermentation. They are able …

Rates of child maltreatment are higher in low- and middle-income countries due to risk factors such as social inequities, economic adversity, and sociocultural norms. Given the evidence showing the effectiveness of parenting interventions to prevent child maltreatment, this study embarked on a cultural adaptation of an evidence-based parenting program with the eventual goal of integrating it within a nationwide conditional cash transfer program for low-income Filipino parents with children aged 2-6 years. We document the systematic adaptation of the Parenting for Lifelong Health for Young Children program that was developed and tested in South Africa, for low-resource Filipino families using …

The Mitochondrial Permeability Transition: Nexus Of Aging, Disease And Longevity., Hagai Rottenberg, Jan B. Hoek

Department of Pathology, Anatomy, and Cell Biology Faculty Papers

The activity of the mitochondrial permeability transition pore, mPTP, a highly regulated multi-component mega-channel, is enhanced in aging and in aging-driven degenerative diseases. mPTP activity accelerates aging by releasing large amounts of cell-damaging reactive oxygen species, Ca2+ and NAD+. The various pathways that control the channel activity, directly or indirectly, can therefore either inhibit or accelerate aging or retard or enhance the progression of aging-driven degenerative diseases and determine lifespan and healthspan. Autophagy, a catabolic process that removes and digests damaged proteins and organelles, protects the cell against aging and disease. However, the protective effect of autophagy …

The intensive use of groundwater in agriculture under the current climate conditions leads to acceleration of soil salinization. Given that almond is a salt-sensitive crop, selection of salt-tolerant rootstocks can help maintain productivity under salinity stress. Selection for tolerant rootstocks at an early growth stage can reduce the investment of time and resources. However, salinity-sensitive markers and salinity tolerance mechanisms of almond species to assist this selection process are largely unknown. We established a microscopy-based approach to investigate mechanisms of stress tolerance in and identified cellular, root anatomical, and molecular traits associated with rootstocks exhibiting salt tolerance. We characterized three …

Faculty, Staff and Students Publications

Background

The incidence of cardiovascular disease among pregnant women is rising in the United States. Data on racial disparities for the major cardiovascular events during pregnancy are limited.

Methods and Results

Pregnant and post‐partum women hospitalized from January 2007 to December 2017 were identified from the Nationwide Inpatient Sample. The outcomes of interest included: in‐hospital mortality, myocardial infarction, stroke, pulmonary embolism, and peripartum cardiomyopathy. Multivariate regression analysis was used to assess the independent association between race and in‐hospital outcomes. Among 46 700 637 pregnancy‐related hospitalizations, 21 663 575 (46.4%) were White, 6 302 089 (13.5%) were Black, and 8 914 …

Sufficient feeding is essential for animals' survival, which requires a cognitive capability to facilitate food seeking, but the neurobiological processes regulating food seeking are not fully understood. Here we show that stimulation of agouti-related peptide-expressing (AgRP) neurons triggers a long-term depression (LTD) of spontaneous excitatory post-synaptic current (sEPSC) in adjacent pro-opiomelanocortin (POMC) neurons and in most of their distant synaptic targets, including neurons in the paraventricular nucleus of the thalamus (PVT). The AgRP-induced sEPCS LTD can be enhanced by fasting but blunted by satiety signals, e.g. leptin and insulin. Mice subjected to food-seeking tasks develop similar neural plasticity in AgRP-innervated …

Examining The Children’S Defense Fund Freedom Schools Model On Middle School Students’ Reading Achievement, Lakia M. Scott, Rachel Renbarger, Yasmin Laird

Journal of Multicultural Affairs

In effort to curb summer learning loss, the Children’s Defense Fund Freedom Schools program identifies as a six-week summer literacy program for students in grades K-12. This study explored the impact of the Freedom School program on 128 middle school students’ reading achievement using Johns (2005) Basic Reading Inventory. Findings support the program’s effectiveness in increasing students’ reading outcomes, as demonstrated in the existent literature, but unlike other studies, data provided for both independent and instructional levels across three fluency indicators. In recognition of heightened state of summer learning loss for students with lack of access to quality enrichment summer …
