Join us in the fight against overly processed foods—may the odds be ever in your flavor! In the winter of 2014, a team of students from Lib 322 “Wicked Problems of Sustainability” identified the food system and its impact on children as a wicked problem, initiated a community partnership at Black River Public School, and posited the development of an interdisciplinary, experiential project term course then designed by students in Lib 342 “Food Matters.” This new Black River course, “The Hungry Games,” will be piloted this spring to engage middle school students in experiential learning in order to foster understanding …

You Know, You Grow, Hannah J. Fernando, Madalyn Sienicki, Julia Dinverno, Brent M. Warren, Jennifer Scholl

LIB 322: Wicked Problems of Sustainability

As we have studied the nature of wicked problems and connected with local case studies, our team has come to the conclusion that in order for communities to grow and develop deeper connections, healthier neighborhoods, and happier residents, there must be inclusive dialogue and participatory action. Addressing a neighborhood’s nutritional needs is messy, involving complex social dynamics and disparate stakeholders. Through community connections and dialogic inquiry we have begun to recognize needs related to the local food system. We strive to empower residents to pursue self-directed, neighborhood oriented change. Our team first worked to develop a model of community engagement …

The Heartside Gleaning Initiative (HGI) is a Grand Rapids based non-profit organization that collects unsold produce from the city’s two farmers markets and distributes it to the low-income residents of the Heartside Neighborhood. Through their efforts they increase access to healthy and local foods as well as combat food waste in the Heartside Community. Seeing the value of this work, we, an interdisciplinary team of Grand Valley State University students, sought to further the mission of the HGI by focusing predominantly on two vital aspects of any non-profit business: promoting and funding. In the winter semester of 2015 we established …

LIB 322: Wicked Problems of Sustainability

The Heartside Gleaning Initiative (HGI), a local non-profit organization, is a powerful example of place-based social justice work that fosters both sustainable and healthy living within the Heartside neighborhood of Michigan’s second largest city, Grand Rapids. Since 2014 HGI has been utilizing a bottom-up approach by actively listening to its community members in order to cultivate radical change around the issue of food insecurity within the Heartside neighborhood. The Food Fighters, an interdisciplinary team of Grand Valley State University (GVSU) students enrolled in LIB322 “Wicked Problems of Sustainability” during the winter semester of 2015, were tasked to work with HGI …

Recognizing the dimensions and complexity of wicked problems, Phoenix Farms has decided to address the issue of sustainable illiteracy in Western Michigan. With a goal to work with local stakeholders, we have partnered with Sonder Farms in order to develop advertisements and classes aimed to raise awareness about, and interest in, sustainability. This partnership with Sonder Farms, a self-sustaining farm located in the Grand Rapids and Allendale communities, has given us the opportunity to put our skills, knowledge, and values to use in our local community. Sonder Farms practices conventional farming as well as aquaponics. Their hope is to target …

The American Diabetes Association (ADA) is an organization whose mission is to improve the lives of those affected by diabetes. This is done by funding research, raising awareness in the community, educating the public on the disease, and making resources available to those affected by diabetes. Being students of Grand Valley State University, we had the opportunity to collaborate with the West Michigan ADA to improve the lives of those with diabetes on the GVSU’s Allendale campus. To do this, we created a convenient way for those with diabetes to keep track of their carbohydrate intake by creating a guide …

Personal accounts addressing real-life experiences are a testament to humanity, and allow future generations to act and improve upon them. Currently, large cities are facing malnutrition and are often labeled “food deserts” (Walker et al., 2012). While restaurants and convenient stores are bountiful in large cities, the variety of food they offer is not. Access of West Michigan is an organization providing workshops, simulations, and programs to educate the general public on the importance of health and nutrition. In the present paper, we address the challenge to further educate and inspire community members to get involved and allow Access to …

The Exploration Of The Health Care Systems Of The United States And Belize Including A Cultural Analysis, Laura Hughes

Honors Projects

Health systems throughout the world may have a profoundly different, or extremely similar structure. A well-known, industrialized nation, the United States has an unusual system, which Shi and Singh (2008) describe as “unnecessarily fragmented” (p. 2). Highly unusual for a developed country, this system does not guarantee access to medical care for all of its citizens. On the other hand, a small Central American country more known as a vacation hotspot, Belize ensures health care for all inhabitants of this tropical nation. How can these major differences affect health outcomes? What could these two vastly different countries have in common …

The study tested for a statistically significant difference between graduation rates or types of school locales on the relationship score and the learning style score. The study also …

These regulations ensure students are offered certain food items, and the selection and consumption of these items are essential to track their progress and effectiveness. This study investigates whether production records are a feasible tool in tracking selection across time by comparing production records with direct observation of food selection in the lunchroom.

Methods: Food selection was measured through direct observation and production records for two consecutive weeks. The frequencies of daily items served were entered into Excel and each food item was coded …

Relactation In Emergencies, Ashley N. Franz

Master of Public Health Program Student Publications

Disaster situations in the United States are unique entities that require solutions which are well thought out, appropriate for the population and planned well in advance. Infant and young child feeding in emergencies is no exception. While in peacetime infants may be safely nourished with both breastmilk and infant formula, disaster situations often add a level of complexity to feeding with infant formula, including lack of access to potable water and ability to effectively sterilize feeding items. Such complexities, along with the important and undeniable fact that breastmilk is the ideal form of food for all babies (and especially in …
