Separation And Characterization Of Reconstituted Skim Milk Powder Treated With Mineral Chelators, Amy Kringle May 2016

Separation And Characterization Of Reconstituted Skim Milk Powder Treated With Mineral Chelators, Amy Kringle

Master's Theses

The proteins found in milk are largely important in the functionality of many dairy products and dairy processes. The casein micelle system in milk is a complex and highly studied system. The micelle is thought to be a sponge like structure containing four caseins, αs1, αs2, β, and κ casein, and bound together with colloidal calcium phosphate. When a chelating agent such as a citrate, phosphate, or polyphosphate are added to milk systems, the CCP is bound to the chelator and removed from the micelle. It has been shown through past research that the use of …

Effect Of Lactose Source, Lactose Level, And Type Of Emulsifying Salts On The Properties Of A Processed Cheese Product, Gabrielle Alyss Gunter May 2016

Effect Of Lactose Source, Lactose Level, And Type Of Emulsifying Salts On The Properties Of A Processed Cheese Product, Gabrielle Alyss Gunter

Master's Theses

Previous studies on the use of nonfat dry milk, whey protein concentrate 34 and lactose powders in processed cheeses or cheese analogs found that increasing the percentage of lactose was associated with an increase in browning and crystallization. There has been little work done of the effects of lactose in processed cheese functionality. Therefore, the objective of this research is to build on and understand the effects of lactose from by three commercially produced dairy powders (nonfat dry milk (NFDM), whey protein concentrate 34 (WPC), lactose) and two different emulsifying salts on properties of processed cheese. Processed cheeses were made …

Are We In The Clear? : A History Of Military Treatment Of Post-Traumatic Stress Disorder From The Civil War Until The Wars On Terror, Susanna O. Lee May 2016

Are We In The Clear? : A History Of Military Treatment Of Post-Traumatic Stress Disorder From The Civil War Until The Wars On Terror, Susanna O. Lee

Graduate Theses

Post-traumatic stress disorder is known as a common element of warfare. However, it has only gained significance during the last century. The Civil War was the first time that the military began to record soldiers who were diagnosed with “nostalgia.” With every conflict that followed, the name of the disorder changed. Along with changing the name, new treatments were implemented.

The goals of the paper are to show depictions of the treatment of post-traumatic stress disorder beginning with the Civil War until the present Afghan/Iraqi conflicts and how it was dealt with by military organizations. This paper will also cover …

Physical Activity Differences Related To Gender And Grade Level In Middle School Students, Casey Reeves May 2016

Physical Activity Differences Related To Gender And Grade Level In Middle School Students, Casey Reeves

Graduate Theses

In the last 35 years, the United States youth has experienced a significant rise in obesity levels, and a significant decline in physical activity levels (Centers for Disease Control and Prevention [CDC], 2015a; CDC, 2009). A variety of research has been conducted on the implications of decreasing levels of physical activity (PA). However, theories are mixed on when this rapid decline of participation in PA is occurring. The purpose of this study was twofold: 1) to identify a significant gap in PA levels between females and males and 2) to identify the age/grade in which the projected discrepancy develops. The …

Comparative Analysis Of Factors Associated With First‐Year Survival In Two Species Of Migratory Songbirds, Noah G. Perlut, Allan M. Strong May 2016

Comparative Analysis Of Factors Associated With First‐Year Survival In Two Species Of Migratory Songbirds, Noah G. Perlut, Allan M. Strong

Environmental Studies Faculty Publications

Our understanding of the full life cycle of most migratory birds remains limited. Estimates of survival rates, particularly for first‐year birds are notably lacking. This knowledge gap results in imprecise parameters in population models and limits our ability to fully understand life history trade‐offs. We used eleven years of field data to estimate first‐year apparent survival (φ1st) for two species of migratory grassland songbirds that breed in the same managed habitats but have substantially different migration distances. We used a suite of life‐history, habitat and individually‐based covariates to explore causes of variation in φ1st. The interaction …

Effect Of Peritoneal Dialysis On Weight Change In Pediatric Patients, Lindsey Belliveau May 2016

Effect Of Peritoneal Dialysis On Weight Change In Pediatric Patients, Lindsey Belliveau

Yale School of Medicine Physician Associate Program Theses

Obesity is associated with lower transplantation rate and higher mortality in pediatric end stage renal disease patients. Glucose-based peritoneal dialysis is the preferred method of dialysis for these patients, a therapy that can cause systemic glucose absorption. It is unknown whether this absorption leads to weight change in pediatric patients. We propose to examine whether Peritoneal Dialysis is associated with weight change in pediatric End Stage Renal Disease patients. We will prospectively observe a cohort of children aged 2-17 who are starting peritoneal dialysis. We will measure weight change after one year of dialysis, and compare these measurements to historical …

Iron Intake In Children With Attention-Deficit/Hyperactivity Disorder And Restless Legs Syndrome, Olivia Rojas May 2016

Iron Intake In Children With Attention-Deficit/Hyperactivity Disorder And Restless Legs Syndrome, Olivia Rojas

Yale School of Medicine Physician Associate Program Theses

Growing evidence supports an association between attention-deficit/hyperactivity disorder (ADHD) and restless legs syndrome (RLS) in children. Prior research suggests that in some patients iron deficiency is an underlying cause of pathological changes in the dopaminergic system of the brain that modulates these disorders. However, the underlying cause of such iron deficiency has not yet been identified. We propose to determine the prevalence of low serum ferritin levels, a marker of reduced iron stores, in children with comorbid ADHD and RLS, and if diet is associated with their diagnosis and observed blood iron levels. A case-control study will examine a sample …

Mindfulness Education For Stress Reduction In Nursing Students, Kathryn Kekenes Peterson May 2016

Mindfulness Education For Stress Reduction In Nursing Students, Kathryn Kekenes Peterson

Nursing Theses and Capstone Projects

Problem. The level of stress experienced by college students can be significant. It can be even more pronounced in nursing students as a result of the intense curriculum and clinical experiences. Stress can be the result of academic, personal, or interpersonal causes. It can affect physical, psychological, spiritual, and social well-being. Stress is not always avoidable but learning techniques to manage stress can improve overall well-being by decreasing the physical, psychological, spiritual, and social effects of stress. Learning to manage stress through holistic self-care with mindfulness stress reduction techniques could help alleviate the negative effects of stress, enabling the student …

Multiple Imputation When Rate Of Change Is The Outcome Of Interest, Manisha Desai, Aya A. Mitani, Susan W. Bryson, Thomas Robinson May 2016

Multiple Imputation When Rate Of Change Is The Outcome Of Interest, Manisha Desai, Aya A. Mitani, Susan W. Bryson, Thomas Robinson

Journal of Modern Applied Statistical Methods

Little research has been devoted to multiple imputation (MI) of derived variables. We investigated various MI approaches for the outcome, rate of change, when the analysis model is a two-stage linear regression. Our simulations showed that competitive approaches depended on the missing data mechanism and presence of auxiliary terms.

Humanity’S Capability Of Transcendence Through Artificial Intelligence, Zena Mccartney May 2016

Humanity’S Capability Of Transcendence Through Artificial Intelligence, Zena Mccartney

Capstone Projects and Master's Theses

In the 21st century artificial intelligence (AI) technologies such as robots, mind uploading and cyborgs have probed at these questions:

Who is in control the machine or human?

What is the purpose of autonomous robots to humanity?

If a machine can pass the Turing Test then is it appropriate to be in society acting on free will?

How would a robot understand how to make someone feel loved?

Do their deep expressions of understanding the human condition make them like us?

Once a human has a cyborg technology are they then human or machine?

How and why would we want …

Food Insecurity And Educational Attainment At The University Of Arkansas, Abigail Macdonald

School of Social Work Undergraduate Honors Theses

This study explores the relationship between food insecurity and educational attainment among Fulbright College of Arts and Science graduate and undergraduate students at the University of Arkansas. A quantitative descriptive survey design was used to collect data on this subject. Arkansas is one the most food insecure states in the country. Existing data suggests a strong correlation between food insecurity and low educational attainment among students in community college settings. However, little empirical research has been conducted to test the relationship between food insecurity and educational attainment among four-year college students. This study investigates that relationship at the University of …

Rekindling The Passion For Nursing, Susan M. Cannon May 2016

Rekindling The Passion For Nursing, Susan M. Cannon

Nursing Theses and Capstone Projects

Nurses often experience compassion fatigue and burnout when working in stressful environments. Nurses tend to put the needs of their patients above their own needs. It is imperative for the work environment to promote relaxation and restoration, to avert compassion fatigue and nursing burnout. All employees of the project director’s organization were encouraged to attend Caring for the Caregiver Day, a hospital-sponsored event which provided education and promoted self-help interventions aimed to decrease compassion fatigue and burnout. The event included aromatherapy, music therapy, art therapy, pet therapy, massage therapy, and education on compassion fatigue for nurses. In addition, the Progressive …

The Political Economy Of Wasted Food Policies In The United States And European Union: A Multi-Scale Analysis, Rebecca Miller May 2016

The Political Economy Of Wasted Food Policies In The United States And European Union: A Multi-Scale Analysis, Rebecca Miller

Sustainability and Social Justice

Between 33 and 40 percent of food produced is wasted while one quarter of the population of the United States and the European Union is food insecure (Gunders, 2012, p. 4). How is this problem addressed through policy in the United States and the European Union? Although there are non-governmental organizations working to redistribute food and educate consumers, a more comprehensive policy-based approach is needed to fully address this problem. Several cities and states in both the U.S. and E.U. have adopted policies before they were nationally or internationally implemented. These early adopter cases were examined here to determine best …

An Integrated Strategy For Strengthening Worcester's Regional Food System: Key Roles For Education And Information, Joel Simonson

Sustainability and Social Justice

Food security and access to healthy food are public health issues that continue to persist in the United States and are ones that are strongly influenced by social and environmental factors. In Worcester, Massachusetts there are many organizations that contribute to alleviating the resulting effects, but do not always have the capacity to reach full potential and expand upon current initiatives. Students can provide existing human resources and knowledge that would benefit all parties. This would allow for organizational capacity development, ultimately impacting local residents, and for students to gain deeper connections to the greater Worcester community while learning vital …
