Digesting Gender: Gendered Foodways In Modern Chinese Literature, 1890s–1940s, Zhuo Feng Oct 2020

Digesting Gender: Gendered Foodways In Modern Chinese Literature, 1890s–1940s, Zhuo Feng

Theses and Dissertations

In this dissertation, I investigate Han Bangqing (1856–1894), Lao She (1899– 1966), and Su Qing’s (1914–1982) works to study the literary representations of how people purchased, prepared, shared, and ate food in different social contexts allowing them to adapt to new gender norms. I contend that the intersection of food, gender and literature stages the process through which people reconciled different and sometimes conflicting gender norms through their everyday eating practices. When encountering new cooking and eating practices in these literary works, people reflect upon their past lives and, wittingly or unwittingly, begin to accept different gender norms, and modify …

Hunter-Gatherer Behavior At Dorn Levee #1 (38fa608): An Analysis Of Lithic Assemblage Formation At A South Carolina Piedmont Site, Robert Altom Cesarini Lyerly Oct 2020

Hunter-Gatherer Behavior At Dorn Levee #1 (38fa608): An Analysis Of Lithic Assemblage Formation At A South Carolina Piedmont Site, Robert Altom Cesarini Lyerly

Theses and Dissertations

The site of Dorn Levee #1 (38FA608) in the South Carolina Piedmont has the potential to provide unique information regarding the behaviors and activities of the hunter-gatherer populations who inhabited it throughout prehistory. The Late and Terminal Archaic Period landscape in the Southeast saw with it many major changes in hunter-gatherer lifeways that had begun initial development in periods prior. The continued use of Dorn Levee #1 suggests that it was highly important for these hunter-gatherers, and an analysis of their mobility patterns and general behaviors through the associated lithic debitage material can assist in illuminating its role within a …

An Evaluation Of The Healthfulness Of The Hospital Food Environment, Cynthia Elaine Horton Dias Oct 2020

An Evaluation Of The Healthfulness Of The Hospital Food Environment, Cynthia Elaine Horton Dias

Theses and Dissertations

Though nurses may have knowledge about the health promoting benefits of a healthy diet, many do not consume enough fruits or vegetables. For hospital shift nurses to achieve healthy eating while at work, environmental barriers were reportedly the most challenging to overcome. To better understand the hospital food environment from the nurses’ perspective, two mechanisms for workplace food acquisition were studied: 1.) hospital consumer food environment, which includes cafeterias, vending machines, and gift shops; and 2.) free food at work.

Through observations of 31 South Carolina hospitals using the Hospital Nutrition Environment Scan (HNES), descriptive data was collected to illuminate …

Optimal Pregnancy Outcomes And Subsequent Postnatal Development, Maria Sevoyan Oct 2020

Optimal Pregnancy Outcomes And Subsequent Postnatal Development, Maria Sevoyan

Theses and Dissertations

Optimal pregnancy outcomes and subsequent postnatal development in childhood are important contributors for health in adulthood. Some contributors to pregnancy outcomes include interpregnancy interval (IPI) and gestational age. Postnatal growth patterns also contribute to neurodevelopment and metabolic health outcomes later in life.

Several systematic reviews consistently show that short and long IPIs are associated with increased risk of subsequent adverse perinatal outcomes. Recent studies demonstrate that previously observed consistent positive associations between short and long IPIs and adverse perinatal outcomes might be due to unmeasured confounding rather than the length of the IPI. We used the National Institute of Child …

Package Warning Labels For Communicating Relative Risks Of Cigarettes, Heated Tobacco Products, And E-Cigarettes, Yoo Jin Cho Oct 2020

Package Warning Labels For Communicating Relative Risks Of Cigarettes, Heated Tobacco Products, And E-Cigarettes, Yoo Jin Cho

Theses and Dissertations

Package warning labeling policy is a fundamental public health strategy for communicating about tobacco product risks. The rapidly growing markets for novel tobacco products, such as heated tobacco products (HTPs) and e-cigarettes (ECs), make it critical to determine the characteristics of effective warning label policies for these products, which have lower levels of risk compared to cigarettes according to available evidence. Whether warning labels can communicate information about a continuum of risk across tobacco products is unexplored.

This dissertation investigated two warning label systems for communicating the relative risks of cigarettes, HTPs, and ECs: (1) varying warning sizes as a …

MicroRNA-30a (miR-30a) impacts adipocyte function, and its expression in white adipose tissue (WAT) correlates with insulin sensitivity in obesity. Bioinformatic analysis demonstrates that miR-30a expression contributes to 2% of all miRNA expression in human tissues. However, molecular mechanisms of miR-30a function in fat cells remain unclear. Here, we expanded our understanding of how miR-30a expression contributes to antidiabetic peroxisome proliferator-activated receptor-γ (PPARγ) agonist activity and metabolic functions in adipocytes. We found that WAT isolated from diabetic patients shows reduced miR-30a levels and diminished expression of the canonical PPARγ target genes ADIPOQ and FABP4 relative to lean counterparts. In human adipocytes, …

Human Adaptation To Hypoxia In Critical Illness, Helen T. Mckenna, Andrew J. Murray, Daniel S. Martin Oct 2020

Human Adaptation To Hypoxia In Critical Illness, Helen T. Mckenna, Andrew J. Murray, Daniel S. Martin

Peninsula Medical School

The syndrome of critical illness is a complex physiological stressor that can be triggered by diverse pathologies. It is widely believed that organ dysfunction and death result from bioenergetic failure caused by inadequate cellular oxygen supply. Teleologically, life has evolved to survive in the face of stressors by undergoing a suite of adaptive changes. Adaptation not only comprises alterations in systemic physiology but also involves molecular reprogramming within cells. The concept of cellular adaptation in critically ill patients is a matter of contention in part because medical interventions mask underlying physiology, creating the artificial construct of “chronic critical illness,” without …

Remote Hiring Innovation During The Covid-19 Pandemic, Melanie D. Jewkes, Jonathan J. Swinton, Shannon Cromwell, David G. Schramm, Naomi Brower

Journal of Extension

Extension's in-person hiring processes have been complicated in 2020 by the COVID-19 pandemic. To prevent delays in hiring for three vacant county faculty positions, our search committee conducted remote interviews using a variety of innovative techniques, such as a live "we're hiring" webinar, an icebreaker session, and live and recorded candidate presentations. The results of our innovative efforts included a larger pool of applicants, relaxed web-based video interviews, and savings in time and expenses. These strategies could be considered as new and effective approaches and practices to hiring and interviewing in Extension as the pandemic continues and into the future.

Mentoring In Action Model—Exploring The Mentoring Process In Nebraska Extension, Ashley Mueller Oct 2020

Mentoring In Action Model—Exploring The Mentoring Process In Nebraska Extension, Ashley Mueller

Journal of Extension

One method used by Extension organizations to orient new professionals is mentoring, yet gaps exist in the research on mentoring within Extension. Through focus group interviews and a materials review, I explored the mentoring process in Nebraska Extension. Using a semistructured interview approach, I asked Extension educators about their mentoring experiences, and I reviewed an organizational mentoring packet. From my findings, I constructed the mentoring in action model, which explains mentorship in Nebraska Extension. The model shows that mentoring is built on two mentoring structures and two primary characteristics of effective mentoring relationships. The study findings can inform mentoring strategies …

Desnatada: Latina Illumination Of Breastfeeding, Race, And Injustice, Jasmine Gonzales Rose

Faculty Scholarship

In Skimmed: Breastfeeding, Race, and Injustice, Andrea Freeman brilliantly explains how racism results in lower breastfeeding rates by Black mothers,1 which in turn results in poorer health outcomes--including higher mortality rates--for Black babies.2 She provides four primary reasons for this phenomenon: (1) the history and legacy of slavery, (2) the imposition of racist gender stereotypes on Black women, (3) racially-targeted formula promotion by manufacturers and hospitals, and (4) government benefits and employment policies that obstruct poor people's ability to breastfeed. The first two of these reasons are particularly devastating: the legacy of slavery and misogynoiristic3 stereotypes …

Introduction: COVID-19 has challenged governments, healthcare systems, and individuals, drawing attention to the limits of modern technology and the extent of social inequity. Such challenges have directed attention to historical epidemics as repositories of data that could contribute to effective public health strategies and prognostic modeling. In light of the well-established correlation between frailty and mortality from COVID-19, this paper investigates the relationship between frailty, inequity, and mortality in the setting of the Black Death of 1346 – 1353, in order to identify trends over time in populations at the greatest risk of mortality during pandemics.

Methods: A comparative review …
