Monoglycerides (MGs) and their derivatives are widely used and considered the most important group of emulsifiers. These emulsifiers can be produced from waste cooking oils (WCOs) via two-step transesterification-glycerolysis or hydrolysis-glycerolysis processes. The transesterification-glycerolysis process has the advantages in terms of a high reaction rate and a high process yield. For hydrolysis, triglycerides are converted to free fatty acids (FFA) at higher reaction temperature, but water is used as a reactant. Therefore, the separation process is not complicated. In recent years, an interest in plant–based protein increased dramatically. Pigeon pea (Cajanus cajan) is recognized as a good source of plant protein. The current study was aimed to develop pigeon pea flour (PPF) and whole wheat flour (WWF) blends, which were then used to make chapatis. The substitution levels of PPF for WWF ranged from 10%–40% w/w. The physical properties and nutritional values of the flour blends and the chapatis were investigated. The chapatis were also evaluated for sensory acceptability. Proximate analysis of the flours revealed protein content in PPF (26.10%) two times higher than that in WWF (13.52%). …

Background: Distal sensory neuropathy is a common disorder in the peripheral nervous system. We aimed to investigate the association between reproductive history factors and distal sensory neuropathy among the US postmenopausal women aged 40 years and over. We also explored the heterogeneity of these associations by age. Methods: A cross sectional study was conducted with data from postmenopausal women aged 40 years and over in National Health and Nutrition Examination Survey 1999-2004. The C-X-C chemokine receptor type 4 (CXCR4) has been recognized as a potential target in cancer drug discovery based on the high expression in cancer cells, particularly invasive breast cancer. This study aims to construct CXCR4-overexpressed cells to screen new anti-breast cancer agents targeting CXCR4 and identify the mediated target for anticancer effect. Box jellyfish is considered one of the most venomous animals. The genus Chironex (C. indrasaksajiae) is a multi-tentacle box jellyfish found in Thai waters that are dangerous to humans, particularly the venom that could cause death within minutes. This study aimed to perform a proteomic approach to characterize the protein components of C. indrasaksajiae venom. A total of 532 unique protein groups were identified, including toxins and proteins essential for nematocyte development and nematocyst formation (nematogenesis). Toxins CfTX-1 and CfTX-2, with sequence coverage of 39.3 percent and 34.8 percent, respectively, are the most abundant in the venom of C. indrasaksajiae. …

Alpha-glucosidase inhibitory assay-guided isolation of Thunbergia laurifolia L. stems yielded a new compound named 5-acetoxyfuranonapthoquinone (1) along with nineteen known compounds (2-20). The structure of the isolated compounds was elucidated by the analysis of multiple spectroscopic data as well as by comparison with the previous reports. The isolated compounds were evaluated for α-glucosidase inhibition. Syringaresinol (6), rosmarinic acid (11), 1,2,8-trihydroxyxanthone (17), and isojacareubin (18) showed the most potent inhibitory activity among isolated compounds. Kinetic study indicated that syringaresinol (6), 1,2,8-trihydroxyxanthone (17), and isojacareubin (18) could inhibit the maltase and sucrase function by non-competitive, and rosmarinic acid (11) was identified as …

In this work, a new composite sponge of chitosan, nanocellulose, and MIL-53(Fe) metal-organic-framework were synthesized and applied for As(III) and As(V) removal. Nanocellulose with an average size of 433.5 ± 41.0 nm were prepared and used. The octahedron crystalline MIL-53(Fe) was successfully synthesized. The nanocellulose was mixed with chitosan and MIL-53(Fe) before crosslinking and freeze-drying. The obtained materials were characterized by Fourier transform infrared spectroscopy, nitrogen adsorption, scanning electron microscope, and energy dispersive x-ray spectroscopy. จากกระแสความนิยมของกลุ่มผู้บริโภคที่ใส่ใจต่อสุขภาพและคำนึงสิ่งแวดล้อมในปัจจุบัน ส่งผลให้แนวโน้มการตลาดของผลิตภัณฑ์เกษตรและอาหารอินทรีย์มีการเติบโตอย่างต่อเนื่อง น้ำนมที่ได้จากฟาร์มโคนมอินทรีย์ซึ่งเน้นรูปแบบการเลี้ยงที่เป็นธรรมชาติ ปลอดจากการใช้สารเคมีและยาปฏิชีวนะ จัดเป็นหนึ่งกลุ่มสินค้าเกษตรที่มีมูลค่าสูง ส่งผลให้มีความต้องการพัฒนาวิธีการตรวจสอบคุณภาพ โดยเฉพาะการเปลี่ยนแปลงขององค์ประกอบทางเคมีในน้ำนมที่เป็นผลมาจากกระบวนการจัดการฟาร์มแบบอินทรีย์ เพื่อใช้ระบุอัตลักษณ์ของผลิตภัณฑ์กลุ่มดังกล่าว เมตาโบโลมิกส์ (metabolomics) นับเป็นเทคนิคทางเคมีวิเคราะห์สมัยใหม่ที่สามารถนำมาใช้เพื่อตรวจสอบอัตลักษณ์ทางชีวโมเลกุลของผลิตภัณฑ์อาหาร อย่างไรก็ตาม การนำเทคโนโลยีดังกล่าวมาประยุกต์ใช้ในการศึกษาข้อมูลแบบแผนทางชีวโมเลกุลของน้ำนมและผลิตภัณฑ์นมในประเทศไทยยังมีอยู่อย่างจำกัด ดังนั้นงานวิจัยนี้จึงมีวัตถุประสงค์เพื่อ วิเคราะห์และเปรียบเทียบข้อมูลสารเมตาบอไลต์ชนิดระเหยยากและข้อมูลกรดไขมันของน้ำนมดิบที่ได้จากฟาร์มโคนมอินทรีย์และฟาร์มโคนมทั่วไปโดยใช้เทคนิค 1H-NMR และ GC-MS ร่วมกับการวิเคราะห์ทางสถิติพหุตัวแปร พร้อมทั้งติดตามอิทธิพลของฤดูกาลต่อการเปลี่ยนแปลงข้อมูลดังกล่าวในน้ำนมดิบ ผลการวิจัยพบว่าสามารถระบุชนิดของสารเมตาบอไลต์ชนิดระเหยยากและกรดไขมันในน้ำนมดิบได้ทั้งหมด 35 และ 32 ชนิดตามลำดับ ผลการวิเคราะห์ทางสถิติพหุตัวแปรแสดงให้เห็นว่า สามารถแยกความแตกต่างของข้อมูลสารเมตาบอไลต์ชนิดระเหยยากและข้อมูลกรดไขมันของกลุ่มตัวอย่างน้ำนมดิบที่ได้จากฟาร์มโคนมอินทรีย์ออกจากฟาร์มโคนมทั่วไปได้ โดยสามารถใช้ปริมาณสัมพัทธ์ของสารเมตาบอไลต์ carnitine, N-acetylglucosamine, lactate, glycerophosphocholine, 1,3 dihydroxyacetone,1,6-anhydro-β-D-glucose และกรดไขมันชนิด stearic acid และ linolenic acid เป็นตัวบ่งชี้ทางชีวภาพเพื่อระบุอัตลักษณ์ทางชีวโมเลกุลของน้ำนมโคอินทรีย์ได้ นอกจากนี้อิทธิพลของความแตกต่างระหว่างฤดูแล้งและฤดูฝนยังส่งผลต่อความผันแปรของปริมาณสารเมตาบอไลต์ acetoacetate, glucose, histidine, choline และกรดไขมันชนิด lauric acid, myristic acid, palmitic acid, margaric acid, saturated fatty acid (SFA), monounsaturated fatty acid (MUFA), polyunsaturated fatty acid (PUFA), elaidic acid, linolelaidic acid, conjugated linoleic acid (CLA) และ behenic acid ผลการวิจัยดังกล่าวแสดงให้เห็นถึงการประยุกต์ใช้เทคโนโลยีเมตาโบโลมิกส์ในการวิเคราะห์อัตลักษณ์ทางชีวโมเลกุลของน้ำนมโคอินทรีย์ รวมทั้งอิทธิพลของฤดูกาลต่อความผันแปรของข้อมูลดังกล่าวได้อย่างมีประสิทธิภาพ

การเกิดนาโนเจลจากแป้งมันสำปะหลังและเจลาตินด้วยการฉายรังสีสำหรับการกักเก็บน้ำมันหอมระเหย, อภิชญาดา ขาวสุวรรณ์

นาโนเจลคือพอลิเมอร์ที่เกิดการเชื่อมขวางภายใน และระหว่างโมเลกุลโดยสามารถเกิดได้จากวิธีการทางกายภาพ เคมี และวีธีการใหม่อย่างการฉายรังสี โดยนาโนเจลสามารถเกิดได้จากพอลิเมอร์หลายชนิด ทั้งพอลิเมอร์จากธรรมขาติและพอลิเมอร์จากการสังเคราะห์ มีการประยุกต์ใช้นาโนเจลในทางอาหาร โดยใช้สมบัติเฉพาะตัวของนาโนเจลทั้งด้านสัณฐานวิทยา สมบัติทางเคมีกายภาพ และสมบัติการกักเก็บของนาโนเจล ในการศึกษานี้เพื่อศึกษาการเกิดนาโนเจลจากแป้งมันสำปะหลังและเจลาตินด้วยการฉายรังสีด้วยลำอิเล็กตรอน โดยหาสภาวะที่เหมาะสมต่อการเกิดนาโนเจลด้วย response surface methodology (RSM) กำหนดตัวแปรเป็นค่าการเชื่อมขวาง (DC) และความคงตัวต่อความร้อน (TD) โดยแปรอัตราส่วนของแป้งมันสำปะหลัง-เจลาติน (1:9-9:1) ความเข้มข้นของสารผสม (10-40 mg/ml) และปริมาณรังสีดูดกลืน (10-40 kGy) พบว่าสภาวะที่เหมาะสมในการเกิดนาโนเจลจากแป้งมันสำปะหลังและเจลาตินคือที่อัตราส่วน 1:1 ที่ความเข้มเข้นของสารผสมที่ 25 mg/mL และฉายรังสีที่ 25 kGy ศึกษาสมบัติทางสัณฐานวิทยาของนาโนเจลที่ได้ด้วยภาพจากกล้องจุลทรรศน์แบบส่องกราด (SEM) กล้องจุลทรรศน์แบบส่องผ่าน (TEM) และกล้องจุลทรรศน์แรงอะตอม (AFM) และพบว่าโมเลกุลของแป้งมันสำปะหลังและเจลาตินมีการเชื่อมติดกันอันเนื่องจากการเกิดการเชื่อมขวาง และขนาดของโมเลกุลมีขนาดเล็กลงจนถึงระดับนาโนเมตรหลังจากการฉายรังสี วิเคราะห์สมบัติทางเคมีของนาโนเจลที่ได้ด้วยวิธี Fourier transform infrared spectrometry (FT-IR) และพบว่าไม่มีการเปลี่ยนแปลงหมู่ฟังก์ชันของแป้งมันสำปะหลังและเจลาติน แต่มีการเพิ่มขึ้นของหมู่ hydroxyl ที่เกิดจากปฏิกิริยา radiolysis และการเพิ่มขึ้นของพันธะเชื่อมขวาง ต่อมาจึงศึกษาสมบัติของการกักเก็บน้ำมันหอมระเหยของนาโนเจลที่ได้ โดยการวัดประสิทธิภาพของการกักเก็บ (LE) ผลได้ของการกักเก็บ ความสามารถในการละลาย และปริมาณสารระเหยสำคัญของน้ำมันหอมระเหยที่กักเก็บในนาโนเจล เมื่อเปรียบเทียบสมบัติของวิธีการกักเก็บโดยแปรสัดส่วนของ นาโนเจล:น้ำมันหอมระเหยตะไคร้ พบว่าที่สัดส่วน 2:1 มีสมบัติการกักเก็บดีที่สุด และสามารถควบคุมการปลดปล่อยของสารระเหยสำคัญของน้ำมันหอมระเหยตะไคร้ ได้แก่ geranial, neral, geraniol, linalool, geranyl acetate และ citronellol ไว้ได้ดีที่สุด นาโนเจลยังสามารถเพิ่มความคงทนต่อความร้อน และยืดอายุการเก็บรักษาของน้ำมันหอมระเหยโดยกักเก็บภายในนาโนเจล พบว่าสามารถรักษาปริมาณของสารระเหยสำคัญของน้ำมันหอมระเหยไว้ได้หลังจากผ่านการให้ความร้อน และระหว่างเก็บรักษาเมื่อเทียบกับน้ำมันหอมระเหยปกติ โดยการเปลี่ยนแปลงที่เกิดขึ้นระหว่างการเก็บรักษา มีเพียงลักษณะปรากฏของผงนาโนเจลที่กักเก็บน้ำมันหอมระเหยเท่านั้น จึงสามารถสรุปได้ว่า สามารถสังเคราะห์นาโนเจลจากแป้งมันสำปะหลังและเจลาตินด้วยการฉายรังสี และสามารถหาสภาวะที่เหมาะสมได้ด้วยวิธี RSM และนาโนเจลยังสามารถกักเก็บน้ำมันหอมระเหยไว้ได้ อีกทั้งยังสามารถปกป้องและยืดอายุสารสำคัญชองน้ำมันหอมระเหยจากสิ่งแวดล้อม จึงสามารถนำนาโนเจลนี้ไปประยุกต์ใช้ในอุตสาหกรรมอาหารได้อย่างหลากหลาย

Osteogenic growth peptide (OGP) is a short peptide that is known able to increase osteogenesis. The objective of this study is to investigate thoroughly the osteogenic effect of OGP on human periodontal ligament stem cells (hPDLSCs). Herein, molecular dynamic (MD) simulations were employed to study the binding mechanisms of organophosphate pesticides towards two metallohydrolases, i.e., glycerophosphodiesterase (GpdQ) and methyl parathion hydrolase (MPH). OPH are the class of enzymes which breaks down harmful organophosphates, including the pesticides and warfare agents into less harmful byproducts. Aging is the inevitable, time-dependent, natural process in all living cells, resulting from the accumulation of cellular damage with insufficient cell repair. Global hypomethylation and Alu (B1) hypomethylation become aging indicators, which are commonly found not only in cellular aging but also in human clinical studies of age-related diseases. Seasonal influenza is a contagious respiratory illness caused by influenza viruses that infect the upper respiratory tract (URT) of humans and represent a major burden for public health. Black garlic has emerged as one of the fastest-growing health food products on the market. It is processed by incubating fresh garlic under high temperature and high humidity conditions. The process causes the changes in characteristics of black garlic such as texture, flavor, nutrient contents, chemical composition and it pharmacological properties, especially antidiabetic activity. In the present investigation, we applied α-glucosidase inhibition guided isolation to identify active compounds. Four compounds named 5-hydroxymethylfurfural (5-HMF), 5-hydroxymethyl-2-furancarboxylic acid (HMFCA), 4-(hydroxymethyl)phenol and 2-deoxy-ribono-1,4 lactone were isolated. The aims of this study are to produce and characterize mannanase from the selected Thai Aureobasidium strain and use the enzyme for hydrolysis of spent coffee ground extract (SCGE) to prepare mannooligosaccharide (MOs). The optimum condition for SCGE extraction by hot water was 1:30 solid to liquid ratio with 60 min incubation time at 121°C 15 lbs per in2. The maximum yield was 9.5 g/100 g substrate. The second dominant composition of SCGE was hemicellulose at 28 %. Aureobasidium pullulans NRRL 58524 was selected as the best mannanase producer with 8.07 U/mL. Sodium methoxide (NaOCH3) is commonly used as an alkaline homogeneous catalyst in transesterification to produce fatty acid methyl ester (FAME) and glycerol as a by-product. However, this conventional process requires a few steps to remove the homogeneous catalyst from the products by neutralization and washing, creating waste salts to be treated with additional cost. In this research, activated carbon was produced from cattail leave via hydrothermal carbonization and chemical activation. Rotating tube reactor (RTR), one of process intensification technologies, could highly increase the mixing performance and generate sufficient heat for biodiesel production. This research explored the optimum condition, essential characteristics of hydrodynamic regime and residence time distribution inside the rotating tube reactor (RTR) to enhance the biodiesel production rate using alkali-catalyzed transesterification. The purpose of this study is to prepare mesoporous carbon/silica (MCS) nanocomposites using natural rubber (NR) as a renewable carbon source. A series of mesoporous nanocomposites based on NR and hexagonal mesoporous silica (HMS), prepared via an in situ sol-gel process, were used as precursors, which were then converted into the MCS materials by carbonization. The sulfonic acid-functionalized mesoporous carbon/silica (MCS-SO3H) was prepared by direct sulfonation with H2SO4 solution. This study aimed to isolate secondary metabolites from the stems of Abutilon indicum and to evaluate their α-glucosidase, pancreatic lipase, α-chymotrypsin inhibitory activity. Chromatographic fractionation of the n-hexane crude extracts led to the isolation of three known metabolite (1-3). The crude extract from all parts of the plant were evaluated for inhibitory activity on the alpha-glucosidase enzyme. The DCM-soluble roots were active with 10.2% at 25 μg/mL.
