Improving The Utilization Of Dry Edible Beans In A Ready-To-Eat Snack Product By Extrusion Cooking, Franklin Sumargo
Improving The Utilization Of Dry Edible Beans In A Ready-To-Eat Snack Product By Extrusion Cooking, Franklin Sumargo
Department of Food Science and Technology: Dissertations, Theses, and Student Research
The growing snacking habit and steady increasing demand for healthy snacks have drastically changed the ready-to-eat snack market in recent years. While the current healthy, ready-to-eat snack products are still dominated by whole cereal grains, legumes, especially dry edible beans, have a high potential to emerge in nutritional, novel food. Dry edible beans (Phaseolus Vulgaris L) are not only economically valuable but also nutritionally important, since they are important sources of proteins, B vitamins, mineral elements, and soluble dietary fibers even when compared to whole grain cereals. Recent studies have shown extrusion processing is not only effective at producing …

Dietary Supplement Use And Nosebleeds In Hereditary Haemorrhagic Telangiectasia - An Observational Study., B Chamali, H Finnamore, R Manning, Ma Laffan, M Hickson, K Whelan, Cl Shovlin
School of Health Professions
Understanding potential provocations of haemorrhage is important in a range of clinical settings, and particularly for people with abnormal vasculature. Patients with hereditary haemorrhagic telangiectasia (HHT) can report haemorrhage from nasal telangiectasia in real time, and suggested dietary factors may precipitate nosebleeds. To examine further, nosebleed severity, dietary supplement use, and blood indices were evaluated in an unselected group of 50 HHT patients recruited from a specialist UK service. Using the validated Epistaxis Severity Score, nosebleed severity ranged from 0 to 9.1 out of 10 (median 3.9). Using a Food Frequency Questionnaire, 24/50 (48%) participants reported use of dietary supplements …

Gender Differences In Barriers To Colorectal Cancer Screening Among African American Adults In The Mid-South Of United States, Jason Robert Hodges
Gender Differences In Barriers To Colorectal Cancer Screening Among African American Adults In The Mid-South Of United States, Jason Robert Hodges
Electronic Theses and Dissertations Archive
Colorectal cancer (CRC)is the third most commonly diagnosed cancer and third leading cause of cancer-related mortality in theUnited States. While overall CRCrates have been in decline since the 1960s, these declines are not observed equally across all racial/ethinc groups. Specifically, African Americans exhibit disparities in CRCincidence, stage of diagnosis, and survival. Additionally, African Americans have lower rates of CRC screening uptake when compared to Whites. This health protective behavior has been proven to lower CRCmortality, so it is paramount we understand barriers to engagement in CRCscreening. The research literature provides some knowledge of commonly faced barriers, however, there is a …

Pregnancy And Childbirth Practices Among Immigrant Women From India: “Have A Healthy Baby”, Rama Cousik, M. Gail Hickey
Pregnancy And Childbirth Practices Among Immigrant Women From India: “Have A Healthy Baby”, Rama Cousik, M. Gail Hickey
The Qualitative Report
In India, practices relating to pregnancy, childbirth and child development have been rooted in cultural beliefs and traditions that are based on knowledge contained in ancient Indian texts. Many Indians residing across the globe continue to observe these practices. Some may find it challenging to do so when they are residing abroad, away from familiar surroundings and separated from their extended families. A small body of research exists that shows that migrant Indian women do observe traditional maternal practices based on cultural beliefs, but there is a need to learn more about how this knowledge is acquired, disseminated and preserved. …

Not Only An Athlete: A Curriculum For Athletes At Ncaa Institutions, Jamie Sawchuk
Counseling
Despite there being plenty of research regarding identity, athletic identity, and athlete transition, there is limited research on assisting athletes with blending their athletic identity with other roles in their life. Most retired athletes have difficulties letting go of their athletic identity, creating a new non-athletic identity and getting a job. Olympic committees, professional sport organizations, and collegiate athletics have created different transition programs for their athletes to aid them in transitioning to their life upon athletic retirement by helping them realize skills learned from sport are transferrable into the workforce and other areas of life. Researchers have found that …

Continuum Of A Declining Trend In Correct Self-Perception Of Body Weight Among American Adults, Amber Morgan
Continuum Of A Declining Trend In Correct Self-Perception Of Body Weight Among American Adults, Amber Morgan
GS4 Student Scholars Symposium
Background: Over the past few decades, the prevalence of obesity in the United States has steadily increased with the proportion of obese Americans projected to be about fifty percent in 2030. With more than half of adults being overweight or obese (OW/OB), an increasing number of adults failed to accurately perceive body weight, which may be a major barrier to weight loss strategies, thus, presenting a substantial challenge to prevention efforts. The objective of this study was to assess the dynamic trend of body weight related self-perception among American adults and provide recommendations for improving obesity prevention strategies.

Association Between Fruit And Vegetable Consumption And Sleep Quantity In Pregnant Women, Kassandra Snook
Association Between Fruit And Vegetable Consumption And Sleep Quantity In Pregnant Women, Kassandra Snook
GS4 Student Scholars Symposium
The National Sleep Foundation recommends an average sleep time duration of 7-9 hours per day for adults aged 18-64 years old. Unfortunately, women are prone to encounter sleep disruptions during pregnancy that can prevent them from the recommended amount of sleep. Poor sleep during pregnancy is associated with an increased risk for birth complications, including low birth weight and stillbirth. Studies have found that sleeping less and poor sleep quality is associated with lower consumption of fruits and vegetables and good sleep quality/adequate sleep is associated with increased fruit and vegetable consumption. The objective of this study was to determine …

Parental Influences On The Behavior Of A Juvenile Bornean Orangutan (Pongo Pygmaeus), Raechel Mcumber, Sarah Robarts, Gregory B. Cunningham
The Review: A Journal of Undergraduate Student Research
Here we discuss the influence of the mother and father on the behaviors of a juvenile Bornean Orangutan (Pongo pygmaeus). This species is known for being solitary and asocial, in that males and females do not live together, while living in their natural environment. However, adults are usually housed together in zoo settings. We observed a juvenile and both of her parents in their zoo enclosure and recorded the play and parentally influenced behaviors, such as swinging and eating, performed by the juvenile. It was found that the juvenile played and performed parentally influenced behaviors significantly more while in …

Social Norms: Understanding Community Perceptions Of Voluntary Services And Its Effect On Parental Engagement, Emily A. Stiles
University of Montana Conference on Undergraduate Research (UMCUR)
Home visiting services seek to promote maternal and child health through education, agency referrals, and interpersonal connection. These evidence-informed services are often voluntary, which poses significant challenges in terms of enrolling, engaging, and retaining clients. According to McCurdy and Daro (2001), attributes such as: client characteristics, health professional attributes, features of the agency, and the neighborhood acceptance of the program may influence a client's decision to enroll. Furthermore, the timing of engagement or contact affects the engagement of home visitors with clients. In addition, sociodemographic factors of: ethnicity, ages of parents and children involved, and educational attainment influence a client's …

Does Predation Influence The Seasonal And Diel Timing Of Moose Calving In Central Ontario, Canada?, Brent R. Patterson, Kenneth J. Mills, Kevin R. Middel, John F. Benson, Martyn E. Obbard
School of Natural Resources: Faculty Publications
Birth synchrony is well documented among ungulates and is hypothesised to maximize neonate survival, either by minimizing the risk of predation through predator swamping or by synchronising birthing with increased seasonal food availability. We used encapsulated vaginal implant transmitters to locate and capture neonatal moose calves and document the seasonal and diel timing of parturition in two adjacent study areas with different predation pressure in central Ontario, Canada. We tested the hypothesis that predation promotes earlier and more synchronous birth of moose calves. Across both areas, proportionately more births occurred during the afternoon and fewer than expected occurred overnight. Mean …

Three Ways In: Approaches To Teaching Visual Rhetoric Through Infographics Programs, Marisa Sandoval Lamb, Jenna Sheffield, Kristin Winet
English Faculty Publications
In this Kairos PraxisWiki webtext, we use Hill's three-part framework to address concerns like those espoused by Handa about rhetorical illiteracy in relationship to visual rhetoric and design, and we share three assignments of varying scope and sequence that respond to these challenges. Besides learning opportunities to explore and practice visual rhetoric, design, and writing, each assignment offers opportunities for students to explore Piktochart, a web-based drag-and-drop infographic program, which can be used to create infographics, posters, and presentations. Because of its drag-and-drop capabilities, our students generally find it easy to learn. With minimal guidance, students may learn program basics …

We report here the ~670 Mb genome assembly of the Asian seabass (Lates calcarifer), a tropical marine teleost. We used long-read sequencing augmented by transcriptomics, optical and genetic mapping along with shared synteny from closely related fish species to derive a chromosome-level assembly with a contig N50 size over 1 Mb and scaffold N50 size over 25 Mb that span ~90% of the genome. The population structure of L. calcarifer species complex was analyzed by re-sequencing 61 individuals representing various regions across the species’ native range. SNP analyses identified high levels of genetic diversity and confirmed earlier indications …
