Effect Of Brewing Conditions On Bioactive Compounds Of Xiangxi Golden Tea And It’S Antioxidant Activity, Chen Liang, Yu Ji, You Xiangtao, Jin Xuanlu, Ding Jiayun, Ma Chenjin, Yao Maojun

In different brewing temperature and time, the changes of tea polyphenols and free amino acids brewing from Xiangxi golden tea, which were detected by UV-visible spectrophotometer, was gotten, and the extraction kinetics model was established. The antioxidant properties were also determined by DPPH and ABTS clearance rate. Results, the concentration of tea polyphenols and free amino acids, DPPH and ABTS clearance rate increased with the brewing temperature rising 60~90 ℃, and the brewing time prolonged 1~30 min, and which tended to be stable after 30 min. Lactobacillus plantarum, Saccharomyces cerevisiae and acetic acid bacteria screened from previous experiments were taken as the research objects. Selecting two groups of probiotic compound starter L1 (Lactobacillus plantarum and Saccharomyces cerevisiae), L2 (Lactobacillus plantarum, Saccharomyces cerevisiae and Acetobacter) to produce capsicum ferment, and compared with traditional natural fermentation L0. By observing the changes of main quality indexes such as total acid, pH value, alcoholicity and main efficacy enzymes (superoxide dismutase activity, lipase activity) in the fermentation process, Selected the most suitable strain combination for capsicum fermentation. Proposed a pixel ratio measurement method, and designs 3 different potato models and 3 different peeling rate orthogonal tests through the model verification method, to verify the determination method. The experimental results showed that there was no significant difference between the actual measured value and the theoretical calculated value of the potato model in the 95% confidence interval, which indicated that the proposed pixel ratio measurement method had a strong credibility in the calculation of the peeling rate of potato. In this paper, the food quick-freezing technology, the shape of ice crystal at different freezing rates and methods for observing ice crystals are described. The research progress of pressure-assisted freezing, electrostatic-assisted freezing and magnetic-assisted freezing in recent years is reviewed. The direct method can directly observe the ice crystal formed during the freezing process. The indirect method analyzes the ice crystal characteristics by observing the gap left by the ice crystal in the food after freezing. Pressure-assisted freezing can improve the super-cooling degree. Effects Of Leucine And Α-Ketoglutarate On The Weight, Serum, Visceral Organ Of Mice, Jin Shunshun, Yao Kang, Yin Yulong, Kang Baoju, Li Yuying, Wang Peng

Forty male C57BL/6 mice aged 4 weeks were selected and randomly divided into 4 groups. Mice in control groups drank normal water, while those in the experimental groups were treated 1.0% α-ketoglutarate acid (group Ⅰ), or 1.8% leucine (group Ⅱ), or 1.8% leucine and 1.0% α-ketoglutarate acid (group Ⅲ) via drinking water. The experimental lasted 35 days. The results showed as follows: ① The growth performance of group Ⅲ was 8.7%, 10.1%, and 10.4% lower than that of the groups control,ⅠandⅡ, respectively; ② Serum albumin in group Ⅲ was significantly higher than that of the groups control,ⅠandⅡ(P<0.05); ③ The cardiac index of group Ⅲ increased by 19.3%, 13.6%, and 15.2%, respectively, compared with groups control,ⅠandⅡ; ④ The abdominal fat index of group Ⅲ was 24.1%, 10.0%, and 6.7% lower than that of groups control,ⅠandⅡ, the cross-sectional area of the gastrocnemius muscle of group Ⅲ was 46.9%, 20.2%, 27.9% higher than that of groups control,ⅠandⅡ, respectively. In summary, the combination of leucine and α-ketoglutaric acid can reduce the body weight of mice, strengthen the use of fat by organs, and increase the cross-sectional area of gastrocnemius muscle fibers.

This study developed a literature based educational text messaging intervention, utilizing professional and adolescent subject matter experts (SMEs) to assess the content validity of the intervention, and pilot test the intervention for effect on pregnant adolescents' knowledge of nutrition and physical activity. Pregnant adolescents tend to utilize prenatal care inconsistently and have problems with weight gain during pregnancy. Questions have arisen regarding whether pregnant women are receiving education needed to eat healthy and be active during pregnancy. The purpose of this descriptive exploratory study was to analyze patient data from a computerized clinical documentation system using the standardized languages of the North American Nursing Diagnosis Association, the Nursing Interventions Classification, and the Nursing Outcomes Classification. Poor pregnancy outcome (PPO) is a top agenda item in health and political arenas. Most prominent PPOs are low birth weight (LBW) and preterm delivery (PTD). Effective interventions to maximize pregnancy outcome will diminish their negative impact. The placenta is a diary of the infant's prenatal experiences. Changes in the placenta provide clues to the uterine environment during the pregnancy. Each placental pathology represents a different insult, including severity, duration and type. Epidemiological studies link increased fall risk to obesity in older adults, but the mechanism through which obesity increases falls and fall risks is unknown. This study investigates if obesity (Body Mass Index: BMI>30 kg/m2) influenced gait and standing postural characteristics of community dwelling older adults leading to increased risk of falls. One hundred healthy older adults (age 74.0±7.6 years, range of 56-90 years) living independently in a community participated in this study. King was educated in the Oxford, Mississippi, public schools before earning multiple bachelor’s and master’s degrees, and then taking a PhD from the University of Mississippi. She worked at the J.D. Williams Library for a number of years before being recruited to move to the National Food Service Management Institute, now the Institute of Child Nutrition, where she helped develop the Institute’s computer technology.

The quantity and quality of child-directed speech—language nutrition—provided to typically-developing children is associated with language outcomes—language health. Limited information is available about child-directed speech to children at biological risk of language impairments. We conducted a scoping review on caregiver child-directed speech for children with three clinical conditions associated with language impairments—preterm birth, intellectual disability, and autism—addressing three questions: (1) How does child-directed speech to these children differ from speech to typically-developing children? (2) What are the associations between child-directed speech and child language outcomes? Effectiveness Of Three Foodservice Equipment Training Interventions For Food And Nutrition Students, Tiffan C. Frieson, Katie R. Miner, Robert Haggerty, Katie Nicole Brown

This study evaluated students’ (N = 65) reported knowledge, competence, and comfort in using foodservice equipment, as well as confidence in training others after completing one of the following interventions: 1) two food/nutrition courses, and foodservice supervised practice rotations, 2) equipment introduction, and competency exam, and 3) equipment training, practice lab, and competency exam. Foodservice operations and dietetics programs should consider implementing Intervention 3 because there was a significant increase in knowledge, competence, comfort, and confidence using equipment from pre- to post-intervention, it yielded the highest post-intervention scores, and most students received >86% for their actual skill.

This narrative study explored the perspectives of six Francophone African-born family members who have pre-school aged children attending early childhood care and education settings in the Little Senegal section of Harlem in New York City. It examined the personal experiences they reported regarding their own early language and literacy development, their descriptions of home factors that mediated their children’s language and literacy acquisition, and their reports of the ways in which they experienced the efforts of educators within early childhood care and education settings.
