Tensile Testing To Quantitate The Anisotropy And Strain Hardening Of Mozzarella Cheese, Ramona Bast, Prateek Sharma, Hannah K.B. Easton, Tzvetelin T. Dessev, Mita Lad, Peter A. Munro

We explored anisotropy of mozzarella cheese: its presence is debated in the literature. Tensile testing proved a good method because the location and mode of failure were clear. Mozzarella cheese cut direct from the block showed no significant anisotropy, though confocal microscopy showed good structure alignment at a microscale. Deliberately elongated mozzarella cheese showed strong anisotropy with tensile strength in the elongation or fibre direction ∼3.5× that perpendicular to the fibres. Temperature of elongation had a marked impact on anisotropy with maximum anisotropy after elongation at 70 °C. We suggest the disagreement on anisotropy in the literature is related to …

New Measures Of Economic Security And Development: Savings Goals For Short-Term And Long-Term Economic Needs, Yunju Nam, Yungsoo Lee, Shawn Mcmahon, Michael Sherraden

The long-term economic security and development of a family depend largely upon saving and asset-accumulation, yet most measures of economic well-being focus on short-term consumption needs. This study takes a broader view, developing precautionary, retirement, homeownership and education savings goals. Together these savings goals constitute a new set of asset-based measures of family financial well-being. Estimated savings needs depend upon family type and other assumptions, and we consider investment gains and differences in dollar values over time in our calculations. This study shows that families should save $155 to $572 every month to address all four savings needs. The number …

The impact of hazard events on human settlements reflects the complex interaction of social and physical systems that challenge the process of defining and operationalizing risks associated with environmental disasters. The objective of this research is to develop a model that examines the inter-relationships between social capital and livelihoods and to thereby estimate their impacts on levels of hazard risk. Social capital is embedded in social networks and institutional frameworks that determine the quantity and quality of resources and services available to people. From sediment transport in rivers to landslides, predictions of granular motion rely on a Mohr-Coulomb failure criterion parameterized by a friction angle. Measured friction angles are generally large for single grains, smaller for large numbers of grains, and no theory exists for intermediate numbers of grains. We propose that a continuum of friction angles exists between single-grain and bulk friction angles due to grain-to-grain force chains. Physical experiments, probabilistic modeling, and discrete element modeling demonstrate that friction angles decrease by up to 15° as the number of potentially mobile grains increases from 1 to ~20. Macroeconomic fluctuations in interest rates, exchange rates, and inflation can be considered sources of good or bad “luck” for corporate performance if management is unable to adjust operations to these fluctuations. Based on a sample of 2,091 US firms, we decompose the impacts of macroeconomic fluctuations on three measures of CEO compensation. Our study provides empirical support for the importance of considering macroeconomic fluctuations in designing CEO incentive schemes. It adds to the managerial power literature on moral hazard and CEO compensation by pinpointing the obvious risk that the CEO in an asymmetric and non-linear reward system will be inclined …

The DoD sets forth an objective to employ an active cyber defense capability to prevent intrusions onto DoD networks and systems. Intrusion Detection Systems (IDS) are a critical part of network defense architectures, but their alerts can be difficult to manage. This research applies Queuing Theory to the management of IDS alerts, seeking to answer how analysts and priority schemes effect alert processing performance. To characterize the effect of these two variables on queue wait times, a MATLAB simulation was developed to allow parametric analysis under two scenarios. Process control environments demand well informed high performing human monitors to maintain effectual control of multiple processes. Most research aims to satisfy this requirement through the evaluation of competing heuristic-based display design constructs. Contrary to that method, this study takes a novel approach by examining both factors internal and external to the human observer to identify where beneficial outcomes actually reside. External factors explore the underlying design construct attributes, while internal factors focus on the effect of operator task management strategy, age, and experience. Results from this study present several key findings relative to operator situation awareness, performance, and workload. …
