Supplemental Nutrition Assistance Program (SNAP) helps low income people and families buy food they need for good health. The main objective of this study is to examine the effects of changes in the economic conditions and welfare on SNAP participation in the Appalachian region. The study employs county level data to capture variation in SNAP participation. Spatial econometric models are developed to examine the relationship among the economic and business cycle conditions, changes in welfare reforms, demographic and household attributes, institutional factors, and SNAP participation. The findings from this study could be helpful in improving welfare programs in this region.

Obesity is reaching epidemic proportions especially in the developed and, more recently, in the developing world where the problem is compounded by myriad socio-economic, demographic, built and natural environmental factors. This review examines the possible causes, consequences and policy implications using a multilevel, multispectral framework. The causes of obesity clearly are multifaceted and involve numerous interactions. Together with economic incentives, allocation of physical and financial resources to community intervention strategies through educational programs as well as better land use planning would be helpful in promoting healthier and sustainable communities. This study examines the struggles of South African women from the beginning of the Union of South Africa and the period of Segregation to the period of national defiance during Apartheid, throughout all of its ebbs and flows. Purpose: The purpose of this study was to determine if one component of social economic status, participation in the free/reduced lunch program, predicts fall and winter literacy benchmark test scores and to discuss the components of a phonological awareness reading program. Method: Seventy kindergarten and first grade students from Brooks Elementary in DeKalb, Illinois, participated in this study. Assessments were given to test letter naming fluency and nonsense word reading fluency. In addition, each student was categorized according to lunch status. This policy brief provides a synthesis of available evidence of the magnitude of marital violence experienced by women, including married young women, in India, and the ways in which the experience of physical and sexual violence within marriage compromises health, with a focus on sexual, reproductive, and child health, as well as mental health. It argues for strengthening the health sector response to address the needs of women who have experienced marital violence. Findings underscore the urgent need to strengthen efforts to prevent the incidence of marital violence. Using nationally representative cross-sectional data from the Nepal Living Standards Survey, this Population Council working paper examines the influence of the nature of mothers’ work on Nepali children’s schooling outcomes. It analyses whether the engagement of mothers (and fathers) in nonagricultural work has significant consequences for their children’s school attendance and grade attainment, compared with these consequences when parents’ work is in traditional subsistence agriculture. Results indicate that children of parents who both work in the nonagriculture sector are significantly more likely to have attended or currently be attending school and have higher grade attainment, compared with children whose parents …

In recent years, electronically stored information (ESI) has begun to play an increasingly important role in civil litigation. Although the e-discovery amendments to the Federal Rules of Civil Procedure in 2006 provided guidelines for the discovery of this information, no accompanying changes were made to the Federal Rules of Evidence to govern the admissibility of this information at trial. This article outlines the vastly different ways courts have addressed this problem in three areas: authentication, hearsay, and the best evidence rule. Mineral oil (MO) is currently used for coating eggs to preserve quality. Chitosan possesses inherent antimicrobial and film-forming properties. Chitosan coating (CH) is dried much faster than MO when applied on egg shell. Information on synergistic effects of MO:CH emulsion coatings on egg quality does not exist. We developed MO:CH emulsion coatings, and evaluated their effects on internal quality and shelf-life of eggs during storage. In the first study, MO, CH and three emulsions (MO:CH = 75:25, 50:50, and 25:75) were evaluated during 5 weeks at 25°C. While all seafood has the potential of being associated with foodborne illness, Louisiana blue crabs (Callinectes sapidus) are exposed to Vibrio cholerae, Vibrio parahaemolyticus, Vibrio vulnificus, Listeria monocytogenes and Salmonella species in the estuarine habitat. This study was designed to determine the least amount of time and temperature needed to reduce or eliminate each of the aforementioned bacteria from a single Louisiana blue crab with either boiling or steaming heat treatments. The Louisiana Gulf Coast is losing land at an alarming rate for a combination of reasons. At the same time carbon dioxide is accumulating in the atmosphere and the oceans by the increased burning of fossil fuels. Therefore, bioengineered oyster dominated artificial reefs have been developed in an effort to mitigate erosion while storing carbon in the oyster shells. Crawfish and shrimp byproducts are an excellent source of astaxanthin. The antioxidant-rich natural astaxanthin dispersed in alpha linolenic acid-rich flaxseed oil (FO) may provide healthier functional food options for US consumers. The goals of this study were to extract astaxanthin from crawfish and shrimp byproducts and to develop astaxanthin dry powders using microencapsulation technology. Astaxanthin extracted with FO from crawfish (FOCA) and shrimp (FOSA) byproducts were stable at 30 and 40 Ž, but had substantial degradation at 50 and 60 Ž during four 4 h heating. A national web survey was used to collected data from 253 households in the United States. Choice-based conjoint analysis was used to investigate which packaging and labeling attributes U.S. consumers consider important when choosing 100% fruit juices, and to estimate their willingness-to-pay. The attributes were packaging material, nutritional and health claims, presence of organic ingredients and whether the product was produced locally. Factor analysis, cluster analysis and a median split technique were used to identify market segments based on consumer preferences, behavior, and lifestyles. PURPOSE: This study was designed to examine the effects of sun-dried raisins versus sports jellybeans on endurance performance in trained cyclists/triathletes. METHODS: Ten healthy males (18-33 y) completed one water-only acclimatization (WAT) exercise trial and two randomized exercise trials. Each trial consisted of a 120-minute constant intensity glycogen depletion period followed by a 10-km time trial (TT). During each experimental trial, participants consumed isocaloric amounts of sun-dried raisins (SDR) or Sports Jelly Beans(SJB) in 20-minute intervals. The cost of commercial oyster aquaculture has higher inputs than the oyster fishery, but larger, better quality oysters can be produced for culture by the stable availability of triploid individuals.

In our previous studies, ingestion of prebiotics in low fat diets resulted in decreased cecal pH from 8 to about 6 and increases in short chain fatty acids indicating robust fermentation. However, in some preliminary studies this effect on fermentation was not seen when rodents were obese and/or fed a high-fat diet. This comprehensive high-fat diet study was conducted to determine which sources and combinations of prebiotics would enhance fermentation despite a high dietary fat content. Legumes are high in protein and are a good source of fiber and folate. They contain beneficial oligosaccharides, plant sterols and phenolics. The purpose of this study was to demonstrate the health benefits of legumes using the model system Caenorhabditis elegans (C. elegans). Nine legumes (black beans, cranberry beans, dark red beans, great northern beans, large lima beans, lentils, light red kidney beans, navy beans and white kidney beans) were tested in the C. elegans model system. Salmonella is a leading cause of foodborne illnesses worldwide. In recent years, an increasing number of Salmonella-related outbreaks in produce has been reported. It is therefore important that the produce industry be equipped with rapid, sensitive, specific detection methods for live Salmonella cells in produce to better ensure the produce safety. In this study, we first designed and optimized a loop-mediated isothermal amplification (LAMP) assay for Salmonella detection by targeting the invasion gene (invA). A study was conducted to determine the effects of varying levels of cottonseed hulls on growth and metabolic indications of rumen development of dairy calves. Sixty-four Holstein calves (Heifers, n=40; Bulls, n=24) were randomly assigned to one of four dietary treatments which included calf starters containing no cottonseed hulls (control; C), 10% cottonseed hulls (10% CSH), 15% cottonseed hulls (15% CSH), or 20% cottonseed hulls (20% CSH).
