Characteristics Of Vacuum Freeze Drying With Utilization Of Internal Cooling And Condenser Waste Heat For Sublimation, Muhammad Idrus Alhamid, Nasruddin Yusuf, Indra Teuku Meurah Mahlia, Engkos Ahmad Kosasih, Muhamad Yulianto, Rio Ricardi

Makara Journal of Technology

Vacuum freeze drying is an excellent drying method, but it is very energy-intensive because a relatively long drying time is required. This research investigates the utilization of condenser waste heat for sublimation as a way of accelerating the drying rate. In addition, it also investigates the effect of internal cooling combined with vacuum cooling in the pressure reduction process. Jelly fish tentacles were used as the specimen, with different configurations for condenser heat waste and internal cooling valve opening. The results show that heating with condenser heat waste can accelerate the drying rate up to 0.0035 kg/m2.s. In addition, pre-freezing …

Studies On Phaseolus Vulgaris L. Var. Great Northern Bean For Utilization In Food Processing, Hui Wang Aug 2013

Studies On Phaseolus Vulgaris L. Var. Great Northern Bean For Utilization In Food Processing, Hui Wang

Department of Food Science and Technology: Dissertations, Theses, and Student Research

Dry bean is an underutilized crop with remarkable nutritional quality. Utilization of dry beans, in the food industry, would considerably improve the nutritional intake in the population. In addition, being a readily available commodity all over the world, dry beans could make a huge economic impact on farmers and rural communities, where they are grown. To improve the use of dry beans by the food industry, much research needs to be done in order to fulfill the current limited knowledge of the functionalities of bean components and bean related product processing technologies. This research covers two critical areas with gaps …

Fungal Foam Tested Against Avocado Threat, Jan Suszkiw Aug 2013

Fungal Foam Tested Against Avocado Threat, Jan Suszkiw

Agricultural Research Magazine

Avocados aren’t just nutritional powerhouses; they’re also the chief ingredient in such party favorites as guacamole dip.

More than 99 percent of the nation’s $322 million avocado crop is grown in south Florida and southern California (less than 1 percent is produced in Hawaii), which makes recent infestations of groves there by invasive, wood-boring ambrosia beetles so alarming. A host of counter strategies are in the works, including a biobased foam originally developed by Agricultural Research Service scientists for use against Formosan subterranean termites.

In Miami-Dade County, Florida, avocado growers are contending with Xyleborus glabratus, the redbay ambrosia beetle. …

New Strategies To Thwart Pecan Scab, Sharon Durham Aug 2013

New Strategies To Thwart Pecan Scab, Sharon Durham

Agricultural Research Magazine

Pecans are great for eating out of the shell or in a myriad of recipes. But abundant pickings of high-quality nuts are only possible if the tree escapes the devastating disease called “pecan scab.” Caused by the fungus Fusicladium effusum, it is the most destructive disease of pecan in the southeastern United States. When scab is severe, most often when rainfall is above average, nut size is reduced, and total crop loss might occur.

Scientists at the Southeastern Fruit and Tree Nut Research Laboratory in Byron, Georgia, are working to help pecan growers mitigate the effect of pecan scab. …

Effects Of Composition And Separation Techniques On The Structure Of Aggregates In The Milk Fat Globular Membrane, Tristan Dilbeck, Jose Ibarra, Rafael Jimenez-Flores, Tracey Nguyen

STAR Program Research Presentations

The milk fat globular membrane (MFGM) is a complex structure composed mainly of phospholipids, sphingolipids, and membrane specific proteins. The composition and size of the MFGM differs based on the isolation, purification, and techniques used in analysis of the membrane as well as physiological, chemical, and mechanical factors present during its creation. The purpose of this experiment is to analyze the effects of separation techniques and composition of lipids and proteins on the structure of aggregates in the MFGM. The aggregates found in whey protein isolate (95% pure whey protein), whey buttermilk (whey protein and phospholipids), and sweet buttermilk (whey …

The Effects Of Microfluidization And Homogenization On The Composition And Structure Of Liposomal Aggregates From Whey Buttermilk And Commercial Buttermilk, Tracey Mai T. Nguyen Aug 2013

The Effects Of Microfluidization And Homogenization On The Composition And Structure Of Liposomal Aggregates From Whey Buttermilk And Commercial Buttermilk, Tracey Mai T. Nguyen

Master's Theses

Milk derived ingredients from the production of cheese and butter can be used as vehicles for nutrients. Buttermilk is a nutritious product of milk that comes from the churning of cream into butter. One of the advantages of buttermilk is that it is enriched in milk fat globule components, such as phospholipids and forms emulsions with fat when treated with high shear. The objective of this work was to explore the effects of shear on regular buttermilk and whey buttermilk in terms of liposomal aggregate size and chemical composition. The effects of microfluidization at 2000 psi and homogenization at 2000 …

The Road To Lingshed: Manufactured Isolation And Experienced Mobility In Ladakh, Jonathan P. Demenge Aug 2013

The Road To Lingshed: Manufactured Isolation And Experienced Mobility In Ladakh, Jonathan P. Demenge

HIMALAYA, the Journal of the Association for Nepal and Himalayan Studies

The article deals with the political ecology of road construction in Ladakh, North India. It considers the way humans exploit and transform the environment through social and political arrangements and for purposes that are socially and culturally mediated (Nyerges 1997).1 Roads – as “socionature,” part social, part natural (Swyngedouw 2003 following Lefebvre)2 – are an integral part of this environment; and roads in turn affect people, influence the way they move, and what they do. The article is based on ethnographic fieldwork conducted in Ladakh between 2006 and 2009 along the future Zanskar Highway, a trans-Himalayan road that has been …

Childhood obesity is a growing problem. As more researchers become involved in the study of parenting influences on childhood obesity, there appears to be a lack of agreement regarding the most important parenting constructs of interest, definitions of those constructs, and measurement of those constructs in a consistent manner across studies. This article aims to summarize findings from a working group that convened specifically to discuss measurement issues related to parental influences on childhood obesity. Six subgroups were formed to address key measurement issues. The conceptualization subgroup proposed to define and distinguish constructs of general parenting styles, feeding styles, and …

Finding Their Way: Teacher Journeys Toward Culturally Responsive Pedagogy, Krista Keogh Aug 2013

Finding Their Way: Teacher Journeys Toward Culturally Responsive Pedagogy, Krista Keogh

Electronic Theses and Dissertations

Hawley & Nieto (2010) indicate that students’ race and ethnicity influence teaching and learning in two important ways: how students respond to instruction and curriculum, and teachers' assumptions about how students learn and how much students are capable of learning. Research has indicated that the most significant factor in student success is the classroom teacher (Goldhaber & Brewer, 1997; Gordon, Kane, & Staiger, 2006; Jordan, Mendro, & Weerasinghe, 1997; Marzano, 2007; Nye, Konstantopolous, & Hedges, 2004; Rivkin, Hanushek, &Kain, 2002; Rockoff, 2004; Rowan, Correnti, & Miller, 2002). Teacher professional development regarding culturally responsive pedagogy has been promoted to help teachers …

Since the first reported cases of ducks infected with a previously unknown flavivirus in eastern China in April 2010, the virus, provisionally designated Duck Tembusu Virus (DTMUV), has spread widely in domestic ducks in China and caused significant economic losses to poultry industry. In this study, we examined in detail structural, antigenic, and evolutionary properties of envelope (E) proteins of six DTMUV isolates spanning 2010–2012, each being isolated from individual farms with different geographical locations where disease outbreaks were documented. Structural analysis showed that E proteins of DTMUV and its closely related flavivirus (Japanese Encephalitis Virus) shared a conserved array …

Overcoming Barriers To Local Food Access: A Case Study, Brittany Ryan Aug 2013

Overcoming Barriers To Local Food Access: A Case Study, Brittany Ryan

Masters Theses & Specialist Projects

This thesis focuses on the idea that food insecurity and access are real issues in the lives of many Americans. Simply stated, food insecurity is when a person does not have enough food to eat or does now know where his/her next meal is coming from. More importantly when looking at food insecurity is the realization that healthy, local food access is even more prevalent an issue – with increasingly more under-resourced individuals and families being food insecure and unhealthy at the same time. This thesis includes a literature review on diet and nutrition in the United States, a chapter …

Examining The Link Between Personality And Laterality In A Feral Guppy Poecilia Reticulata Population, Eleanor Irving, Culum Brown Aug 2013

Examining The Link Between Personality And Laterality In A Feral Guppy Poecilia Reticulata Population, Eleanor Irving, Culum Brown

Sentience Collection

This study examined whether variation in the strength and direction of lateralization in a detour task was linked with variation in three common personality measurements: boldness, activity and sociability, in a population of wild guppies Poecilia reticulata. Additionally, the aim was to determine whether any consistent correlations between these behavioural traits, known as behavioural syndromes, were present in the study population. The results revealed that all three personality traits were highly repeatable over time in both sexes. Evidence of a complex syndrome in the form of a correlation between boldness, sociability and activity was found; however, this relationship was only …

Phylogenetic Portrait Of The Saccharomyces Cerevisiae Functional Genome, Patrick A. Gibney, Mark J. Hickman, Patrick H. Bradley, John C. Matese, David Botstein

College of Science & Mathematics Departmental Research

The genome of budding yeast (Saccharomyces cerevisiae) contains approximately 5800 protein-encoding genes, the majority of which are associated with some known biological function. Yet the extent of amino acid sequence conservation of these genes over all phyla has only been partially examined. Here we provide a more comprehensive overview and visualization of the conservation of yeast genes and a means for browsing and exploring the data in detail, down to the individual yeast gene, at http://yeast-phylogroups.princeton.edu. We used data from the OrthoMCL database, which has defined orthologs from approximately 150 completely sequenced genomes, including diverse representatives of …

Overweight And Obesity: Can We Reconcile Evidence About Supermarkets And Fast Food Retailers For Public Health Policy?, Deborah Viola, Peter S. Arno, Andrew R. Maroko, Clyde B. Schechter, Nancy Sohler, Andrew Rundle, Kathryn M. Neckerman, Juliana Maantay

NYMC Faculty Publications

The aim of this study is to determine whether access to fast food outlets and supermarkets is associated with overweight and obesity in New York City neighborhoods. We use a Bayesian ecologic approach for spatial prediction. Consistent with prior research, we find no association between fast food density and overweight or obesity. Consistent with prior research, we find that supermarket access has a salutary impact on overweight and obesity. Given the lack of empirical evidence linking fast food retailers with adverse health outcomes, policymakers should be encouraged to adopt policies that incentivize the establishment of supermarkets and the modification of …
