Introduction: During the early 1970s, Danish physicians Jorn Dyerberg and colleagues observed that Greenland Eskimos consuming fatty fishes exhibited low incidences of heart disease. Fish oil is now one of the most commonly consumed dietary supplements. In 2004, concentrated fish oil was approved as a drug by the FDA for the treatment of hyperlipidemia. Fish oil contains two major omega-3 fatty acids: eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA). With advancements in lipid concentration and purification techniques, EPA- or DHA-enriched products are now commercially available, and the availability of these components in isolation allows their individual effects to be examined. …

Despite increased support for youth development, youth have few opportunities to voice the aspects of these programs that hold meaning for them. This study explored youth perceptions throughout a youth development physical activity program based on an adapted model of Teaching Personal and Social Responsibility (TPSR) designed to enhance Self-Determination Theory (SDT) tenets of: autonomy, relatedness, and competency (Deci & Ryan, 2008). An ethnographic case study, drawing on multiple data sources, was used to study student perceptions over a nine month program. High-fructose com syrup has been used with increasing commonality in recent decades. During this interval there is strong evidence of increased occurrence of autoimmune disease. We hypothesized that increased glucose and fructose concentration activates T-cells. Using Jurkat T-cells as a model, we found that increased glucose and fructose concentration decreased Jurkat T-cell proliferation and death rates at pH 7.4 while at pH 7.2 the above effects did not reach significance. Cells in high glucose and fructose concentration formed clusters that were unbreakable by standard trituration techniques suggesting the expression of high-affinity adhesion molecules characteristic of T-cell activation; this effect was …

The reaction of an isomeric mixture of the methyl perfluoroalkyl ether, C4F9OCH3 (Novec-7100), in the presence of isopropyl alcohol (IPA) and/or water has been studied by measuring the rate of product formation using an ion-selective electrode (ISE) for fluoride ion, Karl Fisher coulometric titrations for water, and 1H and 19F NMR spectroscopy for product identification and rate studies. The results showed the methyl perfluoroalkyl ether to be very stable with products forming at the rate of ∼1 ppm per year at a laboratory temperature of 20 °C. The establishment of an adequate larval diet for crustacean and fish often involves a series of time-consuming and expensive trial and errors. Despite being nutritionally poor, rotifers and Artemia are the most commonly used preys in larviculture. Whether (and to what extent) the prey needs to be enriched with essential fatty acids differs from species to species. We hypothesized that the DHA content of a newly spawned eggs and its consumption through embryogenesis can be a good indicator of the need to enrich the prey with DHA. This article reports the results of a descriptive evaluation of the impact of an in-school Extension nutrition education program in a small, very rural county. The evaluation focused on understanding the nature of the role the Extension educator plays in delivering nutrition education, the impact of the program on student learning and achievement of nutritional benchmarks, and the value of the collaboration between the schools and Extension. Results indicate that the Extension nutrition program is a valuable resource for schools in the county and that the program supports student achievement of nutrition education standards.

Diabetes mellitus is a prevalent chronic health condition associated with significant morbidity and mortality. Those with diabetes must acquire self-efficacy in the tasks necessary for them to successfully manage their disease. The present study is the first meta-analysis to evaluate type 2 diabetes (T2D) - associated polymorphisms in cohorts originated from several Tunisian regions. In fact, we evaluated the effect of seven polymorphisms in the following genes; PPARg ( Pro12Ala), TNFα (-308A/G), ENPP1(K121Q), TCF7L2(rs7903146 C/T), MTHFR( C677T), ACE(I/D), CAPN10(3R/2R) on T2D risk, through a meta-analysis combining data of previous studies performed on Tunisian populations originating from the north, centre or south of the country. Objectives: Race/ethnicity and education are among the strongest social determinants of body mass index (BMI) throughout the life course, yet we know relatively little about how these social factors both independently and interactively contribute to the rate at which BMI changes from adolescence to midlife. The purpose of this study is to 1) examine variation in trajectories of BMI from adolescence to midlife by mothers' and respondents' education, and 2) determine if the effects of mothers' and respondents' education on BMI trajectories differ by race/ethnicity and gender.

Primary care practitioners (PCPs) have a role to play in the primary and secondary prevention of diet/weight-related chronic disease through nutrition assessment, education, counseling, and referral. Although PCPs tend to have positive attitudes about nutrition, many do not engage in nutrition related practice behaviors. In this research, it is assumed that improving PCPs’ current nutrition knowledge of and access to evolving, evidence-based information about nutrition will lead them to be more likely to engage in nutrition assessment, education, counseling, and appropriate referrals with the ultimate aim of positive patient outcomes. Future increases in global surface temperature threaten those worldwide who depend on rice production for their livelihoods and food security. Past analyses of extreme heat effects on rice production have focused on paddy yield and have not accounted for the detrimental impact of extreme heat on milling quality outcomes which ultimately determine edible (marketable) rice yield and value. Using rice yield and milling quality data on six popular rice cultivars from Arkansas, USA, combined with on-site, half-hourly and daily temperature observations, this study finds a nonlinear effect of extreme heat exposure on yield and milling quality. In a year-long study, pilot-scale constructed wetland treatment systems (CWTSs) targeted removal of selenium (Se) from a simulated impaired water through dissimilatory Se reduction. Effects of temperature and precipitation on the treatment of Se in the CWTSs were investigated. The experimental design consisted of CWTSs amended with a fermented yeast product (AquaSmartTM, Diamond V¨, Cedar Rapids, IA), which served as a nutrient source for Se-reducing bacteria, at mass loadings of 1.75, 3.5, 5.25, 7, and 8.75 mg/min. The 5 µg/L treatment goal for CWTS outflow concentration was measured in 69 of 378 samples taken from all CWTSs. Of the …

Surimi is minced deboned fish meat that has been washed of lipids, sarcoplasmic proteins, and other impurities. Surimi seafood, also known as "imitation crabmeat", is widely enjoyed in the United States; however, it is not currently nutrified with fiber, omega-3 polyunsaturated fatty acids, and salt substitute. In the present study, preliminary experimentation was done to determine the optimal level of fiber addition. Accurate estimates of diets are essential for the management of fisheries, especially when this information is used to construct food webs for a system. Traditionally, these studies have relied on examining the stomachs contents through direct observation of sacrificed fish, or using instruments to "flush" the items from the stomach. Of the annual expenses necessary to maintain a beef cow, feed and forage are the greatest and most variable. Thus, nutrition programs for cow-calf operations must be developed using economical feedstuffs that optimize cowherd performance. The corn dry-milling industry provides several feedstuffs that are often the most economical sources of energy and protein, but considerations for storage and handling are necessary. Two experiments evaluated an alternative form of storing corn condensed distillers solubles (CCDS) by applying to grass hay windrows before baling. Twenty semi-trained subjects determined the effect of temperature on basic tastes sweet, salty and sour. The sensory evaluations were performed on each basic taste and on various combinations of the three tastes at serving temperatures 3, 23 and 60¡C. A single intensity level was used for all sensory evaluations and 3 replications of each panel were performed. Results from the panels provided some evidence of temperature affect, both when evaluated singularly and in combination.
The perceived intensity of some sweet and sour samples was affected by a change in temperature. Sensing intensity of the salty samples was not significantly affected …

White-tailed deer (Odocoileus virginianus) breeding phenology varies temporally throughout the species' range and is critical to population management and hunter enjoyment. The South Carolina Department of Natural Resources (SCDNR) demographic and reproductive data, collected primarily from 1970-1992, suggest that 81.86% of conceptions in the Coastal Plain occur between 6 October and 16 November. However, current data regarding conception dates are lacking for a variety of reasons including the current absence of check stations and the use of hunter surveys as the primary means of data collection. This thesis considers the relationship between participation in Early Head Start programs and school readiness for children from low-income families. The work uses longitudinal data from the Early Childhood Research and Evaluation (EHSRE) project that followed 3001 families in 17 Early Head Start Centers from 1996-2010. In the project, data was collected about children's school readiness in three phases: 0-3 years, Pre-K and fifth grade.

Synthetic antioxidants, such as butylated hydroxyanisole (BHA), butylated hydroxytoluene (BHT), Vitamin E and ethoxyquin, have been commonly added to formulated animal feeds in order to delay discoloration and deterioration due to oxidation. However, these synthetic antioxidants have been limited in their applications as food additives because of potential health hazards. Specifically, synthetic antioxidants have been considered to be linked to various forms of cancer, most commonly kidney, liver and bladder cancer. In this work, value-added peptide antioxidants from rendering products were developed for use in potential aquaculture and pet food markets as natural antioxidant substitutes for synthetic antioxidants. Through the use of a preference test, the proper point size of display text on a package was evaluated in relation to a package's proportions. The test involved the examination of packaging images displaying the product or brand name in various point sizes by 150 participants who were then asked to choose the option they most preferred. The participants were then provided with a post-survey intended to gather additional information regarding potential preference motives.
The primary purpose of this study was to determine the most preferred display type size of a package based on its relationship with the package's proportions. …

This thesis consists of two essays focused on the estimation of food demand models from household-level data. The first essay examines the approach developed by Lewbel (1989) for the construction of household level commodity price indices (Stone-Lewbel prices) which can be used for the estimation of price effects in demand models. Stone-Lewbel prices are constructed using information on budget shares and Consumer Price Indices (CPIs) of the goods comprising the commodity groups. We consider three alternative CPIs for the construction of the Stone-Lewbel prices: monthly, quarterly and a constant (unity) price index (by a unity CPI we meant that all …
