Accelerated Shelf Life Determination Of Antioxidant Stabilized High Oleic Sunflower And Canola Oils In Plastic Bottles, Christine Nicole Shearer

Vegetable oil is an important commodity; however, the majority of commercially available vegetable oils have a fairly short shelf life, which limits their usefulness for long term food storage, disaster relief, space travel, food aid programs, and military rations. Vegetable oils with high oleic acid and reduced linolenic acid contents, especially with added antioxidant combinations, were previously found to have significantly longer oil stability index (OSI) values than traditional vegetable oils. This study used accelerated shelf life testing to estimate the ambient shelf life of high oleic sunflower oil (HOSUN) and high oleic canola oil (HOCAN), each containing 1,000 ppm …

Background: While maternal, infant and under-five child mortality rates in developing countries have declined significantly in the past two to three decades, newborn mortality rates have reduced much more slowly. While it is recognised that almost half of the newborn deaths can be prevented by scaling up evidence-based available interventions such as tetanus toxoid immunisation to mothers, clean and skilled care at delivery, newborn resuscitation, exclusive breastfeeding, clean umbilical cord care, management of infections in newborns, many require facility based and outreach services. BACKGROUND: Serum Amyloid A (SAA) is a major acute phase protein of unknown function. SAA is mostly expressed in the liver, but also in other tissues including the intestinal epithelium. SAA reportedly has anti-bacterial effects, and because inflammatory bowel diseases (IBD) result from a breakdown in homeostatic interactions between intestinal epithelia and bacteria, we hypothesized that SAA is protective during experimental colitis.

METHODS: Intestinal SAA expression was measured in mouse and human samples. Dextran sodium sulfate (DSS) colitis was induced in SAA 1/2 double knockout (DKO) mice and in wildtype controls. Anti-bacterial effects of SAA1/2 were tested in intestinal epithelial …

Access to sustainable sanitation systems is a determining factor in human health and economic development. However, more than a third of the world’s population lives without access to improved sanitation facilities. To meet the sanitation United Nations Millennium Development target, "halve, by 2015, the proportion of people without sustainable access to safe drinking water and basic sanitation", a wide range of non conventional sanitation technologies have been implemented in developing countries, including waterless systems. This dissertation explores the hydrologic controls on salinity within mangroves and lagoons at sites in Florida and Mexico. The main objective of this research is to better understand hydrologic controls on mangrove ecosystem structure and develop ideas that will be useful to land managers attempting to regulate and conserve these critical habitats. This study was conducted at sites in Ft. Pierce, FL and Costalegre on the central Pacific coast of Mexico.

Cookie Dough 2.0 is a thesis documenting the graphic design branding journey of transforming cookie dough from simply a mixture of raw ingredients used in making chocolate chip cookies into a legitimate snack food. Graphic design was the critical factor in forming the brand character, packaging and marketing support materials. All concepts and final mechanicals were created digitally. Additionally, this thesis illustrates how the brand identity emerged through the many phases of product development.

Qualitative Study To Determine Quality Of Life Factors Based On Reported Efnep Success Stories, Megan L. Hlavacek

Department of Nutrition and Health Sciences: Dissertations, Theses, and Student Research

The purpose of this study was to develop an understanding of how adult participants describe quality of life during or after participation in the Expanded Food and Nutrition Education Program (EFNEP) at sites across the United States. The study analyzed success stories submitted by EFNEP staff and participants from sites in nine states from the years 2004 to 2010. A total of 1,057 success stories were analyzed.

The success stories were descriptions of the participants’ experiences with EFNEP. The stories were analyzed by highlighting words, phrases, and/or sentences, and creating a short one to three word codes that would best …
