Prevalence Of Escherichia Coli O157:H7 And Salmonella In Camels, Cattle, Goats, And Sheep Harvested For Meat In Riyadh, Joseph M. Bosilevac, Mustafa A. Gassem, Ibraheem A. Al Sheddy, Salah A. Almaiman, Ibrahim S. Al-Mohizea, Abdullah Alowaimer, Mohammad Koohmaraie
Roman L. Hruska U.S. Meat Animal Research Center: Reports
Escherichia coli O157:H7 and Salmonella are significant foodborne pathogens that can be found in the feces and on the hides of meat animals. When hides are removed during the harvest process, the carcass and subsequent meat products can become contaminated. Camels, cattle, sheep, and goats are harvested for meat in Riyadh, Saudi Arabia. The prevalence of E. coli O157:H7 and Salmonella are unknown in these animals, and it is assumed that if the animals carry the pathogens in their feces or on their hides, meat products are likely to become contaminated. To this end, a minimum of 206 samples …

Roman L. Hruska U.S. Meat Animal Research Center: Reports
Several antimicrobial compounds have been used in commercial meat processing plants for decontamination of pathogens on beef carcasses, but there are many commercially available, novel antimicrobial compounds that may be more effective and suitable for use in beef processing pathogen-reduction programs. Sixty-four prerigor beef flanks (cutaneous trunci) were used in a study to determine whether hypobromous acid, neutral acidified sodium chlorite, and two citric acid–based antimicrobial compounds effectively reduce seven Shiga toxin–producing Escherichia coli (STEC) serogroups and Salmonella on the surface of fresh beef. Two cocktail mixtures were inoculated onto prerigor beef flank surfaces. Cocktail mixture 1 was composed of …

Objective: To evaluate whether Nrf2 deficiency impacts insulin resistance and lipid accumulation in liver and white adipose tissue.
Methods: Lepob/ob mice (OB) with targeted Nrf2 deletion (OB‐Nrf2KO) were generated. Pathogenesis of obesity and type 2 diabetes was measured in C57BL/6J, Nrf2KO, OB, and OB‐Nrf2KO mice. Hepatic lipid content, lipid clearance, and very low‐density lipoprotein (VLDL) secretion were determined between OB and OB‐Nrf2KO mice.
Results: OB‐Nrf2KO mice exhibited decreased white adipose tissue mass and decreased adipogenic and lipogenic gene expression compared with OB mice. Nrf2 deficiency prolonged hyperglycemia in response to glucose challenge, which was paralleled by reduced insulin‐stimulated Akt …

Assessing Income Eligibility By Statewide Assistance: Staying Off The Cliff's Edge, 2015, Kevin M. Fitzpatrick
Poverty
In 2013, the United States Census Bureau reported over 45 million people were living in poverty. This number is calculated by the government based on the minimum income a family needs to cover the basic necessities of life. Poverty is often interpreted by the thresholds and levels determined on a yearly basis; thresholds are an exact dollar amount that indicates whether a family’s combined income is considered to be exceedingly poor. The Federal Poverty Level (FPL) is another way the federal government measures poverty in the United States. The FPL helps guide the development of financial eligibility for federally funded …

Ethical Perspectives Of Direct-To-Consumer Genetic Testing, Pawan Acharya, Rupesh Gautam
Journal of Health Ethics
Direct-to-consumer (DTC) genetic testing, which evolved from genomics is not free from controversies and ethical dilemmas. Conduction of genetic testing without direct communication between the users and certified medical professionals has aroused many ethical concerns. We discuss some ethical dilemmas surrounding DTC genetic testing in terms of quality assurance of the test, information communication process of the result, confidentiality of test result and the right to privacy, cost and price regulations, and user safety and harm mitigation. DTC genetic testing lies in the middle of a clash between liberal trade policies and state’s regulations as a case of extreme paternalism. …

Through this qualitative study, I want to add to the theoretical conversation about garden and farm education in schools and offer a starting point for a conversation surrounding care and gardening/farming in schools. The purpose of this study is to understand how teachers and students demonstrate care while implementing a garden and farm curriculum. Data collection included 15 participant interviews from students, staff, administrators, and school officials from a large public school district implementing garden and farm education lessons and observations of educators, farmers, and farm interns interacting with and instructing students in a weeklong Farm Camp environment. I utilized …
Sustainable Farming Versus Ethanol: A Comparison Of Energy Use, Brandon John Weiland
Sustainable Farming Versus Ethanol: A Comparison Of Energy Use, Brandon John Weiland
Electronic Theses and Dissertations
The subsidization of corn-ethanol has proven to not live up to the original promises made when it was promoted as gasoline additive. With research pointing to ethanol as a source of increased greenhouse gases emissions and other pollution while merely changing energy consumption, not decreasing it, an alternative that achieves the original goals of is sought. I propose that sustainable farming practices have the ability to decrease the United States’ dependence on fossil fuels while decreasing emissions and pollution related to farming. By looking at the adoption of 3 year rotations, fertilizer banding, and zero tillage farming in Iowa, Illinois, …

Engagement Management: A Case Study Of The Criteria And Processes Used To Identify, Evaluate, And Communicate Program Expectations For University Partnerships, Frederick E. Powers
Electronic Theses and Dissertations
Over the years, American public university outreach and engagement programs and activities have been defined and managed in many different ways and at varying levels within the institutions. Some universities clearly define complex outreach and engagement objectives and visions in their mission and throughout the fabric of the institution; while other university's outreach and engagement objectives and visions are less refined and not as evident to the casual observer (Bonnen, 1998). While much has been studied and developed in terms of establishing and managing a university's outreach activities, very little research has been conducted with respect to the social, procedural, …

Looking For Peace In The Australian National Curricula, Katerina Standish
Looking For Peace In The Australian National Curricula, Katerina Standish
Peace and Conflict Studies
Education can be a source of cultural attitudes—a transmission belt—a cultural institution that can dispense communal values and cultural ideals in both teaching and curriculum. This empirical mixed-methods study utilizes the methodologies of directive (qualitative) and summative (quantitative) content analysis to analyse the national curricular statements of Australia (Early Learning, Foundation to 10 and, Senior 11-12) to determine if three elements common in peace education programs appear: recognition of violence (direct, structural or cultural); addressing conflict nonviolently; and, creating the conditions of positive peace. It finds that despite a copious amount of violent content, overall, the curricula …
Shelf-Life Improvement Of Distillers Wet Grains With Solubles, Janie Denise Mcclurkin-Moore
Shelf-Life Improvement Of Distillers Wet Grains With Solubles, Janie Denise Mcclurkin-Moore
Open Access Dissertations
Distillers wet grains with solubles (DWGS) is a co-product of the ethanol production using the dry-grind process. DWG is widely used as a feed and supplemental protein source in North American cattle rations. However due to its short shelf-life, 3-4 days in the summer and 7-10 days in the winter, its use is limited to cattle feeding facilities within close proximity to an ethanol production plant. It is known that the shelf-life of DWGS in the summer diminishes drastically compared to DWGS in the winter. This effect is primarily due to temperature, which drives mold growth in high moisture feedstocks. …

Influence Of Cowpea (Vigna Unguiculata) Peptides On Insulin Resistance, Maria J. Barnes, F. O. Uruakpa, C. C. Udenigwe
College of Health and Human Services
Biomolecules from cowpea (Vigna unguiculata) can be beneficial in the reduction of hyperglycemia and strengthening the antioxidant status of individuals with diabetes. L6 rat skeletal muscles were exposed to various doses of cowpea peptides (0.1, 1, 10 and 100 ng) for 20 hours or insulin (100 nM) for 30 minutes. Proteins were isolated from the treated cells and analyzed by Western blot for the phosphorylation of Akt (a form of protein kinase B; PKB). Study findings show that the cowpea peptides can induce Akt phosphorylation in the cell culture. This indicates that administering the cowpea peptides to the skeletal muscle …

Developmental Ethanol Exposure Leads To Dysregulation Of Lipid Metabolism And Oxidative Stress In Drosophila, Theresa Logan-Garbisch, Anthony Bortolazzo, Peter Luu, Audrey Ford, David Do, Payam Khodabakhshi, Rachael French
Faculty Publications, Biological Sciences
Ethanol exposure during development causes an array of developmental abnormalities, both physiological and behavioral. In mammals, these abnormalities are collectively known as Fetal Alcohol Effects (FAE) or Fetal Alcohol Spectrum Disorder (FASD). We have established a Drosophila melanogaster model of FASD, and have previously shown that developmental ethanol exposure in flies leads to reduced expression of insulin like peptides (dILPs) and their receptor. In this work, we link that observation to dysregulation of fatty acid metabolism and lipid accumulation. Further, we show that developmental ethanol exposure in Drosophila causes oxidative stress, that this stress is a primary cause of the …

South Dakota Beef Report, 2015
Reports demonstrate that excess dietary protein significantly alters the ionic composition of uterine fluid during the luteal phase ultimately decreasing fertility. Since the early bovine embryo cannot adapt to changes in the uterine environment, changes in the concentrations of ions (pH) in the uterus can be unfavorable to embryo development and survival therefore having negative effects on fertility. In this study, heifers fed a high protein diet had elevated systemic concentrations of plasma urea nitrogen (PUN) compared to heifers fed a control diet. However, there was no deleterious effect on uterine pH or reproductive success. In summary, excess protein in …

Health and Nutritional Sciences Faculty Publications
Insufficient intake of fruits and vegetables has been recognized as a possible reason for dietary deficiencies that contribute to rising chronic health issues and medical costs. Based on data generated by the 2011 Behavioral Risk Factor Surveillance System (BRFSS), South Dakota was listed as one of five states with the lowest daily adult vegetable intake (1.5 times per day). To continue the effort to promote a healthy diet, three independent surveys were developed and distributed to consumers, grocers, and growers (producers) to investigate factors that affected low consumption of fruits and vegetables and to identify opportunities to increase future consumption. …
