Dsc Enthalpic Transitions During Starch Gelatinization In Excess Water, Dilute Sodium Chloride, And Dilute Sucrose Solutions, Wajira S. Ratnayake, Chika Otani, David S. Jackson
Department of Food Science and Technology: Faculty Publications
Background: Starch phase transition characteristics were studied by pre-treating starch samples in excess water, dilute sodium chloride and dilute sucrose solutions and subjecting them to differential scanning calorimetry (DSC). Unmodified maize, wheat and potato starches were held at specific temperatures between 30 and 90 °C for 30 min and promptly cooled to 25 °C. Treated samples were then analyzed in situ by DSC. Results: It was found that the progression of the phase transition behavior differed among the three starches and was dependent on the solvent. It was also revealed that phase transition-related enthalpic changes started to occur at low …

Dermatopathy In Juvenile Angus Cattle Due To Vitamin A Deficiency, Thomas J. Baldwin, Kerry A. Rood, E. Jane Kelly, Jeffery O. Hall
Dermatopathy In Juvenile Angus Cattle Due To Vitamin A Deficiency, Thomas J. Baldwin, Kerry A. Rood, E. Jane Kelly, Jeffery O. Hall
Animal, Dairy, and Veterinary Science Faculty Publications
In juvenile cattle, vitamin A deficiency is reported most commonly as a neurological condition; only rarely are there dermatologic manifestations. In the current study, alopecia, severe epidermal and follicular orthokeratosis, and acanthosis due to hypovitaminosis A are reported in 2 of 32 Angus calves, with a third animal suspected. Affected animals responded to vitamin A supplementation, and no additional calves displayed signs. Vitamin A acts on skin by regulating DNA transcription in keratinocytes, reducing the number of tonofilaments and desmosomes, both involved in cell-to-cell adhesion. Hence, adequate levels of dietary vitamin A are necessary for normal keratinocyte turnover, and deficiencies …

Agricultural Efficiency And The End Of The Oil Age; Building A Future Of Longevity, Keith Mchugh
Agricultural Efficiency And The End Of The Oil Age; Building A Future Of Longevity, Keith Mchugh
Pomona Senior Theses
This thesis uses an efficiency analysis of agricultural systems to assert that, in lieu of rising prices of fossil fuel, people need to come into more direct contact with their food systems. With a switch to smaller, more efficient farms that rely less on fossil fuel and are connected with the communities they supply for, we can avoid an energy crisis turning into a famine. These smaller-scale systems can help create self-contained, carbon-neutral communities.

Safety Of Saccharomyces Boulardii (Florastor) In Solid Organ Transplant Patients, Nicole Marie Dores
Safety Of Saccharomyces Boulardii (Florastor) In Solid Organ Transplant Patients, Nicole Marie Dores
Undergraduate Honors Thesis Collection
Probiotics have been promoted for use in many gastrointestinal ailments. Most studies find probiotics safe for human use, reporting no severe adverse effects. However, probiotics are live microorganisms and thus have the potential to cause infection. Transplant recipients are considered at high risk for infectious complications from probiotics due to the immunosuppressive medications used to prevent organ rejection. Nonetheless, clinicians are currently utilizing probiotics in the transplant population, due to their benefit in gastrointestinal disorders, particularly recurrent Clostridium difficile. Limited knowledge and paucity of prospective trials in this patient population demands the need for completion of studies to identify the …

Organic farming and foods, sustainable, No Impact Man, the "green movement," "localvore," The Ominvore's Dilemma, and socially and environmentally conscious are all ways to describe a growing subculture concerned with keeping the world a healthy and livable place because of lifestyle, ecological or ethical reasons. Consumers connect with this issue for various reasons ranging from the personal, such as seeking out healthy options, to the social, such as environmentalism and sustainability. Marketers have embraced these consumers as a profitable market segment, as illustrated by the increasing number of organic brands and products in the market today. Three-fourths of U.S. consumers …
The Vegetarian Question, Mary Elizabeth Sekela
The Vegetarian Question, Mary Elizabeth Sekela
Undergraduate Honors Thesis Collection
I wasn't raised in a vegetarian household. As a matter of fact, I have spent the majority of my life on a horse and cattle farm in central Kentucky. As a child, the process of raising our cattle for slaughter didn't strike me as a disgusting or unholy activity-my parents participated, after all, and they didn't seem to be adversely affected. Even when I became aware that some of the animals I had seen wandering the fields were slaughtered just down the road from our kitchen table, it never bothered me beyond an initial instant of discomfort. It wasn't until …

Assessment Of Management Factors Prior To Breeding And Their Impact On Bovine Fertility, Kathryn Erin Pfeiffer
Assessment Of Management Factors Prior To Breeding And Their Impact On Bovine Fertility, Kathryn Erin Pfeiffer
Theses and Dissertations
Management of female infertility is a primary determinant of economic efficiency in the cattle industry. Management factors involved in impacting fertility include identification of females with suboptimal fertility and reducing the period of anestrus, prior to pubescence and after parturition. The use of anti-Müllerian hormone in the identification of females with suboptimal follicular populations allows for selection of females with optimal follicular populations and could reduce infertility resulting from a decrease in the quantity of follicles. A reduction in the period of anestrus also impacts fertility and management strategies that induce an ovulatory response in anestrous females improves fertility. Biostimulation …

An Applied Investigation Of Corn-Based Distillers Dried Grains With Solubles In The Production Of Natural Fiber-Plastic Composites, Hugo Eudosio Castillo
Theses and Dissertations
The main objective of this research was to examine uses for distillers dried grains with solubles (DDGS), a coproduct of ethanol production plant, in the fiber-reinforced plastic composites industry. Initially the effort intended to take advantage of the DDGS components, using chemical reactions, to produce coupling agents to improve the physical properties of the composite. Four different chemicals plus water were used to convert proteins into soluble amino acids. The results were not as expected, and appeared to show an early pyrolysis of DDGS components. This may be due to regeneration of proteins when pH of solutions is neutralized. Procedures …

The purpose of this study was to examine the effect of regular participation in an after-school program on indicators of student academic achievement. The dependent variables for …
The Impact Of Organochlorine Pesticides And Lipid Biomarkers On Type 2 Diabetes Mellitus, Paul Robert Eden
The Impact Of Organochlorine Pesticides And Lipid Biomarkers On Type 2 Diabetes Mellitus, Paul Robert Eden
Theses and Dissertations
Type 2 diabetes mellitus (T2DM) is classified as a metabolic disorder characterized by hyperglycemia that results from defects in insulin action and/or secretion, and currently affects 8.3% of the US population according to the CDC’s 2011 National Diabetes Fact Sheet. Several contributing factors have been identified to development of this disease. Published evidence indicates type 2 diabetes mellitus (T2DM) patients display lower overall paraoxonase activity and that this may be partially due to genetic variations in the paraoxonase-1 (PON-1) gene. Some bioaccumulative organochlorine (OC) pesticides have been shown to contribute to increased T2DM prevalence. In addition, these OC compound levels …
