The amount and type of antioxidants present in raspberries is dependent upon cultivar, ripeness, and growing conditions. Previous research on raspberry jam has reported some color, antioxidant, and flavor loss after processing and storage, though it is unknown to what extent similar changes will occur in raspberries grown in Utah. Sugar concentration and heating temperature as well as storage time were evaluated in an effort to maximize color retention, flavor, antioxidant content, shelf life, and consumer acceptance of Utah-grown raspberry jam. Evaluation Of Hand-Held Meters For Determination Of Hemolymph Lactate And Protein Concentrations In Red Swamp Crayfish Procambarus Clarkii, Christopher P. Bonvillain, D. Allen Rutherford, William E. Kelso, Christopher C. Green

We evaluated the accuracy of an Accutrend® lactate meter and a Reichert® Vet 360 temperature compensated refractometer for determining red swamp crayfish Procambarus clarkii (Girard, 1852) hemolymph lactate and protein concentrations, with results compared to measurements obtained from spectrophotometric analyses. Results from the lactate meter (R2 = 0.926) and refractometer (R2 = 0.830) both demonstrated strong relationships with spectrophotometer measurements, indicating that these instruments provide rapid, reliable, and economical methods for determining crayfish hemolymph lactate and protein concentrations. The popularity of agritourism is growing nationally. Central to the success of any agritourism operation is effective marketing. Visit NJ Farms is an interactive website designed as a centralized marketing platform for New Jersey agritourism operators. The website was developed to provide farmers with an easy-to-use tool to enter farm information, agritourism activities, and special events in a searchable database of statewide agritourism activities. Individuals interested in visiting a farm are able to search for specific agritourism activities or browse special on-farm events. Website visitors can select farms of interest to visit and develop customized travel itineraries with driving directions.

The role of the public health nurse in responding to a tuberculosis (TB) outbreak is instrumental in controlling the disease and preventing further spread in a community. This paper focuses on the interventions carried out by public health nurses in Grand Forks, ND where a TB outbreak occurred from 20 IO until 2013 with a peak in cases identified in late 2012. The population affected had unstable housing, low socioeconomic status, and other risk factors for TB. The United States is abounding in the prevalence and incidence of avoidable chronic diseases, and high among these diseases is type 2 diabetes. Further, according to the National Institute of Health (NIH) Common Fund, 40% of harmful health behaviors is what contributes to chronic diseases, such as type 2 diabetes. Childhood obesity is on the rise in the United States, especially among the Southern states and in minority ethnic groups. This condition is a known contributor to many chronic diseases, such as diabetes and cardiovascular disease, which develop in early adulthood. The Marshallese people - whose population is higher in Northwest Arkansas than anywhere else in the contiguous United States - have a high incidence of obesity and diabetes. Additionally, the Hispanic population per capita in Northwest Arkansas is more than triple that of the state of Arkansas, and have comparable obesity rates to the Marshallese population. The Peace Garden at Illinois Wesleyan University (IWU), the organic garden at the small liberal-arts university in Bloomington, Illinois, is devoted to growing nutritious, pesticide-free food to be sold locally in an attempt to counterbalance the various food-related issues which stem from conventional food systems. Mushrooms, fungi with many nutritional benefits, are not currently produced by the Peace Garden. This thesis deals with cost of production for cellulosic energy crops of switchgrass, miscanthus, and energy sorghum. The first chapter explains the rationale for development of decision support software called Energy Crop Analysis & Planning (ENCAP) and Switchgrass Harvest Date, Yield, Nutrient Removal Estimator (SHYNE). The second chapter examines harvest date implications on yield, nutrient removal, opportunity cost of modified sale dates, and post-harvest storage losses. This harvest date analysis leads to a profit maximizing harvest date from the perspective of the producer. While this harvest date may be optimal for the producer, biorefineries may be interested in sourcing switchgrass …

We report results from economic experiments of decisions that are best described as petty larceny, with high school and college students who can anonymously steal real money from each other. Our design allows exogenous variation in the rewards of crime, and the penalty and probability of detection. We find that the probability of stealing is increasing in the amount of money that can be stolen, and that it is decreasing in the probability of getting caught and in the penalty for getting caught. Furthermore, the impact of the certainty of getting caught is larger when the penalty is bigger, and …

Fusarium wilt of watermelon, caused by Fusarium oxysporum f. sp. niveum , was first described in 1894 in South Carolina and Georgia and has become a limiting factor in watermelon production worldwide. In recent years, restriction on use of the soil fumigant methyl bromide and the recent development of more virulent races of Fusarium oxysporum f. sp. niveum has created a critical need for alternative management techniques. Peripheral vascular disease is a pathological disease state whereby the peripheral vascular system becomes progressively limited in its ability to adequately perfuse extremities despite increases in metabolic demand. One of the primary risk factors for development of peripheral disease is the Metabolic Syndrome. It is the presentation of three simultaneous comorbidities, with obesity being the most common denominator in most metabolic syndrome patients, but also including a pro-inflammatory state, pro-oxidant state, pro-thrombotic state, increased blood pressure, atherogenic dyslipidemia, or insulin resistance. Promoting Client Welfare And Preserving Autonomy: Ethical Treatment Of Eating Disorders, Julia E. Smith, Emily Michero, Kerrie R. Fineran
Michigan Journal of Counseling: Research, Theory and Practice
Counselors often experience an ethical dilemma when mandating treatment for clients with eating disorders. In this article, the authors will briefly discuss the characteristics of eating disorders, the impact of cognitive impairment on the decision to mandate treatment, and the ethical principles of autonomy, beneficence, and nonmalificence that counselors must consider when work-ing with clients from this population. To address ethical concerns, the authors will apply Welfel’s (2010) ethical decision-making model to a case involving a client with Anorexia Nervosa.

Ectotherms are known to alter the composition of the cell membrane in response to changes in environmental temperature. Tissue-specific fatty acid composition in the alewife (Alosa pseudoharengus) was examined in response to both warm and cold temperature challenges administered over an approximate one month period. Gill, muscle, and liver tissues were analyzed prior to the start of the temperature challenge (initial), following the temperature challenges (survivors), and on those fish that did not survive the temperature challenges (mortalities). Three studies were conducted to determine the effect of vacuum tumbling time on the processing characteristics of reduced sodium natural deli-style turkey breast. Production of sodium reduced natural deli-style turkey breast without phosphate is lower (P < 0.05) in texture and processing properties than deli-style turkey breast produced with phosphate. Reducing salt concentration to 1.0% produces natural deli-style turkey breast with less acceptable (P < 0.05) texture and processing characteristics compared to 1.5% or 2.0% added salt. Preblending was used to improve texture characteristics in reduced salt products. Control treatments had improved (P < 0.05) texture properties, decreased color values, …

Three experiments were conducted to determine the impact of development systems, maternal protein supplementation, and estrus synchronization systems on beef cattle. Experiment 1 evaluated the effects of winter supplementation on cow performance and the effects of post-weaning management on progeny. Late spring calving cows grazed dormant range or meadow over winter and received either supplementation or no supplementation. Steer and heifer progeny were weaned and placed on dormant meadow or fed hay ad libitum. One half of the steers were placed in the feedlot at the end of treatment and the other half grazed range over summer. Cow winter treatment …

Although there are many important intellectual property and public health developments in the United States, the domestic debate remains surprisingly disconnected from the international debate. To help bridge this disconnect, this Article discusses the interrelationship between intellectual property and public health in the context of communicable diseases. This type of disease is intentionally picked to highlight how developments abroad could easily affect what happens at home, and vice versa.

Liriodendron tulipifera L., commonly known as yellow-poplar, is a fast-growing hardwood tree species with great ecological and economic value and is native to eastern North America. Liriodendron occupies an important phylogenetic position as a basal angiosperm and has been used in studies of the evolution of flowering plants. Genomic resources, such as Expressed Sequence Taq (EST) databases and Bacterial Artificial Chromosome (BAC) libraries, have been developed for this species. Waterlogging is caused when water stays superficially in the soil for an extended period of time, creating an anaerobic environment which decreases plant growth and grain yield at maturity. Despite the impact of waterlogging on wheat production both globally and in the southeastern U.S., very little is known about the genetic control of waterlogging tolerance in wheat. This project examined the link between race and self-efficacy. Self-efficacy pertains to an individual’s confidence in ability to complete or engage in a particular task or activity (Bandura, 1986). Prior research shows that self-efficacy has a great influence on exercise initiation and adherence (Bandura, 1986; Dishman, 1982; Rodgers and Sullivan, 2001). Research also supports that Caucasians are more likely to participate in exercise than African Americans (Centers for Disease Control and Prevention, 2000).
Participants included 51 females, 31 Caucasians and 20 African Americans, between the ages of 18 and 50 years old. The women were recruited from local fitness gyms, …

The food industry has become increasingly focused on healthier items. Fried foods especially are actively pursuing non-fried alternatives to attract health conscience consumers. This study investigated the bake-only chicken nugget formulation in attempts to provide characteristics of fried items. Starch was hydrolyzed by amyloglucosidase to create a porous structure that had the ability to absorb oil. Oil was plated into the enzyme-treated starch and blended into nugget formulation, and the coated nuggets were steam-baked until fully cooked. The enzyme-treated starches showed a decrease in gelatinization range and pasting viscosities for all starch types. The addition of oil-plated enzyme modified starch …
