School of Nursing and Midwifery
Background: Exercise during hemodialysis treatments improves physical function, markers of cardiovascular disease and quality of life. However, exercise programs are not a part of standard therapy in the vast majority of hemodialysis clinics internationally. Hemodialysis unit-based accredited exercise physiologists may contribute to an increased intradialytic exercise uptake and improved physical function. Methods and design: This is a stepped wedge cluster randomised controlled trial design. A total of 180 participants will be recruited from 15 community satellite hemodialysis clinics in a large metropolitan Australian city. Each clinic will represent a cluster unit. The stepped wedge design will consist of three groups …

Anthropology Faculty Publications and Presentations
This article provides an overview of the diverse plant resource management strategies of First Nations of British Columbia. Management practices range from relatively large-scale (geographically) and longterm activities – such as the use of fire to clear prairies and subalpine meadows – to very focused actions, such as the pruning of individual shrubs. We describe plant resource management practices and the diverse methods used to identify them, and focus on three case studies to augment this description. These case studies exemplify the range of plants and ecosystems that were managed as well as the combinations of strategies and outcomes encompassed …

Voices From The Table: Assessing The Dynamic Cultures Of The Food Insecure And The Food Secure, Abigail Maurer
Voices From The Table: Assessing The Dynamic Cultures Of The Food Insecure And The Food Secure, Abigail Maurer
The Journal of Purdue Undergraduate Research
Food insecurity rates continue to rise in the United States, which creates a greater disparity between those who are food secure and those who are food insecure. Existing literature indicates that such a disparity is affected directly and indirectly through cultural, socioeconomic, and geographic factors.
The objectives of this project were designed to place culture as a central construct for understanding food insecurity and security. The objectives include (1) identifying common attitudes, beliefs, values, and patterns of participants’ food culture, whether food insecure or secure; (2) gaining a deeper understanding of the unique cultures that exist within food secure and …
The Influence Of Parental Aspirations, Attitudes, And Engagement On Children's Very Low Food Security, Elizabeth T. Powers
The Influence Of Parental Aspirations, Attitudes, And Engagement On Children's Very Low Food Security, Elizabeth T. Powers
University of Kentucky Center for Poverty Research Discussion Paper Series
Survey of Income and Program Participation data are used to investigate the relationship between parenting and children’s very low food security. Parenting is characterized along five domains (emotional outlook, support, education desires, activities with the child excluding meals, and television viewing rules). Food security definitions are obtained from questions in a special SIPP module that are based on the USDA’s core food security module. Graphical evidence indicates that parenting patterns differ distinctly for households experiencing various levels of food insecurity. Descriptive regression evidence suggests that some of the parenting attributes are significantly associated with children’s food insecurity, even controlling for …
Risk And Protective Factors Associated With Prevalence Of Vlfs In Children Among Children Of Foreign-Born Mothers, John Cook
University of Kentucky Center for Poverty Research Discussion Paper Series
This research examined VLFS in children among households with foreign-born (FB) mothers compared to US-born mothers through three research questions: Is mother’s foreign-born status (FBS) associated with VLFS in children, and can association be explained by mothers’ socio-demographic characteristics? Are FB mothers more or less likely to receive nutrition or non-nutrition assistance benefits, or work for pay than US-born mothers? Do mothers’ FBS, or protective/risk factors associated with FBS, modify associations of negative economic shocks and hardships with VLFS in children? Data are on approximately 44,000 mother-child (ages<48 Mos.) dyads collected from household surveys administered under a "sentinel surveillance" system over 1998-2012 at teaching hospitals and clinics in seven US cities. Bivariate and multivariate logistic regression models tested study hypotheses. Mothers' FBS is strongly positively associated with VLFS in children after controlling for available risk and protective factors. FB mothers are less likely to receive SNAP and non-nutrition assistance (TANF, LIHEAP or housing subsidies), but more likely to receive WIC and to be employed than US-born mothers. FB mothers are no more likely to report negative reasons for not receiving SNAP or TANF, or losing jobs or decreasing work hours than US-born, and reported "immigration concerns" rarely. No need/chose not to participate are most frequently reported reasons for not receiving SNAP and TANF; pregnancy/maternity leave and "market conditions" for lost jobs and decreased work hours. Economic shocks and hardships are positively associated with VLFS in children, but Mothers' FBS does not interact with shocks and hardships to modify those associations.

Food Insecurity During Childhood: Understanding Persistence And Change Using Linked Current Population Survey Data, Sheela Kennedy, Catherine A. Fitch, John Robert Warren, Julia A. Rivera Drew
University of Kentucky Center for Poverty Research Discussion Paper Series
Our paper examines the prevalence and determinants of children’s transitions into and out of food insecurity since 2001. We use longitudinally linked data from the Food Security Supplements to the Current Population Surveys to estimate one-year transition probabilities of entry and exit from food insecurity. Our results indicate that child hunger is typically short-lived, but children experiencing very low food security frequently experience multiple consecutive years of food insecurity. We demonstrate large demographic and socioeconomic differences in rates of entry into very low food security and persistence in children's food insecurity. Income and employment shocks are important predictors of child …

Use Of Alternative Financial Services And Childhood Food Insecurity, Katie Fitzpatrick
University of Kentucky Center for Poverty Research Discussion Paper Series
Low- and moderate-income (LMI) households with children often face considerable difficulties in ensuring enough financial resources for an adequate diet. This project investigates the use of financial services and other financial decisions parents make that may affect the risk of very low food security and food insecurity of children. With households in both the December 2008 Current Population Survey (CPS) Food Security Supplement and the January 2009 CPS Unbanked and Underbanked Supplement, the project studies the relationship between bank account ownership, use of alternative financial service (AFS) providers, the organization of household finances, and the food security of children. Both …

Effect Of Selenium On The Expression Of The Androgen Receptor And Nuclear Factor Kappa-B In Human Prostate Cancer Cells, Daniel Tandberg, Dr. Merrill J. Christensen
Effect Of Selenium On The Expression Of The Androgen Receptor And Nuclear Factor Kappa-B In Human Prostate Cancer Cells, Daniel Tandberg, Dr. Merrill J. Christensen
Journal of Undergraduate Research
Selenium has been established as a promising chemopreventive element for prostate cancer. Several different mechanisms have been studied to delineate selenium’s anti-cancer effect, but the exact target and mechanism has yet to be clearly defined. Previous studies have established an inhibitory relationship between the nuclear factor kappa B (NF-κB) and selenium, as well as the Androgen Receptor (AR) and selenium in human LNCap cells. Both NF-κB and AR are constituently active during prostate cancer development, and their deactivation by selenium might be one of the mechanisms by which selenium acts as a chemopreventative agent. The purpose of our research is …
The Derivatives Of Resveratrol And Prostate Cancer, Dallin Snow, Dr. Merrill Christensen
The Derivatives Of Resveratrol And Prostate Cancer, Dallin Snow, Dr. Merrill Christensen
Journal of Undergraduate Research
Resveratrol has been shown to be a very effective anticarcinogenic compound, in addition to its anti-viral, anti-aging, anti-inflammatory, and life prolonging effects. Resveratrol binds the estrogen receptor beta which in turn down regulates the androgen receptor, which is active in prostate cancer. Past studies of the effects of resveratrol on human prostate cancer cells have shown that it increases the rate of apoptosis and decreases proliferation in a dose and time dependent manner (Benitez, 2007). Also, a 2004 study exploring the absorption and metabolism of resveratrol in humans indicated that it is metabolized at a rapid rate by humans. It …
Identification Of Genes Related To Saponin Synthesis In Chenopodium Quinoa, Chris Nye, Dr. Jeff Maughan
Identification Of Genes Related To Saponin Synthesis In Chenopodium Quinoa, Chris Nye, Dr. Jeff Maughan
Journal of Undergraduate Research
Chenopodium quinoa, commonly known as quinoa, is a vital crop to the subsistence farmers of the Altiplano region of South America. Quinoa has several unique characteristics which contribute to its ability to grow in a variety of harsh conditions found in the high altitudes and heat of South America. Quinoa has high drought tolerance, salt tolerance, as well as a natural resistance to birds and other pests. This protection comes from a coating of a wax-like substance, called saponin, found on the surface of quinoa seeds (Ward, 2001).

Project Sun Bear Nutrition, Alicia Anderson
Journal of Undergraduate Research
Sun bears (Helarctos malayanus) are a critically endangered species. In this study, we will test stable isotope levels of D/H, 18O/16O, and 34S/32S that are assimilated in sun bear hair, feces, and urine to determine if consumption of mealworms, the larval stage of Tenebrio molitor, or house crickets, Achetus domesticus, can be differentiated isotopically by measuring sulfur, oxygen, and hydrogen isotopes in the bear’s substrates. We started by collecting food and hair samples from the different bears in the study in order to establish a baseline isotope ratio that we can compare with our future studies. In order to acquire …

Saponin Microarray, Jimena B. Alvarez, Dr. P. Jeff Maughan
Journal of Undergraduate Research
Quinoa (Chenopodium quinoa Willd) is an important crop originally from the Andes of South America. Quinoa grows well in high altitude and high saline conditions, for which it is used as a substantial food source by the farmers of the Altiplano (high plains) in Peru, Bolivia, and Ecuador. Quinoa has great nutritional value, as its seeds contain high quality protein in vast amounts and other nutrients such as carbohydrates, lipids, and minerals1. However, quinoa has a seed coat with high levels of saponin that limits its nutritional uptake in humans. In addition, saponins are bitter-tasting compounds, thus making quinoa unpalatable. …

Rice And Magic: A Cultural History From The Precolonial World To The Present, Filomeno V.; Aguilar Jr.
Rice And Magic: A Cultural History From The Precolonial World To The Present, Filomeno V.; Aguilar Jr.
Philippine Studies: Historical and Ethnographic Viewpoints
Beliefs in rice spirits were integral to the magical worldview of the precolonial inhabitants of these islands. Under Spanish colonialism, rice became a staple but it underwent disenchantment and symbolic marginality. By the 1870s rice production fell short relative to demand. Twentieth-century initiatives to address persistent shortages culminated in the 1960s Green Revolution, which further altered the rice plant and ushered in the age of practicality. Nonetheless, because rice production cannot be fully controlled, farmers still deploy culturally meaningful strategies to deal with uncertainties. The old meanings of rice for commensality have also proven resilient and reveal peculiarly Filipino ways. Keywords: …

Investigation Of The Structure Of Quinoa Saponins By Hplc And Mass-Spec, Samuel Swainhart, Dr. Steve Wood
Journal of Undergraduate Research
Quinoa is a grain grown mainly by Natives in diverse areas throughout Latin America that is considered by many nutritional scientists as possibly the most nourishing grain available. Its contents include high levels of protein, an exceptional composition of amino acids, and many carbohydrates. Unfortunately, quinoa is very climate sensitive, and currently can only be grown in certain areas of the world, due to a low tolerance for intense heat. For this reason, quinoa is not grown everywhere and its annual yields are nowhere near the enormous quantities of rice and grain harvested annually. There are many different known varieties …

Polydnaviral Ankyrin Proteins Aid Parasitic Wasp Survival By Coordinate And Selective Inhibition Of Hematopoietic And Immune Nf-Kappa B Signaling In Insect Hosts, Gwenaelle Gueguen, Marta E. Kalamarz, Johnny Ramroop, Jeffrey Uribe, Shubha Govind
Publications and Research
Polydnaviruses are mutualists of their parasitoid wasps and express genes in immune cells of their Lepidopteran hosts. Polydnaviral genomes carry multiple copies of viral ankyrins or vankyrins. Vankyrin proteins are homologous to IκB proteins, but lack sequences for regulated degradation. We tested if Ichnoviral Vankyrins differentially impede Toll-NF-κB-dependent hematopoietic and immune signaling in a heterologous in vivo Drosophila, system. We first show that hematopoiesis and the cellular encapsulation response against parasitoid wasps are tightly-linked via NF-κB signaling. The niche, which neighbors the larval hematopoietic progenitors, responds to parasite infection. Drosophila NF-κB proteins are expressed in the niche, and non cell-autonomously …
