Agricultural and Environmental Sciences Faculty Research

Tomato (Solanum lycopersicum) has a wide variety of genotypes differing in their responses to salinity. This study was performed to identify salt-induced changes in proteomes that are distinguishable among tomatoes with contrasting salt tolerance. Tomato accessions [LA4133 (a salt-tolerant cherry tomato accession) and ‘Walter’ LA3465 (a salt-susceptible accession)] were subjected to salt treatment (200 mm NaCl) in hydroponic culture. Salt-induced changes in the root proteomes of each tomato accession were identified using the isobaric tags for relative and absolute quantitation (iTRAQ) method. Poisoning by cyanide can be verified by analysis of the cyanide detoxification product, α-ketoglutarate cyanohydrin (α-KgCN), which is produced from the reaction of cyanide and endogenous α-ketoglutarate. Although α-KgCN can potentially be used to verify cyanide exposure, limited toxicokinetic data in cyanide-poisoned animals are available. We, therefore, studied the toxicokinetics of α-KgCN and compared its behavior to other cyanide metabolites, thiocyanate and 2-amino-2-thiazoline-4-carboxylic acid (ATCA), in the plasma of 31 Yorkshire pigs that received KCN (4 mg/mL) intravenously (IV) (0.17 mg/kg/min). α-KgCN concentrations rose rapidly during KCN administration until the onset of apnea, and then decreased over time in all …

Background: In 2006 a mobile dental outreach program began operating full-time at the UK North Fork Valley Community Health Center in Hazard, Kentucky, a federally-qualified health center administered by the University of Kentucky and located at the UK Center of Excellence in Rural Health. This program continues to provide preventive dental care to children at forty different elementary schools and Head Start centers in a four county area of southeastern Kentucky located in the heart of rural Appalachia. Connecting Mississippi growers with institutions within the state offers a promising way to increase fruit and vegetable consumption while improving the economic viability of local farms. This step-by-step guide aims to help growers in Mississippi start to sell locally grown foods to be served in meals at institutions around the state, such as hospitals, schools, prisons, and state and local government agencies.

The purpose of this study was to investigate the influence of exercise order on one-repetition maximum (1-RM) and ten-repetition maximum (10-RM) strength gains after 6 weeks of resistance training (RT) in trained men. Sixteen men were randomly assigned into two groups based on the order of exercises performed during training sessions: a group that performed large muscle group exercises first and progressed to small muscle group exercises (LG-SM); while a second group performed the opposite sequence and started with small muscle group exercises and progressed to large muscle group exercises (SM-LG). Background: Findings from studies examining the association between obesity and acute respiratory infection are inconsistent. Few studies have assessed the relationship between obesity-related behavioral factors, such as diet and exercise, and risk of acute respiratory infection.

Objective: To determine whether community prevalence of obesity, low fruit/vegetable consumption, and physical inactivity are associated with influenza-related hospitalization rates.

Methods: Using data from 274 US counties, from 2002 to 2008, we regressed county influenza-related hospitalization rates on county prevalence of obesity (BMI ≥ 30), low fruit/vegetable consumption (/day), and physical inactivity (/month recreational exercise), while adjusting for community-level confounders such as insurance coverage …

Introduction: The sources of racial disparity in duration of patients’ visits to emergency departments (EDs) have not been documented well enough for policymakers to distinguish patient-related factors from hospital- or area-related factors. This study explores the racial disparity in duration of routine visits to EDs at teaching and non-teaching hospitals.

Methods: We performed retrospective data analyses and multivariate regression analyses to investigate the racial disparity in duration of routine ED visits at teaching and non-teaching hospitals. Contemporary Rural Social Work Journal

Increasing numbers of individuals in our community have been seeking local food pantry assistance. Previous studies of food pantries found that users show low rates of governmental aid receipt, especially in rural areas. We assessed evidence that suggests that post-recession need has mitigated rural reluctance to pursue government assistance. The inadequacy of government and local food assistance to address the problem of food insecurity in our community is discussed.

Rice And Magic: A Cultural History From The Precolonial World To The Present, Filomeno V. Aguilar Jr

Beliefs in rice spirits were integral to the magical worldview of the precolonial inhabitants of the Philippine islands. Under Spanish colonialism, rice became a staple but it underwent disenchantment and symbolic marginality. By the 1870s rice production fell short relative to demand. Twentieth-century initiatives to address persistent shortages culminated in the 1960s Green Revolution, which further altered the rice plant and ushered in the age of practicality. Because rice production cannot be fully controlled, farmers still deploy culturally meaningful strategies to deal with uncertainties. The old meanings of rice for commensality have also proven resilient and reveal peculiarly Filipino ways.

Food insecurity is an important and growing issue in the United States. As of 2012, 15.9% of individuals in the United States were food insecure. The USDA defines food insecurity as, "Consistent access to adequate food is I imited by a lack of money and other resources at times during the year." The goal of this research was to determine the phytosterol content of dried, store-bought mushrooms and compare the results to that previously reported for fresh mushrooms. Ergosterol is particularly important due to its role as a light-activated precursor of vitamin D (vitamin D2). Dried mushrooms (Pleurotus ostreatus and Morchella) were Soxhlet extracted with petroleum ether and the extracts were concentrated and then saponified with 1-M NaOH in ethanol. Extraction again with petroleum ether was followed by drying with Na2SO4 and derivatization as TMS-ethers, which were analyzed by GC-MS. Both hyponatremia and osteopenia separately have been well documented in endurance athletes. Although bone has been shown to act as a “sodium reservoir” to buffer severe plasma sodium derangements in animals, recent data have suggested a similar function in humans. We aimed to explore if acute changes in bone mineral content were associated with changes in plasma sodium concentration in runners participating in a 161 km mountain footrace. Eighteen runners were recruited. Runners were tested immediately pre- and post-race for the following main outcome measures: bone mineral content (BMC) and density (BMD) via dual-energy X-ray absorptiometry (DEXA); plasma sodium concentration …
