Sucrose is a desirable sugar in soybean seed that affects the quality and taste of soyfoods, while stachyose is a non-digestible sugar that induces flatulence in non-ruminant animals. Therefore, soybean cultivars with high sucrose and/or low stachyose would be valuable for soyfood and meal markets. The objectives of this study were to identify quantitative trait loci (QTL) or genes associated with seed sucrose and stachyose content using simple sequence repeat (SSR) or single nucleotide polymorphism (SNP) markers. A low sucrose line, MFS-553, was crossed with a high sucrose plant introduction, PI 243545, to develop the sucrose QTL mapping population. A …

The elevated prevalence of non-insulin-dependent diabetes mellitus (NIDDM) in Native Americans of the Southwest has been explained by several authors in terms of a dietary change from preindustrial traditional foods to modern foods. Physiology adapted to traditional foods became deleterious during the process of modernization. Although several versions of this hypothesis exist, they all relate to the rise in modern NIDDM with change from prehistoric subsistence practices to modern dietary practices. This is especially true for the Southwestern desert tribes of Arizona and New Mexico. Coprolite analysts have been recovering the sort of data needed by diabetes researchers to explore …

Gulf menhaden (Brevoortia patronus) play multiple roles in the Gulf of Mexico coastal ecosystem as filter feeders and as an important food source for many recreationally and economically important finfish. Gulf menhaden also support a large commercial fishery, and little is known about the impact of fishing on the role of this species as a filter feeder in the food web. This study examines the spatial, temporal and ontogenetic dynamics of food selectivity and trophic role observed in Gulf menhaden. Two experiments were conducted to characterize polymorphisms (SNP) in the bovine FSHβ gene promoter region to examine breed differences in SNP, and to determine effects of SNP on reproduction in beef cattle. Experiment 1 - DNA samples were collected from 5 Angus (ANG), 13 Balancer (BAL), & 16 Brahman influenced (BI) bulls. Polymorphisms were identified by sequencing of 3 sequential PCR products from the promoter region revealed 17 SNP & 4 insertion/deletions (INDEL). Organic waste generated from industrial sweet potato canning is estimated to be 30% of incoming raw material. This waste contains carbohydrates (sugars and starch) that could be used as substrates for the production of useful compounds via fermentation (e.g. lactic acid), resulting in the production of value-added products. The goal of this research project is to produce a substrate from the sweet potato processing waste material that supports the growth of lactic acid bacteria, which results in the production of lactic acid. At no point in U.S. history have food product packages displayed so many symbols and statements regarding nutrition and health benefits (Nestle 2010). However, despite this explosion of front-of-package (FOP) health communications, obesity and health-related problems of U.S. consumers continue to be a critical concern. Diet and exercise are key components to overall health maintenance. Aspects contributing to weight maintenance include the thermic effect of food (TEF) and total energy expenditure (TEE), with TEF contributing to upwards of 10% TEE. PURPOSE: The purpose of this study was to determine the interaction between TEF and exercise on TEE in moderately active females. METHODS: A sample population was established with the use of a health history questionnaire (HHQ). Poverty in the US is growing at an alarming rate. The current economic climate demands higher education to embrace the economic diversity of all students and to prepare them, regardless of economic class, for a globally competitive workplace. Unfortunately, the higher education community is not as adept at serving low-income students, as it is middle- and upper- income students. Low-income students are less likely than their more affluent peers to enroll in college or graduate. Eighty Brahman-influenced cows (5.6 BCS) were assigned to graze common bermudagrass (CB) or toxic tall fescue (E+) during a 60-d breeding season. Body condition (BC) was assessed at d 0, 30, and 60 of breeding season. Cows were managed to achieve marginal (4.2 BCS) or good (6.3 BCS) BC during last trimester. Heifer birth and weaning (WW; 7 to 8 mo) weights were recorded. The Angus sired heifers were weighed and randomly assigned to E+ or non-toxic (Novel) tall fescue at 9 to 10 mo of age for 190d. Three studies were conducted to evaluate how the broiler has changed over the years due to intense genetic selection. Four different broiler genotypes, one unselected since the 1950's (HER) representing the old meat-type bird and three current strains (Ross 308, Ross 708, and a test product (TY)) were studied. Differences in growth, morphometry, and response in performance and processing yield to different nutrient levels were studied.
Experiment 1 evaluated growth and morphometric analysis. Birds of each strain were killed weekly from day 7 to day 56, necropsied and cut up parts and organs weighed. Measurement of small intestine segments …

Health-oriented juices are prime candidates for the nutraceutical market due to their inherent healthfulness and convenience. Fruits such as açaí berries, blueberries, blackberries, black cherries, Concord grapes, cranberries, and pomegranates are rich in potentially health-supporting polyphenolics, which makes the juices of these fruits attractive for nutraceutical optimization. The compositional, sensory, and stability properties of blueberry, blackberry, and Concord grape juice blends were explored in an extended shelf-life study. Initially, 100% blueberry juice had the highest total monomeric anthocyanins (67.40 mg/100mL), 100% blackberry juice had the highest total phenolics (249.24 mg/100mL), and 100% Concord juice had the highest polymeric color (23.21%). …

Three experiments were conducted to evaluate the responses of broiler performance to Lysine (Lys) and Methionine (Met) during the starter, grower, and finisher feeding phases. All the experimental diets were formulated based on the Ideal Protein Concept.
Experiment 1 evaluated the responses to Lys and Met on live performance of young broiler chickens from 0 to 18 d of age. This thesis contains a market analysis of fresh berries in United States. Specifically, it addresses strawberry, blueberry, blackberry and raspberry markets during 2008-2011. A double log model and the Almost Ideal Demand model are used to gain insight into the demand side of the market. An equilibrium displacement model is used to develop suggestions for producers and decision makers. The results demonstrate that retail demand for berry crops is elastic and that the different berries are substitutes for one another. Children are at a heightened risk for foodborne illness. Handling leftover food safely was identified as a concern from focus groups with the main food preparer in families with young children in two Midwestern states. To design, implement, and evaluate a theory-based food safety education intervention to raise awareness of the USDA guideline for handling leftover food. The food safety social marketing campaign “4 Day Throw Away” launched in towns throughout Nebraska and Iowa. Over the past several years, increasing public emphasis on preventing child maltreatment has resulted in substantial changes to Florida's child abuse and neglect central registry. Many of these recent changes, aimed at preventing child maltreatment, have resulted in over one million false, unsubstantiated, and inconclusive reports of child abuse and neglect within the last decade. The intent of this thesis was to study, in depth, the experiences of four adolescent mothers who underwent a home intervention program. I studied two mothers who did well with teaching their 12-month old children during play, and two mothers who did not do as well. All four mothers received weekly intervention from the time of their child's birth through 12-months of age. Background: A myriad of diabetes prevention programs modeled on the Diabetes Prevention Program (DPP) are carried out worldwide to fight against the current diabetes pandemic. The percentage of weight reduction is a widely used indicator to evaluate diabetes prevention programs. However, weight change alone may not fully reflect the efficacy of lifestyle intervention. A metabolic syndrome index is a promising novel scale for evaluation of diabetes prevention programs because it is a systematic, comprehensive, and stable indicator that reflects the metabolic risk reduction for diabetes and its complications at multiple levels and dimensions.

It has been 236 years since Benjamin Franklin voiced his concerns about lead poisoning from the occupational exposures in his printing shop, yet, in 2012 childhood lead poisonings and adult occupational exposures are still serious public health issues in the United States. Lead poisoning is a 100% preventable affliction if the ingestion or inhalation of lead from environmental exposures can be avoided.

Little is known regarding the effect that footwear cushioning can have on the mechanics of the low back. Shiga toxin-producing Escherichia coli (STEC) are worldwide pathogens causing an estimated 200,000 infections per year in the United States. Infections with STEC sometimes progress to kidney failure ending in death. Two studies presented below describe a novel virulence factor and mechanisms required for pathogenesis of STEC seropathotype 091 :H21.
First the novel protein, YghJ, was identified and found to be conserved amongst extraintestinal and diarrheal seropathotypes of E. coli with similar proteins carried by pathogens such as Vibrio cholerae. Channel catfish (Ictalurus punctatus) are the most widely farmed aquatic animal in the United States. Assessing the effect of feeding regimens on their overall growth requires grow-out trials and a subsequent inefficient use of time and money. The growth hormone (GH)/insulin-like growth factor-1 (IGF-1) axis regulates growth based upon environmental factors such as feed intake in many teleost fish species. In order to increase the efficiency of aquaculture, the components of the GH/IGF-1 axis might be used as endocrine biomarkers to evaluate instantaneous growth rate. Although it is in the Tropics where nearly half of the world population lives and infectious disease burden is highest, little is known about the impact of influenza pandemics in this area. We investigated the mortality impact of the 2009 influenza pandemic relative to mortality rates from various outcomes in pre-pandemic years throughout a wide range of latitudes encompassing the entire tropical, and part of the subtropical, zone of the Southern Hemisphere (+5°N to −35°S) by focusing on a country with relatively uniform health care, disease surveillance, immunization and mitigation policies: Brazil. OBJECTIVE: To investigate Ki-67 immunoexpressions in colorectal cancer and analyze possible correlations with variable clinicopathological prognostic factors. METHODS: A cross-sectional study of tissue sections from 50 formalin-fixed and paraffin-embedded tumor specimens were examined at the Histopathology Laboratory of Rezgary Teaching Hospital in Erbil, Iraq between January 2010 and July 2011. Ki-67 labeling index is calculated immunohistochemically using the monoclonal antibody MIB-1, and the standard streptavidin-biotin immunoperoxidase method. The clinicopathologic and prognostic features were statistically analyzed. RESULTS: Over-expression of Ki-67 proliferation protein was found in 31 (62%) cases.
