Group: Samford University Moffett & Sanders School of Nursing
In Nashville, TN in 2018, the average for Hispanic pregnancies with GDM was approximately 6% (CDC, n.d.). Appropriate diet and physical activity are well documented methods for prevention, and also for managing GDM and its sequela (CDC, 2019). In Nashville, 58% of Hispanic mothers are unmarried, 49% have a high school education or less, and the ages ranged from 17 to 43 with the majority of women being 26 years old at time of delivery (CDC, n.d.). Out of the 1,641 births in Hispanic women between 2016-2018, half of them were enrolled in the Women, Infants, and Children (WIC) Program …
Covid-19: Engaging The Most Vulnerable, Hurriyet Babacan, Narayan Gopalkrishnan
Covid-19: Engaging The Most Vulnerable, Hurriyet Babacan, Narayan Gopalkrishnan
ASEAN Journal of Community Engagement
The COVID-19 pandemic has had large-scale global effects across all segments of society, affecting large and diverse population cohorts in many ways. COVID-19 is not just a global health emergency but also a health-driven socioeconomic disaster. The prevalence of socioeconomic stressors that existed prior to the pandemic is exacerbated by the effects of the pandemic. The effects of COVID-19 vary across communities and are disproportionate on vulnerable groups. People with the least resources are most affected and are least able to recover. Contemporary thinking on development focuses on “bottom-up” approaches and “top-down” critique development. A key dimension of inclusiveness is …
This Or That?: A Study Of Online Supermarket Interventions And Their Ability To Influence Healthy Food Choices, Abby Tobin
Honors Theses - Providence Campus
As obesity rates continue to rise in the United States, there is an increasing need for new ideas and solutions to combat this worrisome epidemic. Western North American Naturalist
Intake of medusahead (Taeniatherum caput-medusae (L.) Nevski) by livestock is typically low given the poor nutritional quality of the weed, but utilization may increase through the provision of supplemental nutrients. This study compared cattle that initially grazed on a supplemented pasture (SUP) of established cool-season perennial grasses and forbs to nonsupplemented cattle that grazed only medusahead-infested rangeland (NSUP) in order to determine whether supplemental nutrients could increase use of medusahead. The quality of different forage types in the plant community and grazing events on these forage types were assessed. Supplemented animals grazed medusahead to a greater extent than NSUP …

Literature-Assisted Validation Of A Novel Causal Inference Graph In A Sparsely Sampled Multi-Regimen Exercise Data, Aditya Gupta
Theses
Background. Causal mechanisms supporting the cardio-metabolic benefits of exercise can be identified for individuals who cannot exercise. With the use of appropriate causal discovery algorithms, the causal pathways can be found for even sparsely sampled data which will help direct drug discovery and pharmaceutical industries to create the appropriate drug to maintain muscles. Objective. The purpose of this study was to infer novel causal source-target interactions active in sparsely sampled data and embed these in a broader causal network extracted from the literature to test their alignment with community-wide prior knowledge and their mechanistic validity in the context of regulatory …
Understanding Food Policy Councils: Lessons For Extension Partners, Gail Feenstra, Clare Gupta, David Campbell, Jennifer Sowerwine, Katherine Munden-Dixon
Understanding Food Policy Councils: Lessons For Extension Partners, Gail Feenstra, Clare Gupta, David Campbell, Jennifer Sowerwine, Katherine Munden-Dixon
Journal of Extension
This paper presents findings from a survey of 34 food policy councils (FPCs) in California. The survey addressed organizational structure and functions, policy priorities and achievements, and the use of research or other information. We find that most FPCs have formed in recent years, operate with small budgets and limited or no staff, and function primarily to foster network relationships. FPCs rely on community-based knowledge more than academic research, suggesting an opportunity for Extension professionals to lend expertise. We conclude by identifying specific ways Extension professionals can support FPCs as they seek to enhance local and regional food systems.

Pre-Milling Interventions For Improving The Microbiological Quality Of Wheat, Shpresa Musa
Pre-Milling Interventions For Improving The Microbiological Quality Of Wheat, Shpresa Musa
Department of Food Science and Technology: Dissertations, Theses, and Student Research
Development of pre-milling intervention strategies to improve the microbial quality of wheat and wheat-based products is an emerging concern for the food industry. When steam tempering conditions for hard and soft wheat were applied, the microbial population associated with the grain was significantly reduced compared to controls. Further reductions were observed when acid was applied as part of the intervention which is an added benefit since the addition of a tempering solution is required for both wheat classes since the desired milling moisture cannot be reached by applying steam alone. On average, the highest reductions for hard wheat were achieved …
Effect Of Radiofrequency Assisted Thermal Processing On The Structural, Functional And Biological Properties Of Egg White Powder, Alisha Kar
Department of Food Science and Technology: Dissertations, Theses, and Student Research
Radiofrequency (RF) assisted thermal processing is a novel and energy-efficient method used for pasteurization, which heats the product volumetrically as opposed to traditional hot room (HR) pasteurization. RF-assisted thermal processing accelerates the heating rate of egg white powder (EWP), which has a low thermal conductivity and further affect its gelling properties. The effect of processing methods (RF and HR) due to pH and treatment temperature combination was monitored by subjecting neutral EWP (6.4 pH) to 70 and 80 ℃ and alkaline EWP (pH 9.9) samples to 70 ℃ over 0, 5, 10, 15 and 20 d. At 80 ℃ and …

Health and Kinesiology Faculty Publications
Peripheral artery disease (PAD) is characterized by the accumulation of atherosclerotic plaques in the lower extremity conduit arteries, which impairs blood flow and walking capacity. Dietary nitrate has been used to reduce blood pressure (BP) and improve walking capacity in PAD. However, a standardized dose for PAD has not been determined. Therefore, we sought to determine the effects of a body mass-normalized moderate dose of nitrate (0.11 mmol nitrate/kg) as beetroot juice on serum nitrate/nitrite, vascular function, walking capacity, and tissue oxygen utilization capacity in patients with PAD. A total of 11 patients with PAD received either nitrate supplement or …

Monitoring Domestic Sheep Energy Requirements And Habitat Selection On Summer Mountain Range Using Low-Cost Gps Collar Technology, Elizabeth M. Baum
Theses and Dissertations
With the advent of global position system (GPS) collar technology, we have developed a much greater understanding of the temporal and spatial distribution of livestock and their associated grazing patterns. While significant research using GPS collars has been reported for cattle, little research is available describing collar use in understanding the behavior of domestic sheep. The purpose of our research was to evaluate the energy requirements of sheep with the use of GPS collars. To accomplish this, we adapted a low-cost i-gotU GPS tracking device that is typically designed for cattle and modified it to fit sheep. Each collar was …

Journal of Applied Research on Children: Informing Policy for Children at Risk
The co-occurring crises of climate change, a global pandemic, and the social justice movement has put demands on psychosocial resilience. The country and global community has witnessed that those who contribute the least to climate change are the most impacted, and that black, indigenous, and people of color bear the health and financial burdens brought on by a changing climate. Given that eco-anxiety is on the rise amongst young people, such increases in awareness building have not yielded action at the speed and scale necessary to protect the most climate-sensitive among us: children and youth. Raising healthy children and youth …

Diarrhea is the leading cause of morbidity and mortality in pre-weaned dairy calves and, as such, represents a significant animal health and welfare concern. Furthermore, digestive disease early in life is associated with several long-term consequences such as reduced growth rate and decreased milk yield during the first lactation, thus generating severe economic losses. The majority of diarrheic cases in young calves are treated with antimicrobials; however, it is necessary to develop alternative treatments, as excessive antimicrobial usage can lead to antimicrobial resistance and can negatively impact the gut microflora of a calf. Bovine colostrum is abundant in immune and …
