Quality Of Olive Oils Available Locally: Chemical, Sensory And Market Investigations, Madeleine M. Gould Oct 2013

Quality Of Olive Oils Available Locally: Chemical, Sensory And Market Investigations, Madeleine M. Gould

Honors Theses and Capstones

Olive oil is a high quality food that comes at a high-quality price. Extra virgin olive oils are obtained through specific methods created to extract the highest quality oil. The world market of olive oil is rife with accusations of adulteration and false claims regarding quality. These are serious accusations, since adulteration results in lower quality oils. True extra virgin olive oils contain higher levels of beneficial compounds including antioxidant phenolic compounds. Specific mechanisms have been identified in which phenolic compounds in the olive oil matrix exhibit antioxidant activity contributing to the prevention of cancer and cardiovascular disease, among other …

Prevention Of Type 2 Diabetes In Urban American Indian/Alaskan Native Communities: The Life In Balance Pilot Study, Daniel C. Benyshek, Michelle Chino, Carolee Dodge-Francis, Toricellas O. Begay, Hongbin Jin, Celeste Giordano Oct 2013

Prevention Of Type 2 Diabetes In Urban American Indian/Alaskan Native Communities: The Life In Balance Pilot Study, Daniel C. Benyshek, Michelle Chino, Carolee Dodge-Francis, Toricellas O. Begay, Hongbin Jin, Celeste Giordano

Environmental & Global Health Faculty Research

Objective: The Life in BALANCE (LIB) study is a pilot translational study modeling the Diabetes Prevention Program (DPP) intensive lifestyle coaching intervention among an underserved, high-risk population: American Indians/Alaska Natives (AI/ANs) living in a large urban setting (Las Vegas, Nevada). Research Design and Methods: A total of 22 overweight/obese AI/ANs (age, 39.6 ± 10.4 years; BMI, 34.1 ± 6.3 kg/m2) at increased risk for developing type 2 diabetes (HbA1c > 5.4 (36 mmol/mol) < 6.4 percent (46 mmol/mol) participated in the program between April and December, 2011. Study participants completed a 16 week intensive lifestyle coaching intervention. In addition to obtaining qualitative data regarding opportunities and challenges of applying the lifestyle intervention for AI/AN participants in an urban setting, clinical data, including BMI, waist circumference, blood pres- sure, fasting blood glucose, and blood lipids (HDL, LDL and Triglycerides), were collected. Results: Only 12 of the 22 participants remained in the LIB program at the final post-program follow-up. Participants demonstrated significant decreased waist circumference and elevated HDL cholesterol. Triglycerides manifested the highest percentage change without statistical significance. No significant change was ob- served in blood pressure or fasting blood glucose. Conclusions: LIB participants’ improvements in BMI, waist circumference, HDL cholesterol and triglycerides suggests type 2 diabetes prevention programs aimed at urban AI/ANs show significant potential for reducing the risk of developing type 2 diabetes among this underserved and high risk community. Qualitative data suggest the main challenge for type 2 diabetes prevention specific to this population is a need for improved community outreach strategies.

Hopi Oral Tradition And The Archaeology Of Identity, Brady Desanti Oct 2013

Hopi Oral Tradition And The Archaeology Of Identity, Brady Desanti

International Dialogue

Native American activists of the civil rights era leveled heavy critiques at archaeology and anthropology for their prior support of colonial legislation and lack of sensitivity towards Native viewpoints. Archaeology in particular was taken to task for the destruction of numerous burial sites and the theft of thousands of Native American bodily remains and cultural items for over a century. The decades-long efforts by Native Americans and their non-Indian allies (which included some archaeologists) to secure the return of these remains and objects paid off in 1990. The passage of the Native American Graves Protection and Repatriation Act (NAGPRA) mandates …

Insurgent Encounters: Transnational Activism, Ethnography, And The Political, Julie A. Pelton Oct 2013

Insurgent Encounters: Transnational Activism, Ethnography, And The Political, Julie A. Pelton

International Dialogue

nsurgent Encounters: Transnational Activism, Ethnography, and the Political, edited by Jeffrey Juris and Alex Khasnabish, opens with a vignette describing an encounter between international activists and Zapatista base communities in 2006–7. The moment, and the thick description of it in the introduction, serves as an exemplar of the ethnographic approach to studying social movements advocated in this book: at once romantic, mysterious, and radical, while also rife with contradictions, struggles, and tensions. Juris and Khasnabish have gathered together a diverse collection of work on transnational activism that highlights the importance of ethnography as a set of methods largely neglected in …

Islam In Denmark: The Challenge Of Diversity, Aje Carlbom Oct 2013

Islam In Denmark: The Challenge Of Diversity, Aje Carlbom

International Dialogue

In public debates contemporary Denmark stands out as an extraordinary nationalist and racist country. This is particularly so on issues concerned with Islam and Muslim immigration. The growth of the nationalist political party Dansk folkeparti, the Muhammad caricatures and harsh laws regulating family reunion are often used as examples by outside observers trying to describe political transformations in the country. These, and some other themes, are discussed in the anthology Islam in Denmark: The Challenge of Diversity (2012), edited by Jørgen S. Nielsen, professor and director of The Centre for European Islamic Thought at the University of Copenhagen. What kind …

The Dangerous Law Of Biological Race, Khiara M. Bridges Oct 2013

The Dangerous Law Of Biological Race, Khiara M. Bridges

Fordham Law Review

The idea of biological race—a conception of race that postulates that racial groups are distinct, genetically homogenous units—has experienced a dramatic resurgence in popularity in recent years. It is commonly understood, however, that the U.S. Supreme Court has rejected the idea that races are genetically uniform groupings of individuals. Almost a century ago, the Court famously appeared to recognize the socially constructed nature of race. Moreover, the jurisprudence since then appears to reaffirm this disbelief: within law, race is understood to be a social construction, having no biological truth to it at all. Yet upon closer examination, the Court’s apparent …

Nuestros Refranes: Culturally Relevant Writing In Tucson High Schools, Cruz Medina Oct 2013

Nuestros Refranes: Culturally Relevant Writing In Tucson High Schools, Cruz Medina

English

Colonial narratives often characterize Latin@ culture and students as deficient with regard to education. These narratives persist through legislation like Arizona’s House Bill 2281, which outlawed the culturally relevant curriculum of Tucson High School’s Mexican American Studies program. This article argues that culturally relevant student writing that responds to a prompt about dichos or proverbial sayings in Spanish, illustrate rhetorical strategies of subversive complicity when analyzed through a decolonial framework. Written by students at multiple Tucson High schools during the controversy surrounding HB 2281, the student publication, Nuestros Refranes, serves as the site of analysis that demonstrates how students navigate …

The Egyptian Islamic Group’S Critique Of Al-Qaeda’S Interpretation Of Jihad, Paul Kamolnick

ETSU Faculty Works

A specific branch of Islamic jurisprudence (fiqh al-jihad) regulates the waging of the jihad of the sword (jihad bis saif). In this article, a detailed exposition is presented of the Egyptian Islamic Group’s (IG; Al-Gama’a Al-Islamiyya) use of fiqh al jihad against Al-Qaeda. The present author’s ‘jihad-realist’ approach is first briefly described; the IG’s critique of AQ systematically outlined; and in conclusion, implications are derived for counter-radicalisation strategies.

Transcending Subjects: Hegel After Augustine, An Essay On Political Theology, Geoffrey J.D. Holsclaw Oct 2013

Transcending Subjects: Hegel After Augustine, An Essay On Political Theology, Geoffrey J.D. Holsclaw

Dissertations (1934 -)

From where do political reformers and radicals come who are willing and prepared to challenge the status quo? Where are people formed who are capable of initiating change within a political system? Some worry belief in transcendence closes off authentic political engagement and processes of transformation. Others think that a transcendent orientation is the only means to protect and promote a more free and just society. Some see a positive commitment to transcendence as inimical to democratic practices, while others see such a commitment as indispensable for such a project. These general issues concern transcendence, immanence, and subjectivity as they …

A Historical Perspective Of The National Association For Multicultural Education, H. Prentice Baptiste, Ashley Ryan, V. Patricia Williams Oct 2013

A Historical Perspective Of The National Association For Multicultural Education, H. Prentice Baptiste, Ashley Ryan, V. Patricia Williams

Journal of Praxis in Multicultural Education

The spark for the idea of a national organization that would serve as the forum and professional arena for the discussion, deliberations, and creation of knowledge related to concepts and principles of multiculturalism ignited after years of gestation. The discussion of this period is presented in Part 1: The Perspective. The genesis chapter explores and discusses the isms and other forms of oppression that permeated the cultural environments of the Founders. Part 2: The Voices contains chapters which emanate frustrations, concerns, and obstacles that the Founders, led by Dr. Rose Duhon-Sells, had to endure as they strategized and developed a …

Frizzly Studies: Negotiating The Invisible Lines Of Race, Daniel J. Sharfstein Oct 2013

Frizzly Studies: Negotiating The Invisible Lines Of Race, Daniel J. Sharfstein

Vanderbilt Law School Faculty Publications

In 1927 a Radcliffe graduate student named Caroline Bond Day began researching her anthropology master’s thesis on mixed-race families in the United States. The subject had personal resonance for Day, who was a fixture of colored society in Atlanta and had a complexion that defied easy categorization. To gather data for her thesis, she wrote to dozens of men and women in her large circle of friends, among them civil rights leaders such as W. E. B. Du Bois, John Hope, and Walter White. She asked for exhaustive genealogies, with estimates of blood proportions— Negro, white, Indian—for each ancestor. She …

El Estigma De La Depresión Y Cómo Está Influenciado Por La Percepción De La Enfermedad En Santiago, Chile, Elena Michaels Oct 2013

El Estigma De La Depresión Y Cómo Está Influenciado Por La Percepción De La Enfermedad En Santiago, Chile, Elena Michaels

Independent Study Project (ISP) Collection

Over the past century, as a greater understanding has been developed regarding the brain and mental health disorders, a stigma surrounding the field of mental health has emerged. The goal of this study was to analyze how the public perception of depression relates to the stigma surrounding mental illness and define the relationship between the two. This investigation took place at the Pontifical Catholic University of Chile in Santiago.

In Chile, one of the consequences of the stigma regarding mental health disorders is usage of the mental health services offered. Not uncommonly, a medic would give a mental health evaluation …
