A Cost Analysis And Policy Review Of Digestate When Deemed A Waste Product And A Fertilizer., Sarah Chandrika Cannon
A Cost Analysis And Policy Review Of Digestate When Deemed A Waste Product And A Fertilizer., Sarah Chandrika Cannon
Theses
Food waste is a multifaceted issue that has proposed solutions as complex as the problem itself. New York State recently announced a food waste ban, effective January of 2020, that will require large scale food waste producers to manage the waste through alternative methods as opposed to disposal in a landfill. One of those methods is through Anaerobic Digestion, a process in which organic matter chemically reacts with bacteria to produce a biofuel along with an associated byproduct, namely digestate. The biofuel in most cases is used to produce electricity to feed back to the grid acting as a net …

The Effects Of Mental Pacing On The Mile Run, Athena Viers, Maycee White, Scott Richmond
The Confluence
Success in cardio-based physical activity is often related to the ability to pace oneself. Pacing allows the athlete to decide how and when to invest the most and least amount of energy into their performances. PURPOSE: The purpose of this study was to determine if college students and faculty can mentally pace themselves on a one-mile run. METHODS: Thirty apparently healthy females (n=11) and males (n=14) participated. All subjects were capable of either walking or running a mile and all testing was completed in a single session using a 150m indoor track. Participants were asked to remove any headphones, watches, …

Comparative Microbiome Analysis Of The Funfus Gardening Ant Species Trachymyrmex Arizonensis, Chase D. Rowan
Comparative Microbiome Analysis Of The Funfus Gardening Ant Species Trachymyrmex Arizonensis, Chase D. Rowan
Biology Theses
Fungus-growing ants (Attini: Formicidae) and their fungal cultivars participate in ant-fungus mutualism that share a 50-million-year-old coevolutionary history. Fungal cultures are grown in gardens alongside ants and a diverse collection of microbes that interact with both species in mutualistic, commensal, and antagonistic relationships. These microbes aid in digestion and detoxification of food, provide essential nutrients, help in nest hygiene, and play a dominant role in defense against pathogens and disease. Microbial communities of many model species have been shown to change in a laboratory setting as compared to their natural environment. High-throughput 16s sequencing of the V4 variable region was …

Racial And Socioeconomic Disparities Influencing Obesity Amongst Middle-Aged Women, Morgan Woods
Master of Science in Integrative Biology Theses
Many studies have examined the effects of racial and socioeconomic differences on health-related disparities involving obesity but, few have examined the mental and physical well-being intersection. Obesity is a disease that affects many Americans and has become an epidemic affecting the American population. Obesity, especially morbid obesity, is a risk factor for many other obesity-related diseases such as diabetes, cardiovascular diseases, hypertension, and more. Using the 2018 Healthcare Avoidance Study, differences were found between two racial groups, Caucasian and African-American women. Race was found as a significant factor for both level of physical activity and ideal body image perception

Fine Carbohydrate Structure Of Dietary Resistant Glucans Governs The Structure And Function Of Human Gut Microbiota, Arianna D. Romero Marcia, Tianming Yao, Ming-Hsu Chen, Renee E. Oles, Stephen R. Lindemann
Department of Food Science Faculty Publications
Increased dietary fiber consumption has been shown to increase human gut microbial diversity, but the mechanisms driving this effect remain unclear. One possible explanation is that microbes are able to divide metabolic labor in consumption of complex carbohydrates, which are composed of diverse glycosidic linkages that require specific cognate enzymes for degradation. However, as naturally derived fibers vary in both sugar composition and linkage structure, it is challenging to separate out the impact of each of these variables. We hypothesized that fine differences in carbohydrate linkage structure would govern microbial community structure and function independently of variation in glycosyl residue …

Soft red winter wheat (SRW) is characterized by high yield and relatively low protein content. In Kentucky, there is growing demand from local artisan bread bakers for regionally produced flour, requiring production of grain with increased protein content and/or strength. The objective of this two-year field experiment was to evaluate the effect of nitrogen (N) management on five cultivars of winter wheat on yield and bread baking quality traits of modern and landrace SRW cultivars (Triticum aestivum L.). All five cultivars were evaluated using two N application rates in conventional and organic production systems. All traits measured were significantly …

The Influence Of Caregivers' Gender Attitudes On Adolescents' Health And Well-Being In The Democratic Republic Of Congo, Andrew G. Corley
Sigma Foundation for Nursing Research Grant Reports
Adolescence is a developmentally important phase in one's life. However, restrictive gender attitudes that gain increased importance during adolescence prevent many from reaching their health and development potential. The objective of this study is to explore associations between caregiver gender attitudes and adolescent psychosocial health, educational attendance, and food security in a sample living in the eastern Democratic Republic of Congo, a region that has experienced persistent poverty and nearly thirty years of insecurity.
‘Gilded Gravel In The Bowl’: Ireland’S Cuisine And Culinary Heritage In The Poetry Of Seamus Heaney, Anke Klitzing
‘Gilded Gravel In The Bowl’: Ireland’S Cuisine And Culinary Heritage In The Poetry Of Seamus Heaney, Anke Klitzing
Articles
Seamus Heaney’s poetry is rich in detail about agricultural and food practices in his native Northern Ireland from the 1950s onwards, such as cattle-trading, butter-churning, eel-fishing, blackberry-picking or home-baking. Often studied from an ecocritical perspective, the abundance of agricultural and culinary scenes in Heaney’s work makes a gastrocritical focus on food and foodways suitable. Food has been recognized as a highly condensed social fact, and writers have long tapped into its multi-layered meanings to illuminate socio-cultural circumstances, making literature a valuable ethnographic source. A gastrocritical reading of Heaney’s work from 1966 to 2010, drawing on Rozin’s Structure of Cuisine, shows …

Tropical Legumes To Augment Forage Yield In The Eastern Caribbean, E. Valencia, M. B. Adjei
IGC Proceedings (1977-2023)
Little information is available on the contribution of tropical legumes to forage yield in the eastern Caribbean. This study assessed the effects of three grazing cycles (GC; 5, 10 and 15-wk) on seasonal dry matter (DM) yield of binary mixtures of the tropical legumes glycine (Neonotonia wightii) and desmanthus (Desmanthus virgatus) with “Bambatsi” (Panicum coloratum) and “Mottgrass” (Pennisetum purpureum Shum.). Plant responses were assessed by mob-grazing with sheep (12-24 hrs; to average stubble height of 15-cm) for each GC. Grazing cycles affected yield of both the legume and grass component (P< 0.05). At GC of 5-weeks, forage DM ranged from 1.5-2.0 Mg ha-1 in …

Yield And Forage Quality In Alfalfa-Weeping Lovegrass Mixtures, H. Laborde, R. E. Brevedan, M. A. Varillas, M. N. Fioretti
IGC Proceedings (1977-2023)
Little is known about the relative performance of weeping lovegrass in mixtures with alfalfa. Our objective was to compare the productivity and forage quality of monocultures and binary mixtures of the species. Mixtures always gave higher yields than any of the monocultures and the highest was obtained in the mixture with the largest proportion of alfalfa. In the second year weeping lovegrass N concentration in the mixtures were higher than in monoculture. Weeping lovegrass did not affect the alfalfa N concentration. There was not differences in the NDF, for between these species.

IGC Proceedings (1977-2023)
The objective of the present study was to determine dry matter intake (DMI) and the forage yield of green dry matter (GDM) of star grass (Cynodon nlemfuensis) alone and associated with Leucaena leucocephala cv. Perú grazed by sheep. The experimental treatments were: Systems T1) Star grass alone, and T2) Star grass + L. leucocephala. These treatments were evaluated during three seasons (i.e. Late-rainy, Dry and Rainy seasons). The availability of forage was lower (P < 0.0001) in T1, 2543 kg GDM/ha, than with T2, 3092 kg GDM/ha. Green dry matter in the rainy season was greater (P < 0.0001), with 3910 kg GDM/ha, than in the late-rainy and dry seasons, 2492 and 2052 kg GDM/ha, respectively. DMI was 5.9 and 7.6 g DM/kg of LW 0.75/hour for the T1 and T2, respectively (P < 0.0001). DMI during the rainy season was lower (P < 0.01) than that of the dry and late-rainy seasons, 6.2, 6.4 and 7.5 g DM/kg LW0.75/hour, respectively. The association C. nlemfuensis-L. leucocephala increased the availability of …

In the last few decades, the emergence of mid-scale, intermediated marketing channels that fall between commodity and direct markets has attracted growing interest from scholars for their potential to preserve small and mid-sized farms while scaling up alternative agrifood sourcing. When such mid-scale supply chains are formed among multiple business partners with shared ethics or values related to the qualities of the food and the business relationships along the supply chain, they may be termed "values-based supply chains (VBSCs)." Most of the research on VBSCs to date has relied primarily on a case study approach that investigates the performance of …

Migration and Food Security (MiFOOD) Network
The implementation of global migration governance processes such as the 2030 Sustainable Development Agenda and the Global Compact for Migration has been stalled by the COVID-19 crisis as flows of and opportunities for international migrants shrink through the containment strategies adopted by most governments in response to the pandemic. Migrants have been disproportionately affected by COVID-19 and the policies taken in response to the pandemic, with higher risk of exposure to the virus, greater likelihood of working in sectors that have experienced major economic downturn, lower rates of access to social support mechanisms and health care, and increased vulnerability to …

No. 02: Food Remittances, Migration And Rural-Urban Linkages In Kenya, Elizabeth Opiyo Onyango, Jonathan Crush, Samuel Owuor
Migration and Food Security (MiFOOD) Network
Rural-urban migrants in Sub-Saharan Africa do not generally cut their links with rural homes and much has been written about the character, types and implications of connections between rural areas and rapidly growing cities. The persistence of circular migration and the perpetuation of rural-urban connectivity is a distinctive feature of Kenyan urbanization. Informal non-market food remitting from rural to urban areas has received little attention in comparison with cash remitting from city to countryside. This paper presents new evidence from a household survey in Nairobi on the extent, frequency and nature of informal food remitting from rural areas to migrants …

Impact Of Community-Based Girl Groups, Miriam Temin, Craig Heck
Poverty, Gender, and Youth
Programs increasingly use community-based girl groups (CBGGs) to address risks and empower adolescent girls, but evidence on their impact is not always accessible to decision makers. A closer look at 30 CBGG programs in low- and middle-income countries found that CBGGs had the greatest reported success in improving health and gender attitudes and beliefs, while their effect on health behavior and status is mixed. Program implementers should consider CBGGs as a way to facilitate girls’ empowerment, with complementary measures to engage community members and to promote enabling environments for greater program impact. Increased interest and investment in CBGGs should be …

Corporate social responsibility (CSR) is the “context-specific organizational actions and policies that take into account stakeholders’ expectations and the triple bottom line of economic, social, and environmental performance” (Aguinis & Glavas, 2012). Businesses using the CSR model engage in or work towards bettering society in three spaces: the environment, social welfare, and governance (ESG's). We want to see how this model is communicated among stakeholders, and if this social mission is fully integrated into the practices and workspaces of YUM! Brands.

Using Technology To Assess Bidirectionality Between Daily Pain And Physical Activity: The Role Of Marginalization During Emerging Adulthood, Helen Bedree
College of Science and Health Theses and Dissertations
Emerging adulthood is often overlooked as a developmental time period critical to shaping future health outcomes. Recurrent pain is a commonly experienced health concern within this age group, particularly headaches and low back pain, and early experiences of recurrent pain are related to subsequent chronic pain and disability. Furthermore, adults from marginalized populations report more frequent and severe recurrent pain. Many studies have demonstrated the therapeutic effect of physical activity on pain relief; however, others have demonstrated that physical activity can also exacerbate pain symptoms. Therefore, the current study aimed to 1) assess a bidirectional relationship between reported pain and …

Service Utilization Among Latina Survivors Of Intimate Partner Violence, Alyssa Donovan
College of Science and Health Theses and Dissertations
Intimate partner violence (IPV) is an international health issue disproportionately affecting women, which is associated with a range of severe physical and mental health sequelae (Black et al., 2011). Research has demonstrated that individual factors, such as violence severity, and systemic factors, such as poverty, affect whether women seek formal help, including mental health, police, and legal services, in response to IPV (Lelaurain, Graziani, & Monaco, 2017). Latina women have voiced many challenges to seeking formal help (Rizo & Macy, 2011). These include limited economic resources, language gaps in service provision, and factors related to immigration (Rizo & Macy, 2011). …

Thermal conductivity determination of food at temperatures > 100 °C still remains a challenge. The objective of this study was to determine the temperature-dependent thermal conductivity of food using rapid heating (TPCell). The experiments were designed based on scaled sensitivity coefficient (SSC), and the estimated thermal conductivity of potato puree was compared between the constant temperature heating at 121.10 °C (R12B10T1) and the rapid heating (R22B10T1). Temperature-dependent thermal conductivity models along with a constant conductivity were used for estimation. R22B10T1 experiment using the k model provided reliable measurements as compared to R12B10T1 with thermal conductivity values from 0.463 ± 0.011 W …

Pregnancies affected by obesity are at high risk for developing metabolic complications with oxidative stress and adipocyte dysfunction contributing to the underlying pathologies. Few studies have examined the role of dietary interventions, especially those involving antioxidants including polyphenolic flavonoids found in fruits and vegetables on these pathologies in high-risk pregnant women. We conducted an 18 gestation-week randomized controlled trial to examine the effects of a dietary intervention comprising of whole blueberries and soluble fiber vs. control (standard prenatal care) on biomarkers of oxidative stress/antioxidant status and adipocyte and hormonal functions in pregnant women with obesity (n = 34). Serum samples …
