Recent studies from the U.S. National Library of Medicine have shown that vitamin D deficiency is rapidly increasing among the adult population. Vitamin D deficiency has many effects on the body, such as bone pain and muscle weakness. A strong correlation has been noticed in humans with vitamin D deficiency and decreased exposure to natural sunlight, which is vital to absorb the vitamin D they have ingested. In 1983, a massive famine struck Ethiopia. Bred by a complex array of factors, thousands of men, women, and children experienced the painful effects of this humanitarian disaster as bodies weakened and widespread death took place. Throughout the famine, an unlikely partnership took place between the Communist leader Chairman Mengistu Haile Mariam and the staunchly anti-Communist White House.[1] The partnership allowed each nation to pursue strategic foreign policy goals; the United States sought to undermine the socialist PMGSE through humanitarian aid while Mengistu attempted to salvage his government’s international reputation. Objective: To determine how employees’ perceptions of the availability and price of fruits and vegetables within the work and surrounding environment correspond to the actual availability and price of fruits and vegetables and influence employees’ fruit and vegetable intakes.

Design: This study is a cross-sectional design comparing a survey of employees’ perceptions and behaviors and an environmental audit assessing the healthfulness of dining facilities on campus.

Setting: Syracuse University and the surrounding eating environment.

Participants: 130 Syracuse University employees.

Diets of children and adolescents are often lacking in key nutrients due to their low intakes of important food groups (e.g. fruits, vegetables, whole grains, and dairy). This study examined nutrients of concern for growing girls compared to dietary recommendations. Specifically iron and calcium were analyzed to determine the highest dietary sources of these micronutrients and the impact of supplementation on girls’ mean intake. This cross-sectional analysis used a subset of data from a longitudinal study of growth and development in active Caucasian girls (n=74). The objective of this Capstone is to study the healthfulness of the college dining environment and compare students’ perceptions of dining hall healthfulness and their behaviors by their dieting status.

The methodology used in this Capstone included the distribution of a healthy campus survey to a convenience sample of students at Syracuse University. This survey assessed health-oriented perceptions of the environment and behaviors, meal intentions, height, weight, desired weight status, and demographics. Mindful eating is characterized by being fully present in the moment and using all the senses in the body to taste and savor food. There is a growing interest in the practice of mindful eating as it is shown to be effective for weight management and improving diet. Also in general, studies have shown that vegetarians tend to be more conscious about their food choices. This project, a cross sectional study, examines whether vegetarians exhibit a higher index of mindful eating than non-vegetarians. “College Eats - Beyond Ramen” is a cooking show for college students. The mission of the show is to show college students that cooking healthy and delicious dishes is simple. The show is made possible through the completely student-run campus TV station (CitrusTV). The project consists of four seasons of the show with 55 episodes total. Episodes range anywhere from two to 15 minutes long and can all be found on YouTube and the campus television network (Orange Television Network). The show is pre-taped. Diaspora Times Two is a photographic journalistic study of Africans living in Guangzhou, China and Chinese in Accra, Ghana. The study focuses on two young men from the Gambia who are looking for low-wage work in Guangzhou and a house of five Chinese telecommunications workers employing Ghanaians in Accra. A micro approach was taken, seeking similarities and differences between the immigrants, making images that record details not found in a general photographic survey of the areas. Type 2 diabetes mellitus (T2DM) is having an enormous impact on the health of the nation. New cases of diabetes are diagnosed yearly across all states. Currently, 9.3% of the population has diabetes (Centers for Disease Control and Prevention {CDC}, 2014). While the prevalence of this disease is nationwide, it is not evenly distributed. Louisiana currently has a rate of 11.5%, with some parishes having rates of 14.5% (CDC, 2014). This rate places increased demands on healthcare and financial systems in Louisiana. The effects of pH, polymer concentration and metal ions feed concentration for four selected heavy metals, Zn(II), Pb(II), Cr(III) and Cr(VI), were investigated in this work; these metals were tested through a Polymer Enhanced Ultrafiltration (PEUF) system. Two conventional water-soluble polymers were selected, namely polyethylene glycol (PEG) and polyethyleneimine (PEI), and an unmodified starch as a biopolymer is proposed as an alternative binding reagent for four selected metal ions used for heavy metals’ removal from wastewater. Speciation profiles of Zn(II), Pb(II), Cr(III) and Cr(VI) species were obtained using available software to identify the soluble complexes of Zn(II), Pb(II),Cr(III), Cr(VI) ions …

Peanut allergies are a serious issue that must be monitored and treated effectively to avoid severe adverse effects and death. In the last decade, their incidence has increased significantly, due to indeterminate factors. Because people typically do not outgrow peanut allergies and the effects of exposure can be life-threatening, it is important that a cure or management method is developed and refined. Recent research regarding treatment for peanut allergies has focused on the use of immunotherapy, a process aimed at desensitizing children's immune systems so that they do not reject foods that contain peanuts. The purpose of this study is to determine the information given to BSW students about poverty measurement and alternative measures via standard social work textbooks. Poverty measurement is rarely discussed in the national conversation about poverty in the United States. The poverty rate, guidelines and threshold are regularly used by policy makers and communicated to the public, but the formulas behind the calculations of these measures are not well known. Induction Of Energy Expenditure By Sitagliptin Is Dependent On Glp-1 Receptor, Felicia Goldsmith, Michael J. Keenan, Anne M. Raggio, Xin Ye, Zheng Hao, Holiday Durham, James Geaghan, Weiping Jia, Roy J. Martin, Jianping Ye

Sitagliptin (SG) increases serum GLP-1 (Glucagon-like peptide-1) through inhibition of the hormone degradation. Resistant starch (RS) induces GLP-1 expression by stimulating L-cells in the intestine. Sitagliptin and resistant starch may have a synergistic interaction in the induction of GLP-1. This possibility was tested in current study in a mouse model of type 2 diabetes. Hyperglycemia was induced in the diet-induced obese mice by a signal injection of streptozotocin (STZ). Sitagliptin (0.4g/100g diet) was tested in the mice (n = 55) with dietary RS (HAM-RS2) at three dosages (0, 15, or 28g/100g diet). Energy and glucose metabolism were monitored in the …

Developmental environments influence many individual phenotypes. However, currently we have a limited understanding of how the developmental environment influences oxidative stress resistance phenotypes. Oxidative stress is defined as a physiological state during which the production of harmful free radicals exceeds the protective capabilities of antioxidants. Variations among adults in susceptibility to oxidative stress can have important consequences for life history strategies and fitness related traits. The public is often encouraged to engage in socially responsible behaviors for the good of society, sometimes on behalf of those most vulnerable; older adults are one such rapidly growing vulnerable population. Nationally policies trend toward helping older adults remain at home rather than entering skilled nursing facilities when they encounter difficulty looking after themselves due to failing health. Although community supports are available, many are unlikely to access them, due to the very nature of their problems, such as depression and dementia.
