Volatile Compounds In Fresh-Cut Pineapple Heated At Different Temperatures, Xiumei Zhang, Yixiao Shen, Witoon Prinyawiwatkul, Zhimin Xu

The volatile compounds of raw and fresh-cut pineapple (Ananas comosus [L.] Merr.) heated at 150, 175, 200 and 225C were determined and compared. The major volatiles in raw pineapple were ethyl acetate, ethyl hexanoate, ethyl 3-(methylthio)-propionate, methyl hexanoate, methyl 3-(methylthio)-propionate, 2-methyl methylbutyrate and 2-methyl ethylbutyrate. They decreased dramatically in heated pineapples. Furfural and dihydro-4-methyl-2(3H)-furanone were the two thermo-generating volatiles after the fresh-cut pineapple was heated at 150C. Furfural replaced ethyl acetate as the dominant volatile in the pineapple after heated at 200C. 2-methyl butanal, 3-methyl butanal and 3-(methylthio)-propanal were found in the pineapple heated at 175C, while 5-methyl furfural, 2-furanmethanol …

Pulsed Electric Field (PEF) processing involves the application of pulses of electricity, for less than one second to fluid products placed between two electrodes. Lactobacillus acidophilus is an important probiotic bacterium used for the production of fermented dairy foods. The objective was to study the influence of electric pulse period, electric field strength, and electric pulse width on the growth of Lactobacillus acidophilus LA-K. Lactobacillus acidophilus LA-K, suspended in sterile peptone water was treated using an OSU-4 PEF processor. The treatments were pulse periods of 10,000, 20,000 and 30,000 μs electric field strength of 5, 15 and 25 kV/cm, and …

This historical document analysis explores the professional discourse on minority parents in education during the Progressive (1900-1914), Post-Civil Rights/ESEA (1960-1974), and NCLB/Accountability Eras (1995-2009). Grounded theory was used to code and analyze 430 articles mentioning parents and/or home life from two peer-reviewed journals of education. Research questions asked which minority parents are of interest to educators in each era, how minority parenting roles are portrayed in the educational discourse, and why minority parents concern educators. Findings include a focus on immigrant parents in the Progressive Era and on African American and Hispanic parents in the Post-Civil Rights/ESEA and NCLB/Accountability Eras. …

Debates about the possibility of a near-term maximum in world oil production have become increasingly prominent over the past decade, with the focus often being on the quantification of geologically available and technologically recoverable amounts of oil in the ground. Economically, the important parameter is not a physical limit to resources in the ground, but whether market price signals and costs of extraction will indicate the efficiency of extracting conventional or nonconventional resources as opposed to making substitutions over time for other fuels and technologies. The development of an explicit unstructured grid finite-volume scheme for solving the full incompressible Navier-Stokes equations along with the energy equation in a strongly coupled manner is presented. The Boussinesq approximation is utilized to account for thermal buoyancy. The method of artificial compressibilty is used to solve the resulting equations in a time marching fashion. Roe's approximate Riemann solver is used for the construction of the numerical flux. An eigensystem is derived for the flux Jacobian matrix, which is used in the evaluation of the numerical flux and the characteristic variable boundary conditions. The objective of this study will be to establish, validate, and characterize a dry eye model in female rats induced by continuous systemic administration of scopolamine via Alzet® osmotic pumps for 28 days. This study will use female rats as a model for dry eye and will be implanted with osmotic pumps that will continuously distribute scopolamine or saline systemically over 28 days. The purpose of this study was to determine the effects of music therapy on the quality of life of people with symptoms of dementia. Both self-reported and caregiver-reported quality of life scores were recorded before and after an eight-week treatment period. A control group of discussion and an experimental group of music therapy were included in the study, with a sample size of N = 13. Analysis of the data was done with t tests. Cyanide is produced throughout a plant's life cycle alongside the hormone ethylene by oxidation of 1-aminocyclopropane-1-carboxylic acid. Production increases during certain developmental stages such as seed germination, seedling elongation, fruit ripening and senescence. Abiotic stresses increase ethylene production giving rise to `stress cyanide'. Cyanide also comes from metabolism of cyanogenic compounds. Cyanide is however, a toxic chemical which readily binds to metallo-enzymes inhibiting primary metabolic processes. Plants have mechanisms to maintain cyanide homeostasis such as the β-cyanoalanine pathway whereby cysteine reacts with cyanide forming β--cyanoalanine, mediated by β-cyanoalanine synthase and cysteine synthase. This volume, which comprises two parts: text and plates, is the first of the series documenting the results of the large-scale IAA excavations at ‘Akko during the years 1991–1998. It presents the Crusader-period pottery (12th–13th centuries CE), the largest pottery assemblage of the Latin Kingdom of Jerusalem to be studied from a site in the Levant to date. An important component of this assemblage is the wide variety of imported ceramic wares from regions throughout the western and eastern Mediterranean, some not previously identified in Crusader-period contexts in the Levant. Removal of conifers encroaching aspen stands has been advocated and is being practiced in the Lake Tahoe Basin (EIP Project #10080: Aspen Community Restoration Projects). In remote and roadless areas, thinning of conifers is generating large volumes of wood and pile burning is currently being implemented to handle this biomass on site. However, the effects of pile burning on aspen are unknown, and there is an urgent need for guidelines to support design of thinning treatment prescriptions; specifically burn pile size and safe distances from live aspen trees of any size to prevent injury.

Rationale: Skeletal muscle blood flow is coupled with the oxygenation state of hemoglobin in young adults, whereby the erythrocyte functions as an oxygen sensor and releases ATP during deoxygenation to evoke vasodilation. Whether this function is impaired in humans of advanced age is unknown.
Objective: To test the hypothesis that older adults demonstrate impaired muscle blood flow and lower intravascular ATP during conditions of erythrocyte deoxygenation.
Methods and Results: We showed impaired forearm blood flow responses during 2 conditions of erythrocyte deoxygenation (systemic hypoxia and graded handgrip exercise) with age, which was caused by reduced local vasodilation. In young adults, …

We examine the effects of human resource management (HRM) practices (e.g., career development, social support, compensation, and security) on IT professionals‟ job search behavior. Job search is a relatively novel dependent variable in studies of voluntary withdrawal behavior, in general, and for IT professionals, in particular. From a universalistic perspective, HRM practices individually and in combination exhibit independently additive effects on job search behavior. Our study contrasts this perspective with configurational theory, hypothesizing that proposed idealtype configurations of HRM practices have synergistic effects on job search behavior. We contribute to the IT and broader HRM literature by theoretically explicating and …

Pausing is a natural part of human speech. Pausing is used to segment speech, negotiate meaning, and allow for breathing. In oral speech, pausing, along with other suprasegmental features, plays a critical role in creating meaning as comprehensible speech is seen as a goal for language learners around the world. In order to be comprehensible, language learners need to learn to pause correctly in their speaking. Though this notion is widely accepted by applied linguists and many language teachers, the effect of pausing on intelligibility of spontaneous oral discourse has not been established by empirical data. We describe the third confirmed case of novel coronavirus infection in a resident of the Arabian Peninsula. Our patient presented, as did 2 prior cases, with severe pneumonia and renal dysfunction requiring intensive care support including assisted ventilation. However, unlike the earlier cases, and despite underlying chronic disease and a single kidney, he survived his infection and has been discharged home. The Ministry of Health continues active surveillance for additional cases. As this case report goes to press, 2 additional confirmed cases have been identified in Riyadh, Saudi Arabia. Contact investigations are in progress. Future work will focus not only …

OBJECTIVE: To assess the self-confidence of clinical years’ medical students in performing clinical skills/procedures. METHODS: A cross-sectional study was conducted in April 2011 at the Department of Surgery, Faculty of Medicine, Health Sciences Center, Kuwait University, Safat, Kuwait. A questionnaire was used to collect data from students who had completed their surgical rotation of their first clinical year. OBJECTIVES: To evaluate corneal endothelium in patients with retinitis pigmentosa using confocal microscopy, and compare their results with those of healthy controls. METHODS: This comparative study took place between June 2009 and June 2011 in the Department of Ophthalmology, Selcuk University Faculty of Medicine, Konya, Turkey. We evaluated both eyes of 17 patients with retinitis pigmentosa (Group 1), and the eyes of 17 age- and gender- matched control subjects (Group 2). Historical sites protect and preserve sites of national importance and shared memories of its citizens (Lenz, 2011; Mackintosh, 2000). These sites document liberty, colonial history, slavery, wars, prominent figures, and more through museums, villages, homes, cemeteries, and battlefields (Utah Education Network, 2012). Interpreters tell the stories of the people who lived and died at the historic site connecting visitors to the resource. Genealogy answers the universal need people have to know who they are and where they come from (Bishop, 2008; Brough, 1995). This article is one of a set on the practice of polygamy in St. George, Utah, from 1861 to 1880. It asks why polygamy rates in that Mormon settlement exceed the demographic limits produced by Bitton and Lambson in their article "Demographic Limits of Nineteenth-Century Mormon Polygyny." Bitton and Lambson suggest that "those willing to accept an assignment to settle in St. George were very committed Mormons, and those who remained in St. George after having observed conditions firsthand were more committed still. Very committed Mormons were much more likely to practice polygamy than were others."

Careful readers of the Book of Mormon have probably found verses 12-18 of the Words of Mormon to be a bit of a puzzle. For stylistic and other reasons, they do not really fit with verses 1-11, so commentators have tried to explain their presence as a sort of "bridge" or "transition" that Mormon wrote to connect the record of the small plates with his abridgment from the large plates. Soybean variety and strain performance tests are conducted each year in Arkansas by the University of Arkansas System Division of Agriculture Arkansas Crop Variety Improvement Program. Individuals make decisions about whether or not they will explore or exploit their environment every day, but it is unclear how impulsivity, or an individual's rate of delay discounting, impacts this decision. It is hypothesized that individuals with higher rates of delay discounting exhibit more exploitative behaviors. Participants in this study were given the 27-item Monetary Choice Questionnaire asking them to choose between receiving a small reward immediately or a larger reward at a later time to measure their rate of delay discounting.
