Effects Of Pumpkin Powder On Farinographic Properties And Dough Quality Of Wheat, Li Liang-Yi, Wu An-Qi, Tan Yu-Heng, Xie, Gui Xiang-Ru, Zhou Wen-Hua

Food and Machinery

Pumpkin powder and wheat flour were used to analyze the farinographic properties, gelatinization characteristics, crystal form and crystallinity of dough, water distribution and rheological characteristics of wheat powder by measuring different addition levels of pumpkin powder. The results showed that the stability time, tolerance index, bandwidth and gelatinization characteristics of the dough were significantly decreased with the increasing of the pumpkin powder content (P<0.01). The storage modulus and loss modulus first decreased and then increased, while the dough elasticity first increased and then decreased. The content of weakly bound water increased gradually. When the addition amounted to 15%, the crystallinity of starch in dough reached the maximum of 23.9%. In summary, appropriate addition of pumpkin powder could reduce gluten protein concentration, inhibit starch gelatinization characteristics, and improve dough elasticity, thereby could improve farinographic properties and quality characteristics.

Integrating Vibratory Membrane-Based Water Recovery Systems For Sustainable Food And Beverage Production, Michael Vincent O. Laurio May 2021

Integrating Vibratory Membrane-Based Water Recovery Systems For Sustainable Food And Beverage Production, Michael Vincent O. Laurio

Theses and Dissertations

A vibratory nanofiltration (NF) system was investigated for the preconcentration of coffee extracts for soluble coffee production. The simulated coffee extracts studied contained mostly suspended and colloidal organic components that, although were effectively rejected by the NF membrane (>99% turbidity rejection), affected the vibratory NF performance. The vibratory NF operation improved permeate flux, rejection efficiencies, and reduced flux decline from those observed in crossflow (CF) operation. Further, the effects of applied transmembrane pressure (TMP) and vibrational frequency (F) at corresponding displacement (d) were investigated and modeled. A semi-empirical resistance-in-series model was employed to characterize the mass transfer mechanism, osmotic …

Entitled To Property: Inheritance Laws, Female Bargaining Power, And Child Health In India, Plamen Nikolov, Shahadath Hossain

Economics Faculty Scholarship

Child height is a significant predictor of human capital and economic status throughout adulthood. Moreover, non-unitary household models of family behavior posit that an increase in women’s bargaining power can influence child health. We study the effects of an inheritance policy change, the Hindu Succession Act (HSA), which conferred enhanced inheritance rights to unmarried women in rural India, on child height. We find robust evidence that the HSA improved the height and weight of children. In addition, we find evidence consistent with a channel that the policy improved the women’s intrahousehold bargaining power within the household, leading to improved parental …

Roman L. Hruska U.S. Meat Animal Research Center: Reports

Feed accounts for as much as 70% of beef production costs, and improvement of the efficiency with which animals convert feed to product has the potential to have substantial financial impact on the beef industry. The rumen microbiome plays a key role in determining feed efficiency; however, previous studies of rumen microbiota have not focused on protozoal communities despite the estimation that these organisms represent approximately 50% of rumen content biomass. Protozoal communities participate in the regulation of bacterial populations and nitrogen cycling—key aspects of microbiome dynamics. The present study focused on identifying potential associations of protozoal community profiles with …

Terpenes are naturally occurring compounds produced by plants that are of great commercial interest in the food, agricultural, cosmetic, and pharmaceutical industries due to their broad spectra of antibacterial, antifungal, anthelmintic, membrane permeation enhancement, and antioxidant biological activities. Applications of terpenes are often limited by their volatility and the need for surfactants or alcohols to produce stable, soluble (non-precipitated) products. Yeast particles (YPs) are hollow, porous microspheres that have been used for the encapsulation of terpenes (YP terpenes) by passive diffusion of terpenes through the porous YP cell walls. We here report the development of a second generation YP encapsulated …
