Background: Many studies have examined the consequences of prolonged television viewing, but few studies have examined the psychological states that contribute to this behavior. In this study, we evaluated the construct and predictive validity of psychosocial correlates of television viewing in a population of African American (AA) breast cancer survivors (BCS).

Methods: AA BCS (N = 342, Mean age = 54 years) completed measures of decisional balance, self-efficacy, family support, and time spent watching television online. Exploratory structural equation modeling (ESEM) was used to examine the construct and predictive validity as well as the differential item functioning of the instruments …

Is Diet Selection By Greater Sage-Grouse Influenced By Biomass Availability Or Toxins?, Jacqueline Peña, Marcella Fremgen Apr 2016

Is Diet Selection By Greater Sage-Grouse Influenced By Biomass Availability Or Toxins?, Jacqueline Peña, Marcella Fremgen

McNair Scholars Research Journal

Foraging herbivores must meet nutritional requirements by not only finding enough plant biomass to consume, but also finding plants with high protein content and low concentrations of potentially toxic plant secondary metabolites (PSMs). Greater sage-grouse (Centrocercus urophasianus; hereafter, sage-grouse) are sagebrush obligate herbivores that consume relatively high concentrations of PSMs. To meet their nutritional needs and avoid ingesting high amounts of PSMs, sage-grouse may select species of sagebrush for food that have lower concentrations of PSMs than a more abundant species with higher concentration of PSMs. Diet selection by sage-grouse may also be driven by chemical factors at finer scales …

Traditional Fresh Markets And The Supermarket Revolution: A Case Study On Châu Long Market, Carly Giddings Apr 2016

Traditional Fresh Markets And The Supermarket Revolution: A Case Study On Châu Long Market, Carly Giddings

Independent Study Project (ISP) Collection

In many middle income countries throughout the world, yet particularly in Asia, public markets face pressure from the simultaneous forces of globalization, commercialization, and urbanization. One such country is Vietnam due to its rapid rates of urban growth since opening its doors to the global economy in 1986. In Hanoi, public markets face particularly intense pressure because the Hanoi People Committee’s Market Redevelopment Plan is systemically redeveloping its traditional fresh markets into commercial centers and building supermarkets and hypermarkets throughout the city. The purpose of this plan is to civilize the city and combat food safety concerns through modernizing retail …

Local Flavors: A Look At Farm To Table In Samoa, Emily Gove Apr 2016

Local Flavors: A Look At Farm To Table In Samoa, Emily Gove

Independent Study Project (ISP) Collection

With increased access to foreign markets, Samoa has become more dependent on food imports. Most of these products are packaged and preserved, and often lack nutritional benefits. Women in Business, a local organization, has developed a Farm to Table program to encourage buying local. The effectiveness of the program has not yet been determined, and this project seeks to gauge restaurant owners’ satisfaction with local food, as well as the challenges they face when buying local. Surveys were distributed to 53 restaurants in Apia, Samoa, at the consent of the restaurant managers, and eight surveys were conducted with various players …

The National Diabetes Prevention Program (DPP) led by the Centers for Disease Control and Prevention (CDC) is proven to prevent or delay the development of diabetes in individuals with prediabetes.

Objective: A continuing medical education (CME) activity was created to increase physician awareness of and referral to the DPP. The goal was to promote the DPP among first-line treatments for prediabetes.

Methods: The types and requirements …

Elasticity Of Food Demand By Outlet: Effects Of The Nutrition Labeling Provision Of The Affordable Care Act, Kevin Mcgee Apr 2016

Elasticity Of Food Demand By Outlet: Effects Of The Nutrition Labeling Provision Of The Affordable Care Act, Kevin Mcgee

Major Themes in Economics

Since 1984, the ratio of demand for food away from home to demand for food at home in the United States has increased significantly. The relative increase in the demand for food away from home may be a major contributing factor to the growing obesity problem in the United States. To address this problem, the government passed a law requiring restaurants to report caloric values on their menus. I estimate an almost ideal demand system to investigate whether the Nutritional Labeling Provision of the Affordable Care Act has been effective in increasing the demand for food at home relative to …

Effect Of Reduced Sodium Cheese On The Growth Of Pathogenic Bacteria And Inactivation Of Listeria Innocua Using Supercritical Fluid Extraction With Co2, Suyapa Padilla Antunez

Master's Theses

Listeria monocytogenes continues to challenge the dairy industry in causing post-process contamination of cheeses. To reduce risk of contamination, it is crucial to understand the growth and survival of pathogenic bacteria in cheese products and to develop post-process mitigation strategies. This study evaluated the fate of pathogens in reduced and regular sodium Mozzarella cheese, and the potential of Supercritical Fluid Extraction with CO2 (SFE) to reduce Listeria innocua on Mozzarella and Queso Fresco. The survival of L. monocytogenes, Salmonella, and E.coli O157:H7 (2-3 log CFU/g) in reduced sodium Mozzarella (1.62%), compared to regular sodium Mozzarella cheese (2.15%) …

Globalization Of The Food Industry: Transnational Food Corporations, The Spread Of Processed Food, And Their Implications For Food Security And Nutrition, Elizabeth Black

Independent Study Project (ISP) Collection

We are currently experiencing a significant shift in our world’s food systems and dietary patterns. Access, availability, and the quality of food are changing and the need for proper nutrition and food security has come to the forefront of the global health agenda. While globalization has fostered greater variety and access to food in many places; access to healthy, affordable food is not universal, leaving many populations buying cheaper food that has poor nutritional value. My purpose for this paper is to determine how the forces of globalization, the business practices of transnational food companies, and the prevalence of processed …

A Precarious Paradigm: Seeking Alternatives To Public-Private Partnerships In Health, A Case For The Code, Lena Mininberg Apr 2016

A Precarious Paradigm: Seeking Alternatives To Public-Private Partnerships In Health, A Case For The Code, Lena Mininberg

Independent Study Project (ISP) Collection

Background: Breastfeeding is an unparalleled source of nutrition for infants and young children and is recommended as the best practice universally by the World Health Organization (WHO). The benefits in human health and development that result from exclusive and sustained breastfeeding have enormous economic development potential. Because of the non-legally binding nature of the International Code of Marketing of Breastmilk Substitutes (the Code), and shifting socio-cultural norms, breastfeeding rates are at an alarming low. In order to progress towards the Sustainable Development Goals, breastfeeding practices must be protected, promoted, and supported worldwide.

Objective: This research paper explores implementing strong measures …

Both A Borrower And A Lender Be: A Look At The Local Economy And Credit Culture In The Tarap Valley In Dolpa, Nepal, Alexa Adams Apr 2016

Both A Borrower And A Lender Be: A Look At The Local Economy And Credit Culture In The Tarap Valley In Dolpa, Nepal, Alexa Adams

Independent Study Project (ISP) Collection

Being in such a remote location, the Tarap valley in the Dolpa district of Nepal has only recently experienced the influences of a modern, cash-based economy in full force. Historically, the economy of the Dolpo-pa in Dho Tarap was almost entirely rooted in agriculture, animal husbandry, barter, and exchange. While these themes are still incredibly important foundations of the economic practices and systems in the valley, the introduction of Yartsa gumbu, the highly valuable caterpillar fungus used in Chinese medicine, has transformed the local economy of the region and propelled it into the arms of a consumeristoriented and cash-based economy. …

Planning For Aging In Place: Stimulating A Market And Government Response, Mildred Warner, George C. Homsy, Lydia J. Morken Apr 2016

Planning For Aging In Place: Stimulating A Market And Government Response, Mildred Warner, George C. Homsy, Lydia J. Morken

Public Administration Faculty Scholarship

Using a national survey of local governments, we explore the drivers of planning and service delivery for older adults. Our regression models find that planning for aging and elder engagement are the most influential factors explaining the level of community services for elders. Services are lower in less dense suburban and rural communities, and market-based services are lower in communities with more senior poverty. This creates two challenges for planners: to help generate a market response for aging services, and to articulate the link between the built environment and services so communities that lack supportive physical environments can become better …

Mechanistic Binding Insights For 1-Deoxy-D-Xylulose-5-Phosphatesynthase, The Enzyme Catalyzing The First Reaction Of Isoprenoid Biosynthesis In The Malaria-Causing Protists, Plasmodium Falciparum And Plasmodium Vivax, Matthew R. Battistini, Christopher Shoji, Sumit Handa, Leonid Breydo, David J. Merkler

Chemistry Faculty Publications

We have successfully truncated and recombinantly-expressed 1-deoxy-D-xylulose-5-phosphate synthase (DXS) from both Plasmodium vivax and Plasmodium falciparum. We elucidated the order of substrate binding for both of these ThDP-dependent enzymes using steady-state kinetic analyses, dead-end inhibition, and intrinsic tryptophan fluorescence titrations. Both enzymes adhere to a random sequential mechanism with respect to binding of both substrates: pyruvate and D-glyceraldehyde-3-phosphate. These findings are in contrast to other ThDP-dependent enzymes, which exhibit classical ordered and/or ping-pong kinetic mechanisms. A better understanding of the kinetic mechanism for these two Plasmodial enzymes could aid in the development of novel DXS-specific inhibitors that might prove useful …

What’S The Buzz All About? Creating Understanding Of Colony Collapse Disorder, Kristen Marie Gosnell Apr 2016

What’S The Buzz All About? Creating Understanding Of Colony Collapse Disorder, Kristen Marie Gosnell

Honors Theses

Honey bees are perhaps humanity’s most important pollinators. Although they influence an incredible number of plants that we consume every day, their contributions to mankind’s diet are often overlooked. However, this may soon cease to be the case; if honey bees continue their downward descent and disappear, the foods they pollinate will too, leaving an enormous void in their wake. One of the leading causes of honey bee loss is Colony Collapse Disorder, a mysterious phenomenon in which hives suddenly collapse, seemingly without cause. This thesis asks several questions: What is CCD? What causes it? How can it be prevented? …

Training Traditional Birth Attendants In Sub-Saharan Africa, Lindsey J. Smith Apr 2016

Training Traditional Birth Attendants In Sub-Saharan Africa, Lindsey J. Smith

Senior Honors Theses

Even after many adjustments, recommended practice regarding traditional birth attendants (TBAs) and their contribution to lowering the maternal mortality rate (MMR) continues to be disputed among various stakeholders. Sub-Saharan Africa continues to see high maternal mortality rates, despite various attempts by the World Health Organization (WHO) and others at utilizing the formal health care system (Prata, et al., 2011). Considering all factors and variables behind the reason for this problem in Sub-Saharan African, it is reasonable to conclude that training traditional birth attendants (TBAs) in evidence-based practice, in conjunction with developing longer-term strategies, is an appropriate approach for the short …

Faith Community Nursing: Bridging The Gap Between Effective Healthcare And Biblical Ministry, Moriah Kenna Apr 2016

Faith Community Nursing: Bridging The Gap Between Effective Healthcare And Biblical Ministry, Moriah Kenna

Senior Honors Theses

The United States’ traditional health care system is unprepared to combat the growing rates of chronic illness in its population. With over 90% of those aged 66 years and older living with a chronic illness, an emphasis on preventative care must be enacted. Faith community nursing is a viable and effective option for long-term preventative management of chronic illnesses in the community. Faith community nursing fits both the mission of the Christian church and the needs of the healthcare community and greater awareness of this must be achieved in both the faith and healthcare sectors to bring about maximum results.

Strengths And Limitations Of Nutritional Policies In Public Schools In The United States, Brooke Ferenczy Apr 2016

Strengths And Limitations Of Nutritional Policies In Public Schools In The United States, Brooke Ferenczy

Senior Honors Theses

This thesis reviews the development of nutritional policies that have been created in the United States. As society’s understanding of nutrition has increased and as obesity has become a major problem in the country today, the federal government, state governments, and individual school districts have implemented policies to improve the availability of more nutritious food items in public schools. This thesis then analyzes the strengths and limitations of these policies and the effects they have caused in student populations in order to determine whether they have accomplished their intended goals.
