Polyphenols In Alzheimer’S Disease And In The Gut–Brain Axis, V. Prakash Reddy, Puspa Aryal, Sara Robinson, Raheemat Rafiu, Mark Obrenovich, George Perry

Chemistry Faculty Research & Creative Works

Polyphenolic antioxidants, including dietary plant lignans, modulate the gut–brain axis, which involves transformation of these polyphenolic compounds into physiologically active and neuroprotector compounds (called human lignans) through gut bacterial metabolism. These gut bacterial metabolites exert their neuroprotective effects in various neurodegenerative diseases, such as Alzheimer's disease (AD) and Parkinson's disease (PD), and also have protective effects against other diseases, such as cardiovascular diseases, cancer, and diabetes. For example, enterolactone and enterodiol, the therapeutically relevant polyphenols, are formed as the secondary gut bacterial metabolites of lignans, the non-flavonoid polyphenolic compounds found in plant-based foods. These compounds are also acetylcholinesterase inhibitors and …

Crowdprivacy: Publish More Useful Data With Less Privacy Exposure In Crowdsourced Location-Based Services, Fang Jing Wu, Tie Luo

Computer Science Faculty Research & Creative Works

Location-based services (LBSs) typically crowdsource geo-tagged data from mobile users. Collecting more data will generally improve the utility for LBS providers; however, it also leads to more privacy exposure of users' mobility patterns. Although the tension between data utility and user privacy has been recognized, there lacks a solution that determines how much data to collect-in both spatial and temporal domains-is the "best" for both mobile users and the service provider. This article proposes a strategy toward making an optimal tradeoff such that a user submits data only if her mobility privacy will not be compromised and the data utility …

Preliminary Data On The Relation Between Acculturation, Weight, And Sleep In Recently Immigrated Adolescents From Central America, Aleyda Arreola, Amanda Venta

Journal of Adolescent and Family Health

Data on Hispanic immigrants links increased acculturation with behavioral health concerns, though most data focuses on adults and Mexican-Americans. The aim of this study was to test the hypothesis that acculturation and acculturative stress act as predictors of increased body mass index (BMI) and decreased sleep in a sample of 62 recently immigrated Central American adolescents. Findings indicated a significant link between increased language acculturation and decreased sleep in bivariate analyses, but failed to confirm relations using multivariate methods or document relations to weight. Preliminary conclusions suggest that concerns regarding obesity documented in other immigrant groups may not be relevant …

Oyster Mushroom (Pleurotus Ostreatus) Stipe Peptides As In-Vitro Radical Scavenging, Ferrous Iron Chelating, & Ferric Reducing Antioxidant Compounds, Suraj Meharwade

Food Science (MS) Theses

Ferrous iron chelating, ABTS radical scavenging, and ferric reducing antioxidant activity of mushroom stipe peptides obtained using Protamex® and V8 protease has not been investigated. Additionally, the effects of peptides on protein carbonyl formation during myofibrillar oxidation is unknown. Oxidation of lysine, arginine, and proline in myofibrillar protein from red meat results in reduced meat quality owing to changes in water composition. Therefore, the objective of this study was to compare the antioxidant performance of <1 kDa and 1-3 kDa mushroom peptides obtained by Protamex®-V8 hydrolysis against mushroom hydrolysate, mushroom protein, and mushroom stipe for radical scavenging, ferrous chelating, and ferric reducing activity, as well as their effects on protein carbonyl formation within a protein oxidation system. <1 kDa peptides exhibited significantly higher (p < 0.05) in-vitro ferrous iron chelating activity and ABTS radical scavenging activity as compared to mushroom stipe and 1-3 kDa peptides. Whereas, 1-3 kDa peptides demonstrated significantly …

The Causes Of Guilt In Ready-Meal Users: A Focus On Cooking Instructions And Consumers’ Health Locus Of Control, Hyunsook Shin, Dongmin Lee, Jeeyoung Lim, Moon

Asia Marketing Journal

Although ready meals have recently increased their market share in the Korean food industry, a literature review found that the use of ready meals triggers feelings of guilt in homemakers. Such guilt arises as a result of several factors apparently related to consumers’ health. Consequently, levels of guilt might be expected to vary depending on consumers’ perceived health locus. The present study aims to examine (a) how health locus affects guilty feelings about ready-meal consumption, (b) how the effect varies in relation to the consumption of different types of ready meal, and (c) the relationship between consumers’ guilty feelings and …

Potential Use Of Biotherapeutic Bacteria To Target Colorectal Cancer-Associated Taxa, Gareth Lawrence, Maire Begley, Paul D. Cotter, Caitríona M. Guinane

Department of Biological Sciences Publications

The role of the gut microbiome in human health and disease is the focus of much attention. It has been widely agreed upon that our gut bacteria play a role in host immunity, nutrient absorption, digestion, metabolism, and other key drivers of health. Furthermore, certain microbial signatures and specific taxa have also been associated with the development of diseases, such as obesity; inflammatory bowel disease; and, indeed, colorectal cancer (CRC), which is the focus of this review. By extension, such taxa represent potential therapeutic targets. In particular, the emerging human pathogen Fusobacterium nucleatum represents an important agent in CRC development …
